CHNG 2. TNG QUAN V QUY TRNH SN XUT NC CHUI 2.1. Gii thiu nguyn liu 2.1.1. c im Chui tiu l ging chui n ti c bt chuyn ht thnh ng, d tiu ho, c qu cong, v dy. 2.1.2. Chui cha t vitamin nhng hm lng cn i, ngoi ra cn c mui khong, pectin v hp cht polyphenol.

Thi gian ra phi ngn, tit kim nc, lng nc dng l 0,7 1 lit/kg nguyn liu.

Chn l mt gii php k thut tt lm thng tn mng nguyn sinh cht, tng tnh thm qua mng. Chn c th ty sch tp cht v tiu dit phn ln vi sinh vt nhim vo trong qu trnh ch bin. Vic chn trong nc nng c tc dng kh trng tt hn so vi hp bng hi Thi gian v nhit v lng nc chn cn kho st cho ph hp trnh lm tn tht cht kh v nhn nguyn liu. Nhit chn: 100OC, thi gian 8 pht. 2.2.2.7. Chun b syrup Syrup c chun b theo phng php nu nng, ng c ho vi nc ri un si, sau lc v lm lnh. Phng php ny gip tiu dit c cc vi sinh vt c trong ng v nc, mt khc to iu kin tt chuyn saccharose thnh glucose v fructose. Cc bc chun b syrup c tin hnh nh sau: Nc v ng c ho vi nhau ri un ti 95OC, b sung thm acid citric, gi nhit ti y trong 30 pht tin hnh chuyn ho saccharose. Ty theo pH ca nguyn liu, acid citric c phi trn chnh pH ca dch

chui sau khi trn vi syrup v pH 4.2. Hm lng s dng vo khong 0.1 %. Lng nc bay hi trong thi gian nu khong 2 5%, do vy cn tnh ton trc syrup c nng nh mong mun. Thit b s dng trong qu trnh ny l cc ni inox hai v, bn trong c cnh khuy hot ng lin tc. Lc syrup c tin hnh trng thi nng nhm tch ht cc tp cht c hc nh rc, t, ct ln vo ng trong qu trnh vn chuyn, bo qun. Qu trnh lc thc hin bng thit b lc khung bn. Sau khi lc, syrup c lm lnh xung 10OC hn ch tn tht v gi hng thm. S dng thit b trao i nhit bn mng vi tc nhn l nc lnh 4OC. Syrup sau khi pha ch nng 20%. 2.2.2.8. Phi trn Mc ch: to hng v cho sn phm. Dch chui v syrup c bm vo phi trn theo t l dch chui : syrup = 3:7.
