I.NH LNG VITAMIN C 1) Nguyn tc + Vitamin C (acid ascorbic) C6H8O6 l mt trong nhng vitamin c nhiu trong thc phm, vi hm lng ng k tronh nhiu loi tri cy ti v rau ci. + Do vitamin C rt d b oxi ho nn ngi ta dng qu trnh oxi ho vitamin C lm c s cho phng php phn tch. Mt trong nhng phng php ph bin l phng php nh lng bng iod. Tt c acid ascorbic b oxi ho bi iod theo phng trnh phn ng sau: C6H8O6 Acid L Ascorbic + I2 C6H6O6 + 2HI

+ Khi tt c acid ascorbic b oxi ho ht, mt git tha s cho mu xanh vi h tinh bt. 2) Tin trnh th nghim + Cn 1 vin vitamin C,ho tan trong cc thu tinh vi 5ml dung dch HCl 5%,cho vo bnh nh mc 100ml, trng cc ri thm dung dch HCl 5% cho n vch, y np, lc u dung dch. + Trng buret bng dung dch I2 0.01N, sau cho dung dch I2 0.01N vo buret v chnh v vch 0. + Dng pipet ht 10ml dung dch vitamin C cho vo erlen 250ml. Thm 3 git h tinh bt, lc u c dung dch khng mu. + Chun dung dch vitamin C t khng mu chuyn sang mu xanh bn trong 30 giy. + Ghi gi tr th tch dung dch I2 dng. Lp li th nghim 3 ln v ly gi tr trung bnh. II.XC NH NNG GLUCOSE TRONG DUNG DCH GLUCOSE NG TRNG 1)Nguyn tc

+ Glusose c cng thc cu to: CH2OH (CHOH)4 CHO + Trong phn t c nhm chc aldehyd nen glucose c tnh kh, do vy c th dng dung dch chun iod nh lng dung dch glucose bng phng php chun ngc. + Phng php tha tr nh lng dung dch glucose sau: cho mt th tch chnh xc dung dch glucose cn nh lng tc dng vi mt th tch chnh xc v d dung dch iod. Sau dng dung dch chun natri thiosunfat xc nh lng iod tha. 2) Tin trnh th nghim + Ht 10ml dung dch tim glucose cho vo bnh nh mc 50ml, thm nc ct ti vch, y np, lc u. + Ht 5ml dung dch glucose pha long trn cho vo erlen 250ml c nt. + Cho tip 10ml dung dch I2 0.1N. + Ht 2ml dung dch NaOH 10% v nh tng git vo erlen. y nt erlen, yn 5 pht. + Cho thm 5ml dung dch H2SO4 10%. + Rt dung dch Na2S2O3 0.1N vo buret v chnh v vch 0. + Chun dung dch trong erlen bng dung dch Na2S2O3 0.1N n khi xut hin mu vng rm, tm kho buret. + Nh thm 3 git h tinh bt , dung dch c mu xanh. + Tip tc chun cho n khi mt mu xanh. + Kho buret, ghi th tch Na2S2O3 0.1N dng. Lp li th nghim 3 ln v ly gi tr trung bnh. III. KT QU 1)Hm lng % vitamin C * Khi lng vitamin C: 0,2g * Th tch dung dch I2 dng: V1 = 12,4ml Vtb = 12,5ml *Nng ng lng ca vitamin C: CN = 0,01.12.5/10 = 0.0125 N *Nng mol ca vitamin C: CM = 6,25.10-3M V2 = 12,5ml V3 = 12,5ml

*S mol ca vitamin C: n = 6,25.10-3.0,01 = 6,25.10-5 mol *Khi lng ca vitamin C: m = 6,25.10-5.176.10 = 0,11g % vitamin C = 0,11.100/0,2 = 55% 2) Nng glucose trong dung dch ng trng theo n v g/l * Th tch dung dch tch Na2S2O3 0.1N dng: V1 = 4,6ml V2 = 4,5ml V3 = 4,5ml Vtb = 4,5 ml *Phng trnh: 2Na2S2O3 + I2 2NaI + Na2S4O6 *Th tch ca lng iot d trong dung dch V = 10 4,5 = 5,5 ml= 5,5.10-3 lt *Nng dung dch glucoz qua lng iod cn d C = 0,1.5,5.10-3/5.10-3 = 0,11N *Nng glucoz trong 1 lt dung dch CM = 0,11/2 = 0,055M *Hm lng glucoz theo n v g/l P = 0,055.180 = 9,9 g/l IV.
