THUYT MINH QUY TRNH CNG NGH:
1.Tip nhn nguyn vt liu :
Nguyn liu chnh l tht heo hoc tht b ng lnh dng block. Block tht ng
lnh nng 12 kg v 20 kg c bao bc bng ti nilng PP, v c cha trong bao
nilng ln PE may kn ming bng si nilng. Mi l hng phi c giy kim dch
ca chi cc th y cc tnh thnh, phi cn trong hn s dng, nhit tm tht l
-18C, KCS cng ty s tin hnh ly mu kim tra cht lng tht lnh ng theo
tiu chun TCVN 7047:2002. Tht t yu cu mi c nhp kho bo qun. Khi
cn sn xut th cng nhn li vn chuyn tht t phng bo qun lnh c sang
phng r ng thc hin r ng.
Ph gia, gia v, bao b u c nh cung cp ch n trong xe sch, c bo
dng tt v ph kn. Tt c cc loi ph gia, bao b u c kim tra cm quan,
trng thi xem c cn nguyn vn, trong hn s dng, v c giy chng nhn
cht lng t pha nh cung cp hay khng. Sau c nh s l v a vo
phng bo qun.
Hnh, ti :c kim tra cm quan ngay khi tip nhn. Sau em ra li
bng nc sch v cho vo phng bo qun lnh (5C).
vy v nc : l nc thu cc, ring vy c kim tra cm quan khi tip
nhn trong phng lm vy ca nh my, sau vy c tr nhit
t=05C.
2.Tr ng:
Tht lnh ng sau khi c kim tra xong th c tr trong kho lnh nhit
-182C trong thi gian 3-4 thng phc v cho nhu cu sn xut.
Khi cn s dng th cng nhn s chuyn tht t kho lnh v phng r ng)
thc hin r ng.
3.R ng :
Cng nhn lt b bao PE, nhng block tht ln trn pallet vi chiu cao
ng tht va phi, khng c cao qua, thc hin phng php r ng t nhin
trong 1424h, nhit phng 1520C, t nhit tm tht -5-2C. Sau
tht c ngm s qua trong nc sch trong 510 pht d tho nilong ra, tip
tc tht c ct nh.

4.Ct:
Tht sau khi r ng vn cn rt cng, n ch b tan lp tuyt mng bn ngoi,
nn phi cho tht qua my ct starcutter ct tht thnh tng ming nh vi b
dy ming tht d=14 20mm gip qu trnh xay th tip theo d dng hn.
5.Xay th:
Tht sau khi c ct th c cho vo my xay th.
Mc ch: lm gim kch thc khi tht qu trnh phi trn v p c
thc hin d dng hn.
Thng s cng ngh:
o Nhit tht sau xay th l -3-5 C.
o ng knh ht tht sau xay th d=34 (mm).
Sau cng nhn cho tht xay th trong thng nha. Cc thng trn cng
lun c tm nilong ph trn b mt. Tip tc, cng nhn ko pallet cha cc thng
tht vo phng p.
6.Phi trn v p:
Mc ch: phi trn gia v vo nguyn liu tht v p trong mt khong thi
gian nht nh gia v ngm vo tht, lm tng cht lng sn phm.
Thng s cng ngh:
o Nhit phng p l 05 C.
o Thi gian p l 48 h.
o Nhit tht p l -20C.
Lu : t cc thng tht v tr c nh, tht c p ngy no th phi c
t v tr ring dnh cho ngy trnh s ln ln.
7.Xay nhuyn v ng ha to nh tng :
Mc ch: to ra h nh tng bn ca tt c cc thnh phn vt cht c trong
xc xch nh : nguyn liu (tht nc , m heo, da heo), gia v, ph gia , to nn
mt h ng nht.
Ph gia bao gm mui nitrt 1:99, polyphophat, Vitamin C c cn trc
trong phng ph gia bao b.

8.Nhi nh lng :
Mc ch: hon thin: to cho sn phm c hnh dng, kch thc, khi lng n
nh v ng nht. C nh gel lm sn phm cng u tng gi tr cm quan.
Bo qun: Qu trnh nhi (chn khng) cng vi vic v bao b v ng clip
cn c tc dng hn ch s xm nhp ca oxy v cc loi vi sinh vt gy hi
cho sn phm trnh c cc phn ng oxi ha v s pht trin ca vi sinh vt.
Chun b cho qu trnh tit trng.
Cng nhn phng KAP (phng cha my KAP thc hin cng on nhi nh
lng) chuyn xe y cha paste t phng 7 v phng KAP (nhit phng l
10C), sau a khi paste vo phu nhp liu ca my KAP bng cch dng
mt thang nng a xe y ln cao v chuyn pastevo phu.
Paste trn phu c vn chuyn n bm feed in, sau n n bm nh
lng metering pumb qua ng nhi vo bao phim c nh hnh v hn
bng sng cao tn. Bao phim cha xc xch nhi c ko xung n b phn

Bao phim lm bng PVDC, chu c nhit cao >121C, rt bn, ngn
c s xm nhp ca khng kh, nc, t bn ngoi.
9.Tit trng :
Cng nhn lm vic trong phng tit trng y 4 xe ( mi xe l 6 khay
ng xc xch) vo trong bn tit trng, sau ci np cn thn v cho vn
hnh my vi ch tit trng nh sau:
Nhit tit trng t=121C.
p sut P trong bn =2.3 kg/cm
2
.
Thi gian tit trng =20 pht (cy 70gam);18 pht (cy 20 v 40 gam).
10. Thi lh:
Mc ch:
Hon thin : lm cho b mt sn phm kh ro chun b cho dn nhn.
Bo qun : iu kin m t s rt d to u kin cho vi sinh vt pht trin.
Do ta cn thi kh loi b nc trn b mt bao b, c bit l loi b
nc hai u clip trnh vi sinh vt pht trin, ko di thi gian bo qun.
Thng s cng ngh:
Thi gian = 10 pht.
Tc kh: 1m/s
11. Hon thin:
Mc ch:
Hon thin: to hnh thc p cho sn phm nhm thu ht ngi tiu dng v
nng cao gi tr thng phm ca sn phm.
Qu trnh ny bao gm: lm ngui, dn nhn, v thng, v cui cng l ta c
sn phm a i tiu th.
Sau khi thc hin qu trnh thi kh th nhit ca cy xc xch khong 50
0
C.
Do sn phm xc xch c a qua kho tr mt m h nhit . y l
phng php lm ngui sn phm bng khng kh t nhin.
Sau , sn phm c ra bn v cng nhn dn nhn cho tng cy xc
xch, v bao nha ri xp vo thng carton. Giai on ny ta c th s dng cc
bng chuyn t ng dn nhn v cc thit b m t ng vo thng carton.

Qu trnh hon thin sn phm c thc hin phng hon thin c nhit bnh
thng.
Thnh phm c bo qun nhit thng, trnh tip xc trc tip vi nh
sng, nhit cao. Thi gian bo qun sn phm xc xch tit trng c th ko
di trong ba thng.

5.1 Quy phm thc hnh sn xut tt GMP
5.1.1 Phm vi ng dng:
Chng trnh GMP c xy dng da trn quy trnh sn xut ca tng mt
hng (hoc nhm mt hng) c th, t khu tip nhn nguyn liu n khu thnh
phm. C th xy dng mt hay nhiu quy phm cho mt cng on sn xut hoc
c th xy dng mt quy phm cho nhiu cng on sn xut. Do m GMP gip
kim sot tt c yu t lin quan n cht lng sn phm trong khi sn xut.

5.1.2 Ni dung ca quy phm thc hnh sn xut tt:
a) Nguyn vt liu:
Nguyn vt liu c th c kim tra bng cch ly mu phn tch
hoc cng nhn giy chng nhn cht lng ca nh cung ng.
Cc nguyn vt liu c lng vi sinh vt mc gy hi cho sc kho
phi c thanh trng, x l, trc khi a vo sn xut.
Cc nguyn vt liu b nhim aflatoxin hay cc c t sinh hc phi
c loi i, khng a vo sn xut.
Ch a vo sn xut cc nguyn vt liu c mc nhim cn trng, tp
cht l mc quy nh.
Cc nguyn vt liu phi c bo qun trong cc dng c cha thch
hp nhit v m thch hp trnh s nhim bn v h hng.
Nguyn vt liu ng lnh phi c bo qun trong iu kin ng
lnh, khi lm tan ng th phi thc hin sao cho khng lm hng,
nhim bn nguyn vt liu.
Cc nguyn vt liu lng hay kh phi c bo qun thch hp
trnh b nhim bn.
b) Hot ng sn xut:
- Thit b dng c cha thc phm phi c ra sch v kh trng, nu cn
phi tho ri cc b phn lm v sinh.
- Kim sot ton b qu trnh sn xut, k c khu bao gi, bo qun bng
cch:
Kim sot cc thng s vt l: thi gian, nhit , m, pH, p sut.
Thi gian sn xut.
Kim sot cc cng on sn xut nh: lm ng lnh, lm kh, gia
nhit, axt ho m bo khng lm hng sn phm khi c s c h
hng c hc, s chm tr, s thay i nhit , hoc iu kin sn
xut.
- Nhng thc phm l mi trng tt cho vi sinh vt pht trin th cn phi
c x l nh sau:

7.2C. Duy tr thc phm p lnh nhit
Duy tr thc phm ng lnh trong tnh trng ng cng.
60C. Duy tr thc phm nng nhit
X l nhit i vi thc phm axt dit vi sinh vt chu nhit trung
bnh, bo qun sn phm trong bao b kn ht chn khng nhit
bnh thng.
- Cc bin php thanh trng, chiu x, tit trng, ng lnh, lm lnh, kim
sot pH, a
w
phi ph hp vi iu kin sn xut, bo qun, phn phi ca sn
phm trnh lm h hng sn phm.
- Thao tc ca cng nhn trn dy chuyn sn xut phi c thc hin
trnh ly nhim sn phm.
-Trnh nhim bn thnh phm bi nguyn vt liu.
- Khng tp cht l, kim loi bm vo thc phm bng cch dng cc thit
b pht hin kim loi trong thc phm.
- Thc phm, nguyn vt liu b hng phi c loi b, nu ti ch c th
vic ti ch phi c hiu qu, sau khi ti ch nu t yu cu v cht lng
th mi c nhp chung vi l hng khc.
-Cc cng on x l c hc phi c thc hin sao cho khng lm nhim
bn sn phm:
Trnh lm ri, nh cht bn vo sn phm.
Lm sch v st trng b mt tip xc trc tip vi thc phm.
Kim sot thi gian, nhit , ti mi cng on, v gi cc cng
on sn xut.
- Nc tip xc trc tip vi thc phm phi m bo yu cu v sinh.
- Khu sn xut thc phm v thit b sn xut thc phm cho ngi khng
c dng sn xut thc n cho gia sc.
5.1.3 Hnh thc ca chng trnh GMP:
-GMP c th hin di dng vn bn.
-Mt quy phm ca GMP gm 4 phn:

L do ti sao phi thc hin theo quy trnh.
Cc th tc cn tun th.
Phn cng trch nhim v biu mu gim st.
-Cc quy phm cn c:
Tn, a ch x nghip.
S, tn quy phm v tn mt hng hoc mt nhm mt hng.
Ngy v ch k ph dit cua ngi c thm quyn.
-Thit lp biu mu gim st: v hiu qu gim st tu thuc vo biu mu
gim st v phn cng gim st.
5.1.4 Yu cu i vi biu mu gim st:
-Tn, a ch x nghip.
-Thng s v mc yu cu ca thng s cn gim st.
-Tn sut gim st, ngy v ch k ca ngi thm tra.
5.1.5 T chc thc hin:
-Thit lp chng trnh: thit lp s v thuyt minh quy trnh.
-Son tho cc quy phm v thit lp cc biu mu gim st.
-Thm tra li chng trnh, ph duyt cho p dng.
-o to, phn cng, gim st vic thc hin. Lu tr h s.
5.2 Chng trnh quy phm v sinh chun (SSOP):
5.2.1 nh ngha:
L qui trnh lm v sinh v th tc kim sot v sinh ti ti x nghip. Li ch
ca vic p dng SSOP l:
Gip thc hin mc tiu duy tr cc GMP.
Gim s lng cc im sot ti hn trong k hoch HACCP.
Cn thit ngay c khi khng c chng trnh HACCP.
5.2.2 Cc lnh vc cn xy ng SSOP:

5.2.3 Ni dung ca quy phm v sinh SSOP:
1) Quy phm 1: An ton ngun nc
Yu cu:
1. Nc tip xc trc tip vi thc phm v cc b mt tip xc vi thc
phm phi m bo an ton v sinh. Nc an ton phi t yu cu theo:

2. Ngun cung cp nc:
Nc thu cc hay t khai thc.
Nc ging khoan.
3. H thng x l nc:
X l v mt ha l: lng, lc, ly tm, trao i ion.
X l v mt vi sinh: tia cc tm, mng lc khun, ozon, chlorine.
4. Kim sot cht lng nc:
Lp s h thng cung cp nc, trong s phi:
Th hin y h thng, c s hiu nhn din cc im ly
mu nc v tng vi nc s dng, k c vi nc ra tay

2) Quy phm 2: An ton ngun nc
Yu cu:
-Nc tip vi thc phm hoc dng lm thc phm phi m bo an ton
v sinh.
-Ngun nc sn xut nc phi t yu cu ca SSOP v ngun nc.
-iu kin sn xut, bo qun, vn chuyn nc cy (hoc vy) phi
m bo cc yu cu v:
Nh xng, thit b, phng tin sn xut.
Nng Clorine d trong nc .

3) Quy phm 3: Cc b mt tip xc trc tip vi thc phm
Yu cu:
-Tt c b mt tip xc trc tip vi thc phm bao gm dng c, my mc,
qun o bo h lao ng phi lun trong tnh trng v sinh sch s, khng l
ngun ly nhim cho thc phm trong qu trnh ch bin.
-Cc yu t cn xem xt trc khi xy dng quy phm ny:
Vt liu v cu trc ca cc b mt tip xc vi thc phm k c vt
liu bao gi thc phm, gng tay, ym v bo h lao ng.
Phng php lm v sinh v kh trng cc b mt tip xc thc
phm.
-Cc th tc cn hc hin:
1.Lm v sinh v kh trng:
Ho cht, tc nhn thch hp.
Phng php v tn sut ph hp.
2.Bo qun, s dng:
Bo qun v s dng ng cch, ng mc ch.
3.Ly mu thm tra vic lm v sinh v kh trng.
-H s gim st:
Nng cht ty ra v kh trng.

4) Quy phm 4: Ngn nga s nhim cho

Trnh s nhim cho t vt th bn sang thc phm, vt liu bao gi, v cc
b mt tip xc trc tip vi thc phm bao gm dng c, gng tay, qun o bo
h lao ng ca cng nhn, v t nguyn liu sang thnh phm.
- Cc yu t cn xem xt trc khi xy dng quy phm ny:
S lu thng ca nguyn liu, sn phm, nc , ph liu, cng
nhn, bao b
Cc hot ng cc khu vc c kh nng nhim cho:
- Ngn cch nghim ngt khng gian v thi gian khi sn xut
cc sn phm c ri ro khc nhau.
- Phn bit dng c tng khu vc c ri ro khc nhau.
Hot ng ca cng nhn.
Lu thng khng kh (ht gi, cp gi).

5) Quy phm 5: V sinh c nhn
-Yu cu:
Cng nhn phi m bo yu cu v sinh c nhn khi sn xut.
-Cc yu t cn xem xt trc khi xy dng quy phm ny:
Hin trng ca thit b ra v kh trng tay, phng tin v sinh,
phng thay bo h lao ng, nh v sinh.
Cc quy nh hin c v hot ng v sinh c nhn.
6) Quy phm 6: Bo v sn phm khng b nhim bn
-Yu cu:Khng thc phm, bao b, v cc b mt tip xc trc tip vi
thc phm b ly nhim bi cc tc nhn nh du bi trn, thuc kh trng,
cht ty ra, cht ngng t, cc cht gy nhim sinh hc, l, ha khc.
-Cc yu t cn xem xt trc khi xy dng quy phm ny:
Kim sot s ngng t hi nc cc cu trc pha trn thc phm.

-Yu cu: phi m bo vic s dng v bo qun ha cht khng gy hi
cho sn phm.

8) Quy phm 8 : Kim sot sc khe cng nhn
-Yu cu: m bo cng nhn khng l ngun ly nhim vo thc phm, vt
liu bao gi, v b mt tip xc vi thc phm.
-Cc yu t cn xem xt:
C s y t.
Ch kim tra.
9) Quy phm 9: Kim sot ng vt gy hi
-Yu cu: phi ngn nga v tiu dit hiu qu ng vt gy hi.
-Cc yu t cn xem xt:
