I know a lot of people that are financially savvy, as in they know where their money is invested, know the risk levels in their portfolio as a whole, and are aware of where other opportunities exist for the tolerance levels meeting their lifestyle. Imagine this:
Your good friend is a chef and shes invited you over for Thanksgiving dinner. Youve got your side dish and bottle of wine at the ready, but the minute you arrive, youre asked to roll up your sleeves and join the other guests in making potstickers. Intimidating? Not if your friend is Anne Conness, executive chef and partner at Tin Roof Bistro and Simmzys in Manhattan Beach. Chef Conness recently dished with South Bay Digs about beer for dessert and what chefs really do after a long, hard day at work.

South Bay Digs: You majored in English literature, spent time as a TV producer, and now youre a chef. When did you realize that food was your passion? Anne Conness: It took me a long time to figure out what I wanted to do. I kept trying different things and I found out cooking was really it for me. As far as connecting with food, it happened when I was a student at Georgetown. A friend of mine invited me to dinner at Jean Louis at the Watergate. I had never tasted anything like it in my life! I loved everything about it, from the servers in their tuxedos to the multiple courses, and the food itself. It was amazing. SBD: These days it seems everyone is a cook. What are some of the most common mistakes home cooks make? AC: Id say not being prepared beforehand. The best way to cook is to be organized. [You need] to read the recipe through, figure out all the items you need, prep them and get them ready. Those little diced onions in a cup, the seasonings in different cupsit takes some of the stress out of putting a dish together. And thats what makes all the chefs on TV look so confident. SBD: Do you do much cooking at home? AC: Not as much as Id like. When I get home Im tired of the smell of food, really, and from being hot. I usually order out. Most chefs that I know work 12- to 15-hour days. At the end of the day were tired, were driving home, and what do we do? We go to the drive-thru! SBD: How was it that you decided to bring SBD: We wont tell. So when you have company, what dishes do you like to prepare? AC: Thanksgiving is our favorite holiday and we love cooking at the house. The dish I make every year is a sweet potato gratin with pecans and carmelized onions. Weve come to associate it with family and fun, and it has all these amazing flavors. SBD: What advice do you have for home cooks? AC: Delegate. A lot of times we want to take it all on. I find that people enjoy [a dinner party] more when they get involved and participate [in the cooking]. One year I invited my pastry chef and his partner and a few professional chefs over for Thanksgiving with some other guests. At the last minute I decided to [have] everyone make potstickers for appetizers. It was fun. We had the TV on and we were watching football and making Chinese potstickers, and people were laughing at their mistakes. We ended up with some great appetizers! wine country cuisine to Manhattan Beach? AC: Mike Simms, the restaurant owner, was general manager at Tra Vigne in Napa Valley. When he came back to Southern California, he wanted to re-create the Napa experience and bring down these wines that are little gems and hard to find. He partnered with me and asked me to do a Napastyle menu for Tin Roof Bistro, but with a little more comfort food that is amenable to wine. SBD: So that explains the Wine Locker. AC: Yes, and it is so cool! Wine Locker members will get really off-the-radar wines. You may get a Napa Cabernet youve never heard of, or a Tokaji from Hungary. It helps you learn so much about wine. Our Wine Locker members will come to Tin Roof once or twice a week, go into the wine room, look inside their wine locker and go, Hmm, Ill try this one. Its like Christmas every month! SBD: How do you pair beer with food? AC: Ive become so geeked out on beer that I got my Cicerone certificationits like a sommelier for beer. As a chef, its so liberating to do beer and food parings because theyre so much more forgiving. Especially for dessert! Beer and dessert is an unbelievable combo, and a couple of years ago I would have thought, No way. You can pair heavier stouts with desserts that have caramel and vanilla flavors. The bubbles cleanse the palate, which super-elevates the experience. SBD: Some people live by strict food and wine pairing rules, while others are more relaxed about it. What side of the fence are you on? AC: I tend to be more traditional. Wine can really ruin a dish or make it taste so much better than you actually cook it. Im always hoping people have the latter experience so theyll think that Im a better chef than I am! In recent years, Ive gravitated more toward beer and food pairings.

CHEF ANNE DESCRIBES HER RECIPE FOR BARRAMUNDI IN PARCHMENT PAPER AS OLD-SCHOOL AND FUN. ITS PERFECT FOR A DINNER PARTY BECAUSE ALL OF THE PREP IS DONE IN ADVANCE, SHE SAYS, AND THERES A BIT OF SHOWMANSHIP REPLETE WITH OOHS AND AHS AS YOU OPEN THE PARCHMENT
INGREDIENTS
1 pound roasted fingerling potatoes 2 tablespoons extra virgin olive oil 3/4 pound baby carrots, peeled 1/2 pound pearl onions, peeled 4 6-ounce filets of barramundi (or other flaky white fish) 4 sprigs thyme 4 sprigs tarragon 1 lemon sliced into 8 thin wheels 4 tablespoons extra virgin olive oil 8 tablespoons white wine Salt and pepper to taste
Method
1 In a bowl, toss the fingerling potatoes with 2 tablespoons of extra virgin olive oil. Season with some salt and pepper. Put on sheet pan and roast for 20 minutes in preheated oven at 400 degrees. Allow the potatoes to cool completely. 2 Blanche the carrots and onions in boiling, salted water for 2 minutes, then plunge the veggies into an ice bath. Once they are cold, remove from ice bath and drain. 3 Cut 4 pieces of parchment paper, approximately 15 by 15. Lay out flat on countertop to begin building the 4 packets. 4 Divide the fingerling potatoes into 4 parts and lay them down side by side on the paper, a little off center. 5 Season the fish with salt and pepper and put on top of fingerlings. 6 Top fish with 4 equal parts of carrots, onions, herb sprigs and lemon wheels. Drizzle 4 tablespoons olive oil and white wine over top. Sprinkle with salt and pepper. 7 Fold paper over the fish, trying to match the ends into a triangle shape. Starting on one side of the triangle, crimp the edges by folding them in towards the fish a bit at a time until you have made a half-moon shape. Keep paper packs upright and handle gently, so the veggies stay on top. You can refrigerate the packets overnight if you prepare them a day in advance, otherwise, skip to Step 8. 8 When ready to cook, place packets on sheet tray and bake for 15 minutes in preheated oven at 350 degrees. Put the packets on plates; and with a pair of scissors cut open the parchment paper. Be careful of escaping steam. Pull back the cut flap and voil, its time to eat!

The lake was named for Antonio Machado, who had married the widow of Jose Dolores Sepulveda (who first laid claim to Rancho de los Palos Verdes in a dispute with the Dominquez family over rights over part of Rancho San Pedro in the early 1800s) shortly after Jose died in 1824. Historians suspect that the subsequent union of Machado and Sepulvedas widow came about so she would have a husband to protect the Sepulveda familys claim to the land and the lake, which later bore Machados name. Machado lived where the golf course sits today. Juan Capistrano Sepulveda, stepson of Antonio Machado and one of two sons of Jose Dolores Sepulveda, built his adobe home near the intersection known as Five Points in San Pedro, which is the convergence of the following five streets: Palos Verdes Drive North, Gaffey Street, Anaheim Street, Vermont Avenue and Normandie Avenue. The casa was located on the bluff on the northwest side of this intersection, possibly the site of the trailer park, and the casa overlooked Machado Lake. The lake is generally considered to have been an oxbow, or bend in a river, from the L.A. Rivers location at some point in the past. It was tidal at some point as well. Many effects are still present, such as beach sand and many sea shells in some areas. Going back to the earliest of known times, it was a center of Native American habitization locally, with several villages around it over the years. The water at Machado Lake was so clean that it used to be called Sweet Water. When the Spaniards invaded from Mexico and enslaved the Native Americans, it remained at the center of activity, with trading posts (the Casa de Sangre at 5-points), etc. around it. The riparian willow forest around the lake was named Canada de los Palos Verdes in the mid-1600s by the explorer Sebastian Vizcaino. The site was known as Bixby Slough for some time when owned by the Bixby family of Long Beach in the late 1800s (a sign on PCH at the Wilmington Drain still calls it such). For many years, Lake Machado and the aquifer surrounding the lake was the primary source of drinking water for the Palos Verdes Peninsula once development began in the early 1920s. The city of L.A. purchased the lake in the 1950s to preserve it as open space in the big city. It was officially developed into a park in the very late 1960s. That was when the lawns and facilities were put in on the west side of the lake along Vermont Avenue.

Darren Pujalet, an agent at Shorewood Realtors, has a background as unique and out-of-the-box as his approach to real estate in the South Bay. A musician, he spent a decade working in the music industry before deciding that he was exhausted from touring and going on the road and decided to follow in his sisters footsteps. My sisters a broker down in San Diego and Id been studying real estate development and highest and best use of the property for a long time, he explains about his decision to become a real estate agent. Real estate is, of course, dramatically different than working as a musician, but Pujalet appreciates the control an agent has over their career. What you put into it is what you get out of it, whereas music is a day to day, based on a lot of other people. I knew that if I just got in and rolled up my sleeves and really absorbed it, and was passionate about it, I would be successful. Pujalet specializes in the beach cities, mainly, of Manhattan Beach, Hermosa Beach, and Redondo Beach, but does work on the Palos Verdes Peninsula as well. Hes sold property in Hollywood, Orange County, and San Diego, but considers himself an expert on the beach cities. His take on the current, immediate state of real estate in the beach cities is detailed. Everyone knows about the inventory and that its very tight right now, he expounds, and most people know that interest rates are fluctuating and have seen a slight increase. Theres myriad different reasons why they fluctuate; they cant stay this low forever. However, we did see a bump in late July/early August, a raise in rates, and then we saw a fluctuation recently when there was an uprising in Syria and there was talk about potential war. That always tends to shuffle money into bonds and thats what supports interest rates being lower. So, were going to see a large fluctuation in interest rates and inventory I dont know if its going to increase, I would have thought it would have increased by now and there are definitely more buyers out there than homes for sale. The fact that there are more buyers than sellers is creating the frenzy with multiple offers, coupled with the fact that people think that interest rates are going to go up. And the South Bay is always a desirable place to live. Its the last place to be affected in a downturn and the first place to recover. Just about every listing hes had this year has come and gone fairly quickly due to the state of the market. If it is priced well, it goes really fast, he clarifies. Why sell in the beach cities? Well, he says, People overuse, but cant overuse, that when you buy a home here, youre buying a lifestyle. You have access to the beach, you have amazing weather compared to the rest of the country, you have higher-end clientele here, and you have access to a large metropolitan city and a lot of cultural events. Its a great place to live. People come here from all over the world and have kept it a desirable place to live.

For as long as Terry Tomsha can remember, hes been creating things. Trying to make a table out of his brothers old crib when he was just seven years old, Tomsha has moved on to sleeker designs and higher quality materials as an adult. So, when he needed a side table for his bedroom, it made sense to create one. That turned into the EEK! Table, which is sold through his furniture design company Atomic Jellyfish in Denver. The table, with its mid-century modern design, is made of walnut veneered medium density fiberboard, while the legs and dowels are made of beech wood. I like diverse materials and really like playing with different objects, Tomsha said. I wanted to figure out the best way to use the material and have only a minimum amount of waste. Customers can choose from seven different shapes and colors to create the table, which costs $395. Yet, Tomasha said a customer can use any other colors outside of the seven for an additional $40. I dont use straight lines, I find them boring. I wanted to challenge myself and present something new. While Tomsha originally created the EEK! Table for the bedside, it can easily be used as an end table, home office table or in a business setting. Its footprint is no larger than 28 in. by 28 in. and it stands 25 in. tall. While the table is shipped disassembled, all thats needed to assemble it is a few minutes and a Phillips screwdriver. The tables are just fun and add a splash of color to any room, Tomsha said. While it may be a simplistic design, the details and lines make it unique.

Walk into Harmony Works in the Riviera Village and its hard not to notice all of the thought that has been put into the decor, displays and most importantly, what items the store carries. Opening their shop over 19 years ago, it has been the goal of owners Royce and Mike Morales to have meaningful creations for your soul. It is critical for a place like this to be in the village, Royce said. We have lost so many stores like this in the South Bay. We need to have diversity of shops in every community and I think we help with that in the village. While Harmony Works has been in a few different locations throughout the Riviera Village, it moved into its new home at 1911 S. Catalina Avenue in August. That fresh start has included plenty of renovations to the space, along with some fun artwork on the outside of the building. The Morales decided to commission local artist Gina Steiglitz to paint a colorful tree of life on the outside of the building, which is full of birds, dolphins and flowers. Having Gina out there has brought an attention to the shop, Royce said. People who drive through the village want to check and see how the painting is going. People love the color and are appreciative that we are doing something with the wall.
