TNG QUAN
1. GII THIU SN PHM 1.1 nh ngha 1.1.1 Enzyme Trong c th sng (cc t bo) lun lun xy ra qu trnh trao i cht. S trao i cht ngng th s sng khng cn tn ti. Qu trnh trao i ca mt cht l tp hp ca rt nhiu cc phn ng ha hc phc tp. Cc phn ng ny c lin quan cht ch vi nhau v iu chnh ln nhau. Enzyme l hp cht protein xc tc cho cc phn ng ha hc . Chng c kh nng xc tc c hiu cc phn ng ha hc nht nh v m bo cho cc phn ng xy ra theo mt chiu hng nht nh vi tc nhp nhng trong c th sng. Enzyme c trong hu ht cc loi t bo ca c th sng. 1.3.3 Enzyme -Amylase (glucoamylase) (EC 3.2.1.3) a) Cu to -Amylase (glucoamylase hay -1,4-glucan-glucohydrolase ) l nhng Enzyme c th thu phn c c hai kiu lin kt ca cc mch -glucan gii phng ra dng . 1.3.4. Oligo 1,6-glucosidase (dextrinase ti hn) (EC 3.2.1.10) Enzyme ny c th thu phn lin kt -1,6 glucoside trong isomaltose, panose v cc dextrin ti hn thnh ng c th ln men c. 3.3.5 ng dng ca Enzyme Amylase trong sn xut bnh m: Cc loi ht ng cc nh la m, la nc, bp, khoai m l ngun nguyn liu chnh lm bnh m. Trong ch c bt t la m mi l nguyn liu sn xut bnh m. Bnh m c coi l ngun lng thc chnh ca cc nc chu M v cc nc chu u, trong vi thp nin gn y bnh m c coi nh l mt khu phn lng thc ca Vit Nam. Trong sn xut bnh m, ngi ta s dng enzyme nhm gii quyt mt s vn sau: Lm tng th tch bnh Lm mu sc ca bnh p hn Lm tng mi thm cho bnh.

Trong sn xut bnh m, ngi ta s dng c hai loi enzyme -amylase v _amylase, cc loi enzyme ny tham gia thy phn tinh bt to thnh ng. Nh , nm men Saccharomyces cerevisiae s d dng chuyn ha chng thnh cn, CO2, lm tng th tch ca bnh v to ra mu sc, hng v tt cho bnh. Ngun amylase thng s dng l malt.
