Chng 1: Tng quan v polyols 1. polyols l g? L mt loi carbohy-drate s dng thay th cho ng trong thc phmsugar free. polyols l tn gi thu gn ca nhm ru a phn t polyhydric alcohol, cn c gi vi ci tn sugar alcohol v trong cng thc c nhm alcohol (CH-OH) v tr cacbonyl (C=O) trong cc aldose v ketose. Polyols khng phi l ng cng khng phi l rc v phn bit r rng th Cc Qun l dc v thc phm M (FDA) xem xt dng thut ng polyol trnh gy nhm ln. Do nhu cu s dng cc loi thc phm khng ng, gim ng hay h ng huyt, polyols ang c s dng thay th ng trong nhiu loi thc phm. Polyols lm ng huyt tng chm hn sau khi tiu th so vi carbohydrate. 5. Tc hi ca polyols?
