Rice with Vegetable Curry and Daal

Part 1- Vegetable Curry

Vegetables needed
1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 11. 12. Potatoes 2 nos. Half size of cauliflower One carrot Half size of red paprika Half size of yellow paprika One small sized onion Tomatoes 4 nos, medium sized and fully riped. One hand full of cashew nuts One hand full of green erter. One thumb sized ginger piece 5 butts of garlic One green chilli

Spices needed
1. 2. 3. 4. 5. 6. One tea spoon of turmeric powder One tea spoon of garam masala powder 1/4 tea spoon of red chilli powder 2 green cardamom 4 cloves 4-5 black pepper

Step 1. Cut the onion, ginger, garlic, green chilli and tomato into small pieces. Cut the potatoes, cauliflower, paprika and carrots into medium sized pieces as shown in the above picture.

Step 2. Cook the potatoes and carrots in a vessel by adding about a tea spoon of salt. Dont over cook the potatoes!!

Step 3. Once the potato/carrot is cooked, remove the water and keep them in a separate bowl.

Step 4. Now cook the cauliflower and the paprika in the vessel by adding about a tea spoon of salt. Dont over cook it!!. Once it is cooked, remove the water and keep it aside.

Step 5. Put a vessel on the heater, add two table spoon of cooking oil and heat it.

Step 6. Add the onion into the vessel, add one tea spoon salt and cook it welluntil the onion gets a slight brown colour.

Step 7. When the onion is slightly brown in colour, add the chopped garlic, ginger and green chilli into it and cook it well for about 5-6 minutes.

Step 8. Then add the chopped tomatoes/cashew nuts and mix the whole mixture well. Then cover it with a lid on the vessel and let it cook for about 10-12 minutes until the whole tomato is cooked well. Once in every 4-5 minutes open the lid and mix the whole thing well so that the mixture wont stick at the bottom of the vessel.

Step 9. When the tomato is cooked well , remove the vessel from the heat. Using a hand mixer, grind the whole mixture very well into a thick paste. You can add a bit of water, if it makes the grinding easy. Alternatively, you can grind the whole thing in a mixer/grinder.

Step 10. Put the ground mix back into the heater, add all the spices in it and mix it well.

Step 11. Add red chilli powder. I add normally half a tea spoon. That is not too spicy. May be you can add of a tea spoon. Mix it well.

Step 12. Now add the cooked vegetables(potato, carrots, cauliflower, paprika) and the green erter into the thick gravy that you made and mix it carefully and gently.

Step 13. Add glass of water, if it is too thick. Cover it with a lid. Cook it for about 4-5 minutes in low heat. You can check if the salt is enough or not. Add more salt to your taste. Now the vegetable curry is ready. Garnish it with some fresh coriander leaves.

Part 2- Daal

Things needed. 1. One full glass of daal 2. One tea spoon of turmeric powder 3. One tea spoon of cumin seed 4. One tea spoon of mustard seed 5. One tomato 6. One green chilli 7. of an onion

Step 1. Take one full glass of daal and wash it with water.

Step 2. Take one tomato, of an onion and a green chilli and cut all those three items as shown in the picture below.

Step 3. Take a vessel, add two table spoon of cooking oil and start heating it up.

Step 4. When the oil is hot, add one tea spoon of mustard seed

Step 5. Then cover it with a lid. Within a minute or so you will hear spluttering sound of the seeds inside the vessel.

Step 6. When the spluttering sound almost stops open the lid and add one tea spoon of cumin seed.

Step 7. Then add the tomatoes and all other cut vegetables into the vessel and mix it well. Allow it to cook for about 5 minutes until the tomato is cooked well.

Step 8. Add the daal into it.

Step 9. Add 3 glasses of water and 1 tea spoon of salt and cook it for about 20 minutes. Once it a while mix the whole thing otherwise it may stick at the bottom of the vessel.

Step 10. Add 1 tea spoon of turmeric powder and mix it well and cook it for about 3-4 minutes.

Step 11. Take some fresh coriander leaf, cut it into small and add it into the daal. Check the salt and add more salt if you want. Now the daal is ready.

Rice Normally I buy the India Gate basmati rice. It is a good quality rice. I recommend it.

Take 1 glass of rice in a vessel, add 4 glasses of water and cook it for about 20 minutes. When the rice is cooked, remove the water and keep it for about 5 minutes before you eat. Now you have the rice, vegetable curry and daal. I normally cut some slices of cucumber also to eat with these as you see it in the first picture. Bon Apptit
