I.LCH S VN
- Bia l mt trong cc ung lu i nht m loi ngi to ra, c nin i t
nht l t thin nin k 5 TCN v c ghi chp li trong cc th tch c ca Ai
Cp c i v Lng H (Mesopotamia).
- Thut ng "bia" trong ting Vit ch loi ung ny c l c ngun gc t
bire trong ting Php do bia ch c sn xut Vit Nam k t khi ngi Php
mang th ung ny ti Vit Nam vo cui th k 19. Ging nh phn ln cc
cht cha ng khc c th b ln men mt cch t nhin, rt c th l cc ung

ton th gii.

tiu th.
- Nm 1516, Cng tc x Bavaria, thng qua Reinheitsgebot (Lut tinh khit),

thnh phn ca bia ch c bao gm nc, la mch hoa bia, vi men bia c b

4 thng xung cn cha y 24 gi. Cng ngh ca ng vn c s dng bi nhiu
nh sn xut bia ln nht th gii ngy nay, bao gm c Guinness.
Ngy nay, cng nghip bia l cng vic kinh doanh khng l ton cu, bao gm ch
yu l cc t hp c ra i t cc nh sn xut nh hn.
II. NGUYN LIU
1. Malt :
- L mt ht ng cc gi l la mch (chim 70%).
- c dng to mu cho bia, vi malt bnh thng khng mu v th ta
thm malt en tng mu.
- Chon malt :
+ Mi: Mi thm, rm ti. Mi mc bo qun t
+ Ht to, cng trn
+ Mu sc v sng ng nht. (xanh, nu )
+ V: gh gh, mng, v dy phng cha chn.

+ m 14 -15%
+ Khi lng 1000 ht t 35 47g
+ Tp cht: Khng c ht di, ct sn, rm r, bng la, kim loi, ht v ht
m hay l.
2. Hoa Hupblon :
- Mau vng xanh, m : 75 %, ch dng hoa ci
- To v ng cho bia, c bo qun nhit di 10oC gim mt mt
ca - axit .
- Bo qun bia lu hn, to hng v c bit.
- Thay th mi c thm khc
- Nh tnh khng khun ca hoa houblon: ln men ni v bia cht lng tt hn
3. Men bia :
- L cht xc tc c ngun gc prtin.
- Mi loi men c mt hng v ring.
4. Go, nguyn liu thay th :
- Tm hay bt go mu trng
- Mi ca tm hay bt go khng i, kht
- m: < 13%
- Hiu sut ha tan: 80-85%
- Hm lng cht bo: 0,5 - 0,7%
5. Nc :
- Chim 80 90% trong bia, thnh phn quan trng.
- X l nc dng trong sx bia, ph thuc vo mc sch.

III. QUY TRINH SAN XUT


1.Quy trnh nghin
1.1.Muc ich
- Ph v cu trc ca t bo tng din tch b mt tip xc ca nguyn liu vi
nc, thc y qu trnh ng ho.
- Nguyn liu em nghin gm co gao va malt, hai cht nay no c nghin bng
hai may khac nhau.Trc khi cho nguyn liu vao nghin ta cho no i qua b phn
san rung, nhim vu cua sang nay la hut kim loai va bui bn vi trong cu tao cua sang
nay co gn nam chm va quat hut bui.

Nguyn tc hoat ng :
- Nguyn liu a vao qua phu (1) di s u chinh con quay (7) nguyn liu se
c ri xung sang rung (8) sang nay gm 3 ngn, ngn trn cung l li co kich
thc ln vi th ma nguyn liu va bui co kich thc nho se ri xung ngn 2. Ti
ngn th 2 vi kch thc l sng nh hn so vi ngn th nht s tin hnh phn
loi tp cht b,cac tap cht be nay se ri xung ngn cui cung va i ra ngoai. Go

Malt c vo phu v c nghin s b cp trc th nht v c a
xung trc th 2 tip tc nghin mn hn do khong cch gia 2 cp trc, cp
trc th nht ln hn cp trc th 2.Trong qu trnh nghin phi thng xuyn kim
tra cht lng ca bt nghin, nu xut hin ht nguyn hoc v b v nt th phi
dng my v iu chnh khe nghin cho thch hp.

Go c a vo my nghin ba qua phu np liu (1). Go c nghin ntnh
vo lc va p ca ba nghin vo thnh trong ca my nghin v do s c xtgia
cc ht vi nhau. Ba c lp trn a treo s (4) gn trn trc quay (5), cc ba
c treo cch u nhau. Go sau khi nghin vi kch thc yu cu s lt qua li
3 ra ngoi v c a vo phu cha nh gu ti. Li sng c kch thc l l 1,7
mm.

2.Quy trinh ng hoa nguyn liu(qua trinh nu)


2.1. Muc ich
y la qua trinh thuy phn cac cht co trong nguyn liu. Di tc ng ca
enzim thy phn c trong nguyn liu v b sung bn ngoi vo, tinh bt c thy
phn to thnh ch yu l ng maltoza v ccdextrin
Ti ni nu go, sau khi un si dch phi trn vo, ta b sung CaCl2.H2O
vit l 0,9176 kg/tn go to pH m cho qu trnh thy phn sau ny. Sau
b sungenzim Termamyl vi t l 464,7 ml/ tn go phn ct tinh bt thnh cc
mch ngn, to iu kin thun li cho qu trnh ng ha.Tin hnh nng nhit
ca ni ln 60oC, 98oC, 100oC vi tc nng nhit l 1oC/ pht v gi nhit
si trong 2 pht ph v cu trc tinh bt, to iu kin thun li cho qu trnh
ng ha.
Ti ni nu malt, ta cng b sung CaCl2.H2O vi t l 1,055kg/ tn malt v b
sung enzim Ceremix vi t l 222,2 ml/ tn malt tng hiu sut ng ha. Tin
hnh nng nhit ni malt ln 40oC v gi trong 20 pht nhm to iu kin cho
enzim proteaza thc hin qu trnh m ha, bm ton b dch ni go sang ni

malt, sao cho nhit ca ni malt m bo 66oC. Trong sn xut tnh ton lm
sao cho khi thi gian nu ni malt va kt thc th ng thi ni go cng va
thc hin xong qu trnh m ha nhm trnh thi gian i qu lu mt trong 2
ni dn n s oxi ha, lm thay i thnh phn ha hc ca nguyn liu.

2.3. Nguyn tc hoat ng


Nguyn liu (gao hoc malt a phi trn vi nc) c a vao ni qua ca 2
,hi cp nhit qua h thng ng ng (15) ,thc hin qua trinh trao i nhit vi
nguyn liu qua thit bi (11) .Ban u ng c (14) truyn ng cho canh khuy
(16) quay nhanh sau o giam dn ,canh khuy co muc ich lam cho nguyn liu tip
xuc u vi nhit va enzym, mt khac tranh hin tng von cuc ,tng hiu xut
nu .Hi sau cp nhit tao thanh nc ngng c thao ra ngoai qua ca thao ra
(12) co nhit khoang 90-95oC va a h thng trao i nhit ha nhit
xung 8.5oC trc khi a vao ln men .Dich chao c thao ra ca s (13).

3.1 Muc ich


La lc ht cht lng ra khi tru cng nh cc cht s v mm ca cy la. ly
ht lng ng cn bm trong tru, ngi ta thm nc nng khoang 78oC va
loc tip sau khi a loc ly phn nc nguyn cht (y la giai oan ra ba).
Ch : Qua trinh loc nc u tin thi cn tin hanh nhanh vi luc nay nng
cua ng trong la cao con nng trong mu malt la thp hn, nn ng co th
khuch tan vao lai trong mu malt, nhng ra ba thi chm u thi gian cho
ng trich ly ra dich.

Trc khi bm dich chao vao ta phai bm mt lng nc co nhit khoang 78 0C
vao lp y khoang trng khi a dich chao vao ba se khng nen qua cht lam
giam hiu xut loc. Trc khi bm dich vao ng s (1), ta cho canh gat ba (3) hoat
ng.Sau khi bm vao xong ta tng tc cua canh khuy ln cho chay vai vong ri

dng lai nhm u ba trn b mt loc. Dich loc se c chay xung cac ng gom ri
c a ra ngoai qua ca s (2) luc nay dich loc thu c con uc ta co th cho
hi lu lai trong thit bi loc. Sau khi loc xong chuyn dich loc sang ni houblon hoa.
Khi mc nc ct gn sat b mt ba thi tin hanh ra ba, giai oan nay co muc
ich la thu lng ng con lai trong ba. Nc ra 78oC c cp vao ni loc qua
ca s (9) sao cho lp y lp ba.

Sau khi ra ba xong ta cho xi ba tp trung ba va bm v thung cha ba qua
ca s (5). Sau o tin hanh v sinh thung loc bng h thng ng ng dn nc
v sinh (8) va tin hanh loc me tip theo va chuyn dich loc sang ni huoblon hoa.

4.Qua trinh houblon hoa
4.1. Muc ich
y la qua trinh trch ly cht ng, tinh du thm, polyphenol, cc hp cht cha
nit v cc thnh phn khc ca hoa houblon vo dch ng bin i n thnh
dch ng c v ng v hng thm du ca hoa. S ho tan cc cht ng trong
hoa houblon lm thay i mi v ca dch ng

Dich ng c cp theo ng ng s (5) vao cac chum cua b trao i nhit (8)
hi nong c cp vao theo ng s (6) i vao vung khng gian, gia cac ng xay ra
qua trinh trao i nhit vi ng. Qua trinh cp nhit va nng nhit ni lin tuc
sao cho dich ng cui cung vao ni huoblon thi nhit trong ni va si. Luc
nay cho hoa vao, hoa houblon c nap vao di dang la cao hoa va hoa vin, khi
o nhit trong ni phai at c khoang 90oC, thi gian un dich ng vi hoa
khoang 1h.Dich sau khi a huoblon hoa c thao ra ngoai qua ng ng s (5)
Sau khi qu trnh un si v houblon ho kt thc dich ng a qua b phn lm
lnh nhanh, ha nhit xung n mc cn thit ph hp vi nhit ln men

Dich ng sau khi huoblon hoa c bm vao thit bi lng qua ca s (6) khi
o hn hp dung dich nay bi xoay tron di tac dung cua lc hng tm. Nh o
cn bi hut vao tm thung va lng xung ay. Dich nha sau khi lng se c thoat ra
qua ca s (3), phn di vn tip tuc lng va dich con lai c a ra ngoai qua
ca s (4) va cn se c ly ra qua ca s (5), ng ng s (7) a nc vao
v sinh cui cung la ca s (8) cng nhn vao trong cao cac cn hoa con bam
ra khoi thit bi.
6. Lam lanh va lng trong dich ln men
6.1. Lm lnh
Sau khi un si cn ha nhit dich n nhit thich hp cho qua trinh ln men
va bao hoa oxy cho dich ln men cung nh kt tua cac huyn phu.

Trong qua trinh lam lanh dich ng lun hp thu oxy.Cn thit phai thng khi
cho dich ng nm men phat trin sinh khi va tao iu kin thun li cho qua
trinh ln men v sau.
- S tao thanh va tach kt tua
Huyn phu va kt tua se lam uc bia thanh phm. Trong dich ln men tn tai hai
loai huyn phu: huyn phu th va huyn phu manh. Vi vy chung se c loai bo
qua ba hoa va mt phn kt tua khi lam lanh.
- S bay hi nc
Trong qua trinh ha nhit ln men co mt lng nc nht inh bi bc hi. Vi vy
th tich dich ln men giam va nng dich ln men tng. Mc tng giam nay
phu thuc vao phng phap va thit bi.

Dch ng c nhit 90-950C c bm vo ng dn di, cn nc lm
lnh 20C c bm vo ng dn pha trn. Dch ng nng v nc lnh i
ngc chiu nhau. Dch ng nng c h nhit xung 9-10 0C, v a ra
ngoi theo ng dn pha trn, cn nc nng ra khi my theo ng dn pha
di.
6.2. Lng trong dch ln men
Dch ng sau khi lm lnh cha v s ht c kch thc khc nhau. Nhng ht
c kch thc b s kt lng nhit thp. Kt ta thu c nhit 600C ca
dch ng gi l cn th,kt ta thu c khi dch ng h nhit n nhit
n nhit ln men (8-100C) gi l cn mn.

7. Ln men bia
- Ln men chnh: Dch ln men sau khi lm lnh c chuyn vo thng ln
men. Dch men ging c chuyn vo thng ln men theo lung dch ng. Nhit
ln men chnh l 8-100C, CO2 sinh ra trong qu trnh ln men s ha tan vo bia
non mt phn. ho tan ca CO2 vo bia non s tng khi nhit gim.Thi gian
ln men chnh ph thuc vo nng dch ln men u tin v nhit ln men.
- Ln men ph: c tin hnh trong thng kn t trong phng lnh t
120C.Nhit ln men ph khong 0,520C, p sut 0,30.7 at. Bia non c
chuyn vo t y thit b nhm gim s to bt v gim mt mt CO2.u tin c
th cho bia chy nhanh nhng v sau do c s to bt nn cho bia chy chm. Khi
bia cha y thng th ng van iu chnh p sut, tin hnh thi khng kh trn b
mt bia v nng p sut t theo yu cu . y s dng phng php ln men dch
ng c nng cao nn qu trnh ln men chnh v ph c thc hin trong
cng mt b cha

7.2. Nguyn tc hot ng


Dch ng sau khi c sc O2 c a t di ln qua ng (1).Sau dch
ng vo cho y b cha.Tc nhn lnh l glycol c a vo hai khoan qua h
thng ng ng (2),(3). Sau khi trao i nhit glycol ra ngoi theo ng ng (9).
CO2 sinh ra trong qu trnh ln men c kim tra v thu hi qua h thng ng
ng (4) .Sau tin hnh tho men qua ca (1) v nu hm lng cc cht t yu
cu th ci nhit trong b cha l -10C nhit ca bia non gim dn.Sau khi
h lnh bia non c a ra ngoi qua cng ng ng (1) v tin hnh lm v sinh
b cha bng h thng (8),(4) chun b cho m tip theo.
8. Qu trnh lc
Bia non sau khi c phi trn c bm vo thit b lc th dng a tch
cn.Qu trnh lc xy ra nh s chnh lch p sut thy tnh ca dch lp trn v
lp di b mt lc,v lc ly tm do tc dng quay ca h thng a lc. tng
kh nng lc ngi ta dng bt tr lc hyflo di v lp STD c kch thc nh
hn trn to lp lc trn b mt a lc

My ra chai gm c 4 vng
- Vng 1 (vng nc ngm): Vng ny gm 2 b ngm s b 4 v 5 cha nc
400C.Chai bn c bng ti chuyn v my v gn cc chai trn bng chuyn xch
chuyn ng vo vng ny ngm
- Vng 2 (vng phun cht ty ra): Vng ny cha cht ty ra l NaOH nhit
700C. H thng vi phun ha cht c chia lm 2 phn:
+ Phn phun t di ln trn
+ Phn phun t trn xung di.
-Vng 3 (vng ra li): Vng ny ch cha nc lm sch cc tp cht,
cu to gm ng phun c nh v ng xoay
- Vng 4 (vng ra cui): s dng nc cng ngh ra sch ha cht cn st li
trong chai.

Qu trnh chit bia thc hin theo nguyn tc ng p, gm 4 giai on:
- Giai on 1: Ht chn khng ui khng kh.
- Giai on 2:Np CO2 v chit bia, p lc 3 bar.
- Giai on 3: X CO2.
- Giai on 4: trc khi chai c ng np s phun nc vo chai nhm to bt
y khng kh, khi bt va tro ln l lc ng np xung.

Thit b thanh trng gm 8 khoang, cc khoang c nhit tng dn. Trong thit b
cn c cha cc ng ng:
+ ng nc nng b lng nc bay hi.
+ ng hi cp hi, tng nhit cc vng trong thit b
+ ng nc ngng thu hi nc ngng trong qu trnh thanh trng.
9.3.2. Nguyn tc hot ng
- Bia chai c bng ti vn chuyn vo thit b thanh trng. Ti y bia ln lt
qua cc vng nhit tng dn . n vng thanh trng th bia c nng ln 680C
ri h xung 640C. Sau khi thanh trng bia c h dn nhit xung 52 0C, 40
o
C, 280C. Ti vng h nhit ny b mt chai c thi sch nc trc khi c
chuyn n my dn nhn.
IV. KT LUN
Bia l loi nc ung b dng cho c th, trong nhng nm gn y do nn
kinh t tng bc i ln. Do , Vit Nam trong nhng nm gn y nhu cu v
bia tng nhanh c v s lng v cht lng. Vic nng cao sn lng cc nh
my sn xut bia l rt cn thit nhng vn v vn u t th gp nhiu kh khn.
Mc khc, do thi im, thi tit gia cc ma ca nc ta mc tiu th bia gia
cc ma khng cn i. Thc t cho thy nhiu nh my bia b qu cng sut
trong ma h, khng p ng nhu cu ca ngi tiu dng m ma ng li tiu
th chm. V vy, cn phi c nhng bin php thay i trong qu trnh thc hin
nhm p ng nhu cu ngy cng cao ca x hi. Th nhng, nhn t cng gp
phn quan trng lm nh hng n cht lng cng nh s lng bia khng ai
khc l qu trnh ln men bia.
Vi cc phng php c tm hiu trn c th gip cho cc nh sn xut gii
quyt vn p ng tt v s lng bia trong ma h.
ti ny nhm gp phn tm hiu chung v vn cng ngh ln men bia v
ng dng ca phng php ln men bia.Sau thi gian chun b mc d bn thn
tng ngi trong nhm thc hin c gng hon thnh. Th nhng, khng th
trnh khi nhng sai st .Nhm em rt mong s gp kin ca thy v cc bn.
