1. Thnh phn v gi tr dinh dng ca ru vang qu:


+ Ru ethanol: 10 -15% + ng: 63 132 g/l (fructoza, glucoza) + Acid v c, hu c: acid malic, acid citric, acid oxalic. (4 7 g/lt (quy ra acid malic) + pH ca ru vang = 2,9 3,9 + Khong: P, S, K, Na, Ca, Fe, Cu, Mn,1,53 g/lt + vitamin:B1, B2, PP, H. + glyxerin + polyphenol

2. Quy trnh sn xut ru vang


2.1. Nguyn liu: Cc loi qu n c (l tng nht l nho) 2.2. X l nguyn liu: + Trong sn xut nh : Qu em gi dp bng ci snh, ci hay ci g. Tuyt i khng dng dng c bng st, ng. + Trong sn xut quy m cng nghip: Qu c p bng my ri lc trong phng cha CO2. ++ chng dch qu b xy ha v tiu dit vi khun, tp khun (vi khun acetic, vi khun lactic), ngi ta cho SO2 vo dch qu (30 - 120mg/1 dch qu).

++Pha long dung dch bng nc: - Khng cho thm nc vo dch qu i vi nho, du, cam, da... - Pha long 15 20% nc tnh theo khi lng ca phn qu n c (i vi mng cu v xoi) - Thm 30% nc i vi o, mn, du da, ++ Thm ng ++ iu chnh chua: pH = 3 3,5. (CaCO3 , acid tatric, acid citric) ++ iu chnh mt s ch tiu khc: B sung ngun N bng amonium, th ngun vitamin bng vitamin B1
