Thao tc thc hin: - C sau khi fille v ngm c cn nh mc v ngi thng k s ghi li nng sut lm vic ca cng nhn vo s ghi chp. - Sau vo r v cho r bn thnh phm vo bn nc sch ra trong iu kin chy trn, dng tay khuy o u. Yu cu: - Cn chnh xc c 30 pht hiu chnh 1 ln. - Hiu sut thu hi cng on fille trn 50%. - Sau khi ra ming c phi sch mu, nht, tp cht, vi sinh vt bm trn ming fille, khong 50-70 kg c thay nc 1 ln.

Yu cu: - Cn c chnh xc cao, c 30 pht hiu chnh 1 ln. - Hiu sut ca cng on nh hnh l trn 75%. - Sau khi ra ming c phi sch nht, mu, tp cht, vi sinh vt cn st li. - Ra khong 50-70kg thay nc 1 ln.

Hnh 2.8: Cn nh mc Ra 2 Phn loi: Mc ch: Loi b ming c khng t, khng nguyn vn, phn lai ming c ln nh. Dng c: bn phn loi, r. Thao tc thc hin: Ti y cng nhn phn loi ming c p t yu cu s c chuyn qua cng on ra, nhng ming c cn , dp nt khng t c cho vo r cha v tr v cng on nh hnh chnh sa li. Yu cu: Thao tc nhanh nhn, chnh xc sn phm t cht lng.

Hnh 2.9: Phn loi Ra 3: Mc ch: Loi b vi sinh vt, tp cht cn st li trn ming c. Dng c: 3 bn nc ra, r. Thao tc thc hin: R cha bn thnh phm c nhng chm trong nc ra dng tay khuy o u, m bo totrong bn 10oC bng vy, ra ln lt qua 3 bn. - Bn 1: nc sch c pha chlorine nng 100ppm. - Bn 2: nc sch c pha chlorine nng 50ppm. - Bn 3: nc sch. Yu cu: Sch tp cht, vi sinh vt.

Hnh 2.10: Ra 3 Quay thuc: Mc ch: - Gip c bng mt to gi tr cm quan lm tng gi tr kinh t cho sn phm. - Tng trng c ln khong 10%. Dng c: Thng quay tng trng. Thao tc thc hin:

- Bn thnh phm cho vo thng quay tng trng vi t l thuc: c. Thi gian quay thuc khong 15 pht, m bo tothuc quay 10oC. - Thuc tng trng s dng gm: MTR 79P, MTR 80P, NaCl. Yu cu: - Quay c ng thi gian. - Ming fillet phi mm, bng p. - C sau khi quay phi tng trng uc 10%.

Thao tc thc hin: R bn thnh phm ln lt c nhng chm vo 2 bn nc dng tay khuy o u, m bo totrong bn 10oC bng vy. - Bn 1: nc sch c pha chlorine nng 100ppm. - Bn 2: nc sch c pha chlorine nng 50ppm. - Bn 3: nc sch. Yu cu: Sch tp cht, vi sinh vt.

Hnh 2.13: Ra 5 Xp khun: Mc ch: Xp sn phm thnh tng bnh, to thun li cho cng an cp ng. Dung c: Khun c ra sch bng chlorine c nng 50ppm, ti PE. Thao tc thc hin: Lt tm PE ln di y khun, xp p tng ming c vo sao cho chng ri nhau, u hng ra ngoi, xp xong 1 lp th dng tm PE nh tri ln v xp lp th 2, c nh th cho n khi ht r c. Yu cu: - Phi sp ht r, cc ming c ri nhau. - B mt khun c sau khi xp phi phng, khng li lm. - C t ng yu cu, phi c th c.

Hnh 2.14: Xp khun Ch ng: Mc ch: 1 m a vo cp ng. Dng c: T ch ng, xe y. Thao tc thc hin: Cc khun xp cho vo t ch ng 1 m chuyn vo cp ng, tophng ch ng = -1 4oC, khng qu 4h. Yu cu: Thi gian, to t yu cu.

Cp ng: Mc ch: c ch hot ng ca vi sinh vt, ko di thi gian bo qun. Dng c: T cp ng, xe y. Thao tc thc hin: Cng ty p dng 2 kiu ng: ng Block v ng IQF. - ng Block: Khi 1 m cp ng cc khun c chuyn n t cp ng bng xe y. Trc khi cp ng phi v sinh t: dng vi nc p lc cao xt v sinh t, cho t chy n khi tot = -18oC -20oC, sau ngi cng nhn ln lt xp cc khun c ln tm plack t di ln trn, y th iu khin ben nng h cc tm plack p cc khun li nhng nn p va phi, ng t, cho chy t, thi gin ng t 24h. - ng IQF bng chuyn: Cc ming fillet sau khi cn, ra xong a vo bng chuyn IQF phng cp ng. bng chuyn, cng nhn a tng ming fillet vo lin tc, xp ngay ngn. Thi gian cp ng (i ht bng chuyn) l 30 pht. Nhit tm sn phm t -18 -20oC. Yu cu: Cc khun sn phm phi t bng phng, totm sn phm = -18oC khi sn phm ra khi t.

Hnh 2.15: ng Block v ng IQF Tch khun: Mc ch: i vi dng ng Block: tch sn phm ra khi khun. Dng c: Vi nc p lc, bn.

Thao tc thc hin: Ngi cng nhn cho khun sn phm p i qua vi nc p lc mnh, ri g nh thnh khun xung bn, bnh sn phm s tch ra khi khun. Yu cu: Bnh sn phm phi nguyn vn, khng b nt, b.

Hnh 2.16: Tch khun M bng: i vi c ng Block c bc kn trong bao nn vic m bng khng phi thc hin. Ch p dng phng php m bng i vi c ng IQF. Mc ch: Trnh s bay hi nc ca sn phm, lm p sn phm. Dng c: Thau, r. Thao tc thc hin: Sn phm ng IQF sau khi ra khi bng chuyn c nhng vo trong bn nc lnh sau ly ra lin chuyn vo phng bao gi. Yu cu: tonc m bng 4oC

Hnh 2.17: M bng Bao gi ng thng: Mc ch: Cch bit sn phm vi mi trng bn ngoi, trnh s ly nhim, trnh s va p trong lc vn chuyn, bo qun. Dung c: Ti PE, thng carton, dy ai, my nin dy ai, bng keo. Thao tc thc hin:

- Ngay sau cng on tch khun (m bng) ngi cng nhn tay cm ti PE m ming ti v cho sn phm vo, hn kn ming ti. Tip theo xp sn phm vo thng carton y np thng dng bng keo dn kn ming thng, nin thng bng 2 dy ai ngang v 2 dy ai dc. - Ngoi ra trn thng carton c in cc thng s cn thit: Tn sn phm, size, khi lng tnh, ngy sn xut, hn s dng, nc sn xut, code qun l, iu kin bo qun, m s l hng. Yu cu: - Ti PE phi m bo v sinh, khng b rch. - Thng carton phi v sinh, khng t thng carton di nn nh. - Sn phm bn trong phi ng vi ni dung in trn bao b.

Hnh 2.19: bao gi sn phm ng IQF Bo qun: Mc ch: gi sn phm nhit thp nhm hn ch hat ng ca vi sinh vt. Dung c: Kho lnh, xe y, ng ry vn chuyn. Thao tc thc hin: Sn phm sau khi ng thng nhanh chng a vo kho tr ng to = -20oC, khng c sn phm bn ngoi qu 30 pht. Yu cu:

- m bo to kho = -20oC 2oC. - Nhit trong kho phi n nh, t dao ng, iu ha khng kh tt.
