Theo Bo Y te Viet Nam : - PGTP la cac che pham t nhien/tong hp hoa hoc. - PGTP khong c coi la thc pham hay mot thanh phan chu yeu cua thc pham. - PGTP c chu ong a vao thc pham nham at muc ch ky thuat SX, CB, bao goi, van chuyen, bao quan. Cac chat nay c lu lai trong thc pham (dang nguyen the/dan xuat) nhng phai am bao an toan cho ngi s dung. - PGTP khong bao gom : Cac chat o nhiem, cac chat bo sung dinh dng cho thc pham.

Pectin la polysaccharide co nhieu qua, cu hay v cay. thc vat, pectin ton tai di hai dang: - Protopectin khong tan co nhieu thanh te bao - Pectin hoa tan co chu yeu dch bao.
