Abstract
There were analyzed 12 pilsner type beers, produced
by Bulgarian breweries and attending to our table. Their
physico-chemical properties and antioxidant capacity
were assessed. Beers differ in their physico-chemical
parameters, mainly original extract content and belong to
the ordinary, lager, original, special and license. Extract
content was lowest in ordinary beer Sofia (9,79%) and
highest in the special beer Zagorka (11,33%). Bitterness
is measured at 14,3 BU in beer Pirinsko and 30,6 BU
in beer Britos. With the highest antioxidant capacity
between 1492 and 1189 mmol/l vit.C differ beers Britos,
Astika, Sofia, Ledenika, Kamenitza and Zagorka.
As an unusual complex of biologically active substances,
beer is a medium for food absorption and its moderate
consumption contributes to a healthy lifestyle.

Abstract
The influence of soil-climatic conditions in the regions
of Pleven and Varna on the grapes and wine composition
of cultivars Dimyat, Chardonnay, Muscat Ottonel and
Traminer was studied. The research included two
consecutive vintages 2010 and 2011. Soil chemical
analysis of the experimental vineyards was made and
also the climate factors change in the period of vegetation
(temperature, relative humidity, rains) was examined. The
obtained results confirmed the soil and climate influence on
the grapes composition regarding the sugar and total acids
content. The grapes of cultivar Traminer in both regions
consisted the highest sugar content. The experimental
wines from Pleven region were characterized with higher
total acidity. The samples from the same varieties but from
Varna region consisted more sugarfree extract. As a result
of soil composition influence the potassium content in
wines was different. The higher potassium concentration
was found in Traminer (Varna), Muskat Ottonel and Dimyat
(Pleven).
