] Vitamin A
Cn c cc tn l retinol, axerophthol... Vitamin A tn ti trong t nhin gm 2 dng:

Retinol: dng hot ng ca vitamin A, n c ng ho trc tip bi c th. Tin vitamin A: n chnh l mt tin cht ca vitamin A c bit n nhiu di tn bta-caroten. Tin cht ny c chuyn ho bi rut thnh vitamin A c th c th s dng.

Vitamin A c nhiu chc nng quan trng i vi c th con ngi:

Trong thc vt ecgosterol, di tc dng ca nh nng s cho ecgocanxiferon. Trong ng vt v ngi c 7-dehydro-cholesterol, di tc dng ca nh nng s cho colecanxiferon. Vai tr:

Vitamin B1
Cn c cc tn l thiamin, aneurin... Vitamin B1 ng vai tr quan trng trong vic to ra nng lng cn thit cho cc hot ng chc nng ca con ngi. Vai tr:

Vitamin C

Sinh t E c nhiu trong cc loi du thc vt, trong u, m cng nh trong mt s rau ci nh: rau dn, c su ho. Bng so snh hm lng sinh t E di y cho thy vai tr quan trng ca cc loi du n dn xut t u phng, u nnh, hoa hng dng. Nhu cu l tng ca sinh t E l 12mg mi ngy. Trong iu kin sinh hot bnh thng, ch tiu ny c th c p ng d dng vi ch dinh dng c trng im l ngun thc phm rau ci, khoai lang ta v du thc vt. Nhu cu v sinh t E gia tng trong trng hp c thai, trn i tng ang cho con b, vi ngi ang trong tnh trng cng thng thn kinh, ngi khng quen dng du n thc vt. Bnh nhn ung th v tim mch nn c tip t vi lng sinh t E cao gp 5 ln hm lng bnh thng m khng s b nhim c v bnh chng do tch ly sinh t E trong c th hu nh khng c trong thc t, tr khi i tng c phng tin t u c vi liu sinh t E ti thiu 800mg mi ngy v trong nhiu thng lin tc.

[Vitamin C

Triu chng khim khuyt sinh t C tin hnh tun t qua 3 giai on, mau hay chm ty theo mc thiu ht, trc khi b bnh Scorbut do thiu sinh t C thc s hi iu kin thnh hnh: o Giai on 1: mt mi, cng thng thn kinh, bun ng, au nhc c khp. o Giai on 2: chy mu nu rng, di da, da nim. o Giai on 3: bin dng xng khp, vt thng khng lnh, h rng, bi nhim.

Tri cy ti l ngun cung ng ch yu sinh t C, c bit l du, chanh, bi, i, cam, xoi, u , da hu. Mt loi tri cy quen thuc c chu nn c nng gia Vit Nam lu hi nhp l tri kiwi, v l ngun cung cp di do sinh t C. Thnh phn rau ci c nhiu sinh t C l t b, ci broccoli, bp ci, c chua. Trong a s trng hp, ch dinh dng vi rau tri ti m bo hm lng sinh t C cho c th. Bng di y cho thy t l hm lng ca sinh t C trong cc loi rau tri khc nhau, qua quan nim n cam mi c sinh t C khng cn ng vng, v trn cng trng lng th t b c hm lng sinh t C cao gn gp 3 ln lng sinh t C trong tri cam.
