1.1 Tng quan v enzyme -amylase. Gii thiu chung v enzyme -amylase [1, 2]. 1.1.1

1.1.3.1 Tinh bt. - Tinh bt bao gm hai cu t l amylose v amylopectin, cc cht ny khc hn nhau v tnh cht l hc v ha hc. Amylose to mu xanh vi iod cn amylopectin li to mu tm . -amylase t vi khun Bac.licheniformis [3, 10].

4.1 Kt lun. Qua qu trnh nghin cu, chng ti thu c kt qu nh sau: - Phng php c nh -amylase trn cht mang chitosan rn c chn la l phng php lin kt cng ha tr. - iu kin c nh : Th tch enzyme -amylase: 0,17ml. Thi gian c nh: 2,3h. Vn tc lc: 150 vng/ pht. Kch thc chitosan: 0,7mm. Nng glutaradehyde: 4%.
