Yakult Honsha l cng ty tin phong trong lnh vc probiotics v l mt trong
nhng cng ty hng u Nht Bn. K t khi Yakult c mt trn th trng vo nm
1935 cho n nay, cng ty Yakult Honsha c hn 75 nm kinh nghim nghin cu.
V hin ti Yakult lan rng khp ton cu v mi ngy c khong 28 triu chai
Yakult c tiu th trn 32 quc gia v vng lnh th. Yakult Honsha ang kinh
doanh 3 dng sn phm chnh thc phm v thc ung, dng m phm v dc
phm.

Yakult Vit Nam c thnh lp vo ngy 26/06/2006, vi tng vn u t trn
400 t ng do s gp vn ca cng ty Yakult Honsha (80%) v tp on Danone ca
Php (20%). Yakult Vit Nam bt u kinh doanh vo thng 08 nm 2007. Hin sn
phm Yakult c mt hu ht cc siu th v cc ca hng bn l khp cc tnh
thnh Vit Nam. Ngoi ra, Yakult cn c phn phi trc tip n tn nh ca khch
hng trn a bn Thnh ph H Ch Minh qua h thng giao hng Yakult Lady.
Yakult Vit Nam l thnh vin th 30 trong h thng Yakult th gii. Hin nay
Yakult c bn trn 32 quc gia. Sn phm Yakult l thc ung ln men h tr
h tiu ha, mang li sc khe tt cho mi ngi.Tr s chnh t ti: KCN Vit
Nam- Singapore, BnhDng.
Nh my Yakult Vit Nam t ti khu cng nghip Vit Nam-Singapore, s 5 i
l T Do, Vsip, Thun An, Bnh Dng, vi tng din tch l 24000 m2. Nh my

14001:2004.
Ngoi ra cng ty cn c mt s chi nhnh vn phng t ti mt s tnh thnh trn
c nc nh: Tp.HCM, H Ni, Hi Phng, ng Nai.

2. Tng quan v cng ty Yakult Vit Nam:
a. Gii thiu chung:
Tng s lng nhn vin ca cng ty hin ti l 56 ngi, trong b phn qun l gm c 3
ngi Nht, 53 ngi cn li l nhn vin.
Cng ty Yakult bao gm 6 phng ban:

Phng Tng V: bao gm 9 ngi, m nhim chc nng hnh chnh, nhn s.

Phng to chai: 6 ngi.

Phng ln men( hay gi l phng tng sinh): S lng ngi lm vic trong phng l 9
ngi.

Phng sn xut: 11 ngi.

Phng rt chai, ng gi.

Phng qun l cht lng: 5 ngi.

3. Quy trnh sn xut


Qu trnh sn xut sn phm probiotic ni chung hay sa ln men ni ring i hi phi
c sn xut vi cng ngh cao trong iu kin v sinh ht sc nghim ngt sn phm
sn xut ra l an ton tuyt i cho ngi s dng. iu quan trng nht ca qu trnh sn
xut l trnh s nhim tp ca bt k vi sinh vt no khc bi v sn phm rt d b nh
hng bi s pht trin ca chng.
Hn na, cn phi duy tr lng khun probiotic trong sn phm biu hin hot tnh c
li ca chng cho sc khe ngi s dng. V th Yakult c sn xut trong iu kin ht
sc nghim ngt. Quy trnh sn xut Yakult:

Nguyn liu c la chn cn thn chun b cho qu trnh ln men


1) Phi trn: trn chung hn hp sa bt gy, ng v nc, sau lc v trng trong bn
ln.
2) V trng: dung dch sa chun b trn c tit trng ti nhit cao trong 1 thi gian
ngn tiu dit tt c vi sinh vt no m c hin din trong sa. Sau , dung dch c
vn chuyn qua nhiu h thng ng v valve n bn ln men ln.
3) Ln men: chng khun L. casei Shirota c nui cy v th nghim trong phng th
nghim, c cho vo bn ln men (khu vc ny sn mu xanh). Mi ln tng sinh 120
lit, tuy nhin trong qu trnh sn sut ch s dng 60 lit/ 1 m. Sau thi gian ln men,
trong bn ln men c cha hng t khun sng v lc ny dch trong bn l c st. Sau
hn hp ny c ng ha.
4) Bn lu tr: Sn phm sau khi ng ha s c chuyn vo bn ln c cha dung dch
ng. Mc ch ca giai on ny l trung ha v chua ca sn phm sau khi ln
men, ng thi ng s l ngun dinh dng cung cp cho khun L.casei Shirota sng
trong thi hn s dng
5) Bn phi trn: hn hp trn c pha long vi nc ct v trng ( c x l bng tia
UV).

6) To chai: cc chai nha polystyrene c sn xut ti nh my bng my to chai. Cc


ht nha polystyrene c un nng v to khun dng chai Yakult. Sau , chng c
chuyn qua bn cha ln v trng cho cc cng on tip theo.
7) In nhn: tn Yakult cng nh nhng thng tin quan trng khc, bao gm c thnh phn
dinh dng c in ln chai.
8) Chit rt sn phm: mi chai s c lm y vi 65ml Yakult. Sau chai s c y
np vi giy nhm bc. Hn s dng cng c phun ln np m sau c ng
vo chai.(Khu vc ny sn mu hng)
9) ng gi: 5 chai s c bao li thnh 1 pack trong 1 lp nha mng polypropylene. V
10 pack c ng gi thnh 1 case.
10) Bo qun: thnh phm cui cng s c vn chuyn n kho lnh 5C v sn phm s
c lu ti kho 1 ngy kim tra cht lng sn phm trc khi phn phi n tay
ngi tiu dng.
11) Kim tra cht lng: Mi t sn xut, c
khong 200 mu c kim tra, bao gm
tt c cc cng on ca qui trnh sn xut,
t khu nguyn liu n thnh phm cui

Sn phm Yakult p ng tiu chun cht lng i vi sn phm sa ung ln men,
theo qui nh ca B Y t, tiu chun TCVN 7030:2009. Tiu chun ny p dng cho cc
loi sa ln men gm: sa ln men, sa ln men qua x l nhit, sa ln men m c
v cc sn phm hn hp ca chng, dng trc tip hoc dng ch bin tip ph
hp vi cc nh ngha trong iu 2 ca tiu chun ny. V vic kim sot cht lng
c thc hin cho n khi sn phm ht hn.
12) Phn phi sn phm: sau khi sn phm c kim tra cht lng, sau s c phn
phi n cc trung tm ca Yakult v vn chuyn n ngi tiu dng vi cht lng tt
nht.

4. Vi khun lactic v tn mt s chng lm probiotic cho ngi
Vi khun lactic thuc h Lactobacillaceae. Cc chng vi khun thuc nhm ny c c im
sinh thi khc nhau nhng c tnh sinh l tng i ging nhau. Tt c u c c im c c
im chung l vi khun Gram dng, khng to bo t, khng di ng, h hp ty tin ( k kh
v hiu kh ) v khng cha cc men h hp nh xitoccrom v catalaza. Chng thu nhn nng
lng nh qu trnh phn gii hydrat cacbon v sinh ra axit lactic, sinh sn bng hnh thc phn
i t bo.
Nhm vi khun lactic bao gm nhiu ging khc nhau: Streptococcus, Enterococcus,
Lactobacillus, Leuconostoc. Ngy nay ngi ta b sung vo nhm vi khun lactic nhng chng
vi khun thuc ging Bifidobacterium.

Lactobacillus v Bifidobacterum, ngoi ra Enterococcus v Streptococus cng c s dng t

acidophilus,Lactobacillus casei, Lactobacillus gasseri, Lactobacillus rhamnosus,Bifidobacterium

a. Probiotic

6. Chng nhn FOSHU (Foods For Specified Health Use) biu tng sn phm tt
cho sc khe
FOSHU l biu tng thc thc phm chc nng c li cho sc khe ca con ngi.
Chng nhn FOSHU ch nh rng l sn phm cung cp li ch cho sc khe v bao gm
cc cht (thnh phn hot tnh) c tc dng mang li li ch v mt sinh l hc ca c th.

T nm 1991, FOSHU tr thnh thut ng chnh thng cho cc loi thc phm nh vy,
v chng c nh ngha nh l "thc phm ch bin c cha cc thnh phn h tr c th cho
cc chc nng ca c th ngoi cung cp dinh dng ".
Do , khi c chng nhn FOSHU c ngha l nhng thc phm c th m cc nh sn xut
hoc ngi bn cung cp cc bng chng khoa hc cho cc chc nng c th cc c
quan c thm quyn v da trn cc bng chng ny, c th s dng tuyn b sc khe c
ph duyt v logo FOSHU trn nhn hiu ca sn phm.
