Cc k thut thay th quy djnh trong tiu chun ny hoc TCVN 7871-2:2008 (SO 21415-
2:2006) d tch gluten ut (ngha l phuong php ra th cng v ra co hoc) thung khng

Tiu chun ny quy djnh phuong php ra th cng d xc djnh hm luong gluten ut ca bt
m (>riticum ae:tivum L. v >riticum durum Desf.). Phuong php ny c th p dung truc tip
cho bt m. Phuong php ny cng c th p dung cho li hat la m dang tm v hat la m sau
khi xay, nu su phn b c hat dp ng duoc cc yu cu nu trong Bng B.1.

S liu nu trong Bng B.1 duoc s dung d diu chnh dung cu nghin. Vic nghin phu thuc
vo loai php xc djnh. mjn ca bt phi duoc kim tra thung xuyn bng ry.
Phuong php nghin d chun bj mu nghin t hat la m hoc li hat dang tm c nh hung
dn kt qu xc djnh gluten. Cc loai dung cu nghin khc nhau, tao ra cc phn mu nghin
khc nhau vi cc thnh phn khc nhau, diu ny dn dn su hnh thnh gluten trong khi bt
nho v ra gluten cng khc nhau. thu duoc cc kt qu tuong duong cn s dung cng
mt phuong php chun bj mu. Ghi lai chi tit ca qu trnh nghin cng vi phn trm gluten
thu duoc.
Mu dai din ca hat la m hoc li hat la m dang tm phi duoc nghin dn kch c hat dp
ng duoc cc yu cu nu trong Bng B.1. Cho hat la m hoc li hat la m dang tm vo my
nghin phi cn thn d trnh qu nhit v qu ti. Thi gian nghin phi duoc tip tuc trong
khong t 30 s dn 40 s sau khi mu cui cng d duoc dua vo my nghin. Cc luong nh

Mt php th lin phng th nghim bao gm 21 phng th nghim ca 7 quc gia, do Cng
ty CONCORDA arehouse, Phng th nghim kim tra hat ng cc, Budapest (Hungari) (Grain
Control Laboratory) t chc nm 2004. Php th ny duoc thuc hin trn su mu sau dy:
- Mu A: hat la m (>riticum ae:tivum L.);
- Mu B: hat la m (>riticum ae:tivum L.);
- Mu C: hat la m (>riticum durum Desf.);
- Mu D: li hat la m cng dang tm;
- Mu E: bt m;
- Mu F: bt m.
Cc kt qu thu duoc d duoc phn tch thng k theo TCVN 610-1 (SO 5725-1) v TCVN
610-2 (SO 5725-2) d cho cc s liu v d chum nu trong Bng C.1.
