I. GII THIU Thut ng protein n bo mi hnh hnh trong gii khoa hc t nhng nm 50 ca th k trc. Thc t loi ngi bit s dng loi protein ny v cc cht c trong t bo VSV t rt lu. Protein n bo (SPC-Single cell protein) l thut ng ch mt loi cht dinh dng c trong t bo v ch sn xut t vi sinh vt (VSV), c s dng lm thc n cho ngi v ng vt. Thut ng ny khng ch n gin l protein t t bo ca c th n bo, v rt nhiu VSV khng phi l c th n bo m ngi ta vn khai thc chng. Hm lng protein rt cao, cao hn rt nhiu so vi protein c trong TV hay V (hm lng protein VSV khong 20-80% trng lng kh). Vi khun 60-70% tnh theo cht kh, c loi ti 87% Nm men 40-60% Nm mc v x khun <30%. Cht lng protein ca vi khun l cao nht, v cc thnh phn acid amin cn i hn nm men. NGUYN LIU V GING VI SINH VT S DNG


I. NGUYN LIU Nguyn liu c dng trong sn xut nm men gia sc l b ru - ph phm ca cc nh my ru, c b sung thm r ng - ph phm cc nh my sn xut ng. Dch b ru l ngun dinh dng nui cy nm men rt tt. Trong dch ny c khong 7.5-10% cht kh ho tan rt giu vitamin B v cc acid amin. Khi nui nm men, dng dch ny pha thm r ng mi trng lun lun c khong 2-3% ng, ta c th thu c t 10- 15 kg men kh t 1 m3 dch b ru. Nguyn liu b ru (Hm) Trong sn xut cn t mt r, b thi ra mi trng l b ru. B ru cha nm men, cht ha tan v c lng cn st. Trong s cc cht ha tan ca b ru c ng (12,5%), cc hp cht nit, cc vitamin nhm B. Ngoi ra, trong b ru cn c cc nguyn t khong, cc nguyn t vi lng... nh vy trong b ru c t ng, nhng rt phong ph cc cht sinh trng. Dng kh 0.2-0.5%. glyxerin 0.6-0.9%, cc axit hu c 1.5-2.5%, cc axit amin, cc loi ru, glucoside, cc hp cht v c v hu c, cc mui P, K, Fe, vitamin v cc nguyn t vi lng. Cc hp cht ny men c th hp thu c. thay th ngi ta dng cc ngun nit v c nh dd NH3, cc mui nitrat, urea nh ngun cha nit, diamoni phosphate (DAP) nh ngun cha nit v photpho.
