At Gusto Magazine, we have gone from an 8 page black and white newsletter to a 32 page full colour magazine. We have met so many amazing writers, health experts and outstanding community members! Our Gusto team also grew exponentially, from new contributors to a new production assistant Lauren Olson. Together we have redefined Gustos style, tone and our mandate. Not only is Gusto a wellness publication, but a place for conversation, community and sharing! 2014 is going to be an amazing year - full of abundance, change and transformation. Throughout January, we begin to see physical changes as they manifest in our daily lives. The days lengthen, slowly at first and almost imperceptibly as the new season begins. We prepare to weather the cold our northern winter. Yet, even as the lights of our celebrations begin to dim, we take into our homes and our selves the light that has returned. For now, this is a time to nurture ourselves. It is not a time to plan or scheme in detail, or even to put structure to our dreams. Take three deep breaths, feel your body relax with each gently exhaled breath. Imagine a column of white light surrounding and protecting you as you journey inward toward your heart. Once within your heart, you imagine a door opening Beyond is a dark void, yet there is no fear. Instead you feel a growing sense of excitement and anticipation. Your spirit longs to soar, you can feel a mighty change coming and for this you are willing to wait. Then, in the far distance, the darkness changes! A small, tiny point of light appears, a singular bright point that calls to your spirit and your heart. It shimmers and your breath catches as the beauty and purity of it calls you forward. You approach slowly to see the light is held gently in an open hand, and its light illuminates the face of your guide, the one who walks with you through this life with you. In their hand the light seems such a tiny delicate thing, that you wonder how it manages to stay lit. Your guide smiles and eases your concerns as you tentatively reach out toward this spark of light. Your guide gently places the spark of light into your palm and you marvel that this tiny spark contains enough light to carry you through any experience you will encounter. The spark is warm in your hand and the glow is comforting. You raise the spark of light to your heart and feel it enter in. Its loving light and warmth begin to spread throughout you. It chases away the winters chill and it warms you to your core. This energy and light will continue to grow as you take the time to celebrate it. Return knowing that the spark of light within your heart will grow and it will become the light that shines to ignite your spirit, and your life.

MIND

While I thought I would be able to pen my thoughts in record speed on sustainable child care, I found myself being constantly distracted by my lovely (albeit, very vocal) eight year old daughter. Dont get me wrong, she is my life line, my pumpkin patch, my You get my drift. For those with a single-child family, you can appreciate that to an only child we are parent, playmate, dolly (or action hero),you name it! As parents, we wear many hats for our children, all the while barely keeping afloat, and sleep deprived to boot! So what does sustainability have to do with child care? Does the term sustainable not relate to the environment; a tree, or something like that? Lets consider the Merriam Webster dictionary definition of the term sustainable: Able to last or continue for a long time. Perhaps you are wondering whether it is even necessary for child care to be sustainable, but for me the simple answer is an unequivocal yes!

Why? Because, as parents we often find ourselves stressed out, running from work to day care, drop-offs and pickups, to activities and play dates, and then back home to carry on with a plethora of tasks before being worthy enough to put our head to pillow, fall deeply into a dreamy sleep and then wake to repeat the same routine.

BALANCING: WORK + LIFE + ADD


Ive never been diagnosed but if you look through my history you may come to the conclusion I have ADD. Im pretty sure ADD is one of those sliding scale things; some people kinda vibrate constantly, while others just get a bit distracted by the birdies out the window in the school yard. I have many titles. I am an RMT, a business owner, a writer, a dancer, a dance teacher, a knitter, a sewer, a crocheter, an upcycler of bike tubes and the owner of 3 cats, a cyclist, a hiker-ist and a hugger of trees. And I get bored of the same thing day in day out. Just cant do it. Even now, looking at all of that above, the complexity of running my massage practice is losing some of its luster and I am hungering, once again, for a change. So Im adding a second business. Did I mention I also have a social life? In this state, I have found the most restful things I can do are simple body movements. Dancing, light yoga, bike riding and hiking are my go-to brain and spirit boosting activities. These activities get me close to nature whether that is the nature outside myself or the nature within myself. By moving my body my mental and spiritual activities get to be put on pause for a moment and align with my body. The thinking and analysing parts of me turn off for a bit and I enter a state of open presence and reception of the gifts within my flesh and in the flesh of the Earth. Hot baths, watching TV or movies, snuggling cats, knitting, reading and conversing with friends are great ways to let my body rest and regenerate its energy. Oh and eating. Lots of eating.

THE TRUTH IS SIMPLY THIS: THAT WHILE WE LOVE OUR FAMILIES, LETS KEEP IT REAL! BAD ROUTINES ARE SURE TO LEAD US DOWN A PATH OF ANXIETY, SLEEPLESS NIGHTS (IF WE HAVE NEWBORNS OR TODDLERS), LESS QUALITY FAMILY TIME AND ULTIMATELY BURN OUT (AT LEAST IF WE DONT FIGURE OUT WHAT WORKS FOR US AS INDIVIDUALS).

So, what would be a sustainable approach? And, what does sustainable child care feel like? Sustainable child care is one which truly reflects a familys values and needs (whatever they may be) and will leave us with a sigh of relief coupled with a feeling of tranquillity. In many ways, sustainable child care is akin to true love. We can never know what form it will come in, or how we will feel when presented with it, but we will be damned if we can live without it once we have been gifted with it. Things to try in your own life could include cutting out one commitment a week, or setting up a carpool system with other parents.

CALL ME CRAZY. SERIOUSLY. ITS CRAZY.

WHEN MY BODY IS EXHAUSTED, WELL ITS PRETTY OBVIOUS WHAT THAT FEELS LIKE; LETHARGY, SORENESS AND HEAVINESS. THESE ARE SIGNALS FROM MY BODY TELLING ME ITS TIME TO SLOW DOWN, WEAR COMFY CLOTHES AND RECLINE FOR A TIME.

And you know what? Im still learning how to balance all this! I totally overwhelm myself. And go figure, Im a bit high strung. I am an RMT who needs to take pages out of her own book and TAKE A BREAK and REST. But then, how long should one break for? And what constitutes rest? I would posit that it depends on what you are needing to break away from and what you need to rest. I thrive on having a very busy and active lifestyle but I also get completely bogged down with my levels of activity. There are days when I come home from a long day of treating everyone elses bodies and the left leg says lets go bike riding for the next 4 hours!! And my right leg says if you suggest another bike ride Im kicking you in the knee. And on the flip side, some days after being home, cooped up, doing house work or writing or planning (which is also writing) or knitting or sewing and so on, my whole body screams in a unanimous voice I must go outside or I will explode! Clean that up, lady! There is rest for the mind, rest for the spirit and rest for the body. Differentiating between these activities has been helpful to me in allowing my whole self to fully recharge. A big part of that is identifying where I am feeling tired. Mental exhaustion vs physical exhaustion can feel very different. For me, mental exhaustion usually feels like a mild depression, or can even feel a bit like anger. My body feels pensive, Im cranky and have a hard time making decisions.

Through paying attention to how we express our needs, we learn a lot about how we need to balance our activities. Some activities will exhaust us mentally, others spiritually and others physically. And some maybe the best ones exhaust us in all three. At the same time, certain activities will boost us up in each of these departments, at different rates, at different times and sometimes can also boost all of these energy levels at once. At the end of the day, the Work + Life = Balance equation is going to be pretty different from person to person and in actual fact is more like living in a state of flux. Energy will go up, and it will come down. The first step to figuring out how to ride these waves of flux is to listen to your Self as it expresses your needs. At first, you may find your Self hard to understand. Self doesnt speak quite the same way we do. Communication happens through feelings, both physical and emotional. Developing a loving dialogue with Self and practicing listening to Self will give you surprising answers to what you actually need. I suppose the next step is letting go of the shoulds. But perhaps that is for another day as I hear a pile of kitties softly purring my name and the clickety clack of knitting needles awaiting my attention

Once of the best ways to teach kids to be responsible stewards of the planet is to expose them to all nature has to offer. Because of busy schedules, safety concerns, and changing demographics, most children cant wander around forests and meadows the way they did a generation or two ago. It may require advance planning, but let kids get a chance to hike on a trail, skip stones in a creek, or hunt for bugs and worms.

LIGHTEN YOUR LAUNDRY LOAD.

Even though having kids increases laundry loads exponentially, do your best to limit the washing. Budding fashion designers (or super heroes in training) may go through multiple outfits in a single day. Remind kids that they need not throw a shirt in the laundry hamper, if theyve only worn it for 30 minutes.

STOP POWER VAMPIRES.

As kids grow, they start trading baby gear for electronic equipment. Unplugging TVs, DVD players, computers, cell phone chargers, iPod docking stations and video game systems when theyre not in use could keep thousands of pounds of carbon dioxide out of the air annually and save you money on your power bill. Socalled vampire appliances suck power even when theyre off because of their standby mode.

Sometimes your overall healthy living plan includes toning up, losing weight or building muscle. Why havent you reached your goal yet? Its not like you started your fitness journey yesterday. This has been a goal that youve been working towards for years. Listen really closely to all the reasons that are popping into your mind right now as you try to explain your setbacks. Grab a pen and paper and jot them down. All of the reasons you're giving for failing to reach your goal are really very clever excuses. So clever, that you convinced yourself that they were legit. That's right. You're not at your ideal weight or activity level at this moment because you've given in to excuses. I can understand your frustration, because those excuses that you cling to tend to be very convincing. Now, it's time to push your frustration aside and to really focus in on your goal. If you lose focus on your goal for even a

second, excuses will take over, leaving you without progress and without the sweet satisfaction of accomplishment. The first thing you need to do is make a plan. There's huge benefit to having a stepby-step plan when working toward a goal. Write out exactly how many times you'll exercise per week, What kind of excercise are you committing to, and in what order? For how long each time? Make a list of acceptable foods that fit with your health goals. This plan will be your follow-alongguide to arrive at your goal, whatever it may be, so put a lot of thought into it. Your next insurance against excuses is to enlist as much accountability as possible. Try to find people who will actively check up on you (like a trainer) rather than people who aren't likely to follow up on your progress. Share your detailed plan with these accountability partners and explain the importance that your goal has for you.

ethical implications of the aforementioned marketing. some people, like my friend, may be afraid that an individual who is not vaccinated may pose a threat to themselves or someone they care about. should fear in others (irrational or otherwise) be enough of a motivator for me to switch camps and get the flu vaccine after all? Who should we believe? The provaccination camp, whose research is in large part funded by pharmaceutical companies? The anti-vaccination camp, or (as my friend called them) the quacks? Both seem pretty reasonable, but neither seem fully convincing to me. Though, if we had to follow the money, it would appear the former may have a greater interest in pushing a vaccine status quo by feeding the fear-mongering media machine. In the midst of this (partly ideological) divergence between camps, we are left to act with our gut, decide what best fits our mental framework or schema, and go with it. After all, the confidence people have in their beliefs is not a measure of the evidence but of the coherence of the story that the mind has managed to construct. [Daniel Kahneman] so, what to do when youre confronted with someone whose opinion in any one subject is so diametrically opposed to yours, there doesnt seem to be any room for dialogue? I found myself attempting to make myself understood while trying to empathize with

I certainly wasnt expecting the acrimonious reaction I got from one of my Facebook friends shortly after. (To be fair, the post also garnered quite a few likes.) In my mind, the message was about how factors like a lack of vitamin D, dehydration, stress, and large sugar intakes (corn derived fructose in particular) run havoc on our immune system. It did not advocate advocate against the flu vaccine specifically, nor did it intimate that influenza is not a viral infection. Let me be clear, I am in no way trying to shame my Facebook friend. I respect her right to her own opinion. Im not claiming that there arent people who may have their own valid reasons to choose to be vaccinated. It is a personal choice. The flu is a serious concern for some, but much has been made of the statistical data on actual flu related deaths, and the efficacy of the vaccine. For example, some recent studies have shown that the statistics on the efficacy of the flu vaccine have been, shall we say, massaged to meet a particular agenda. The instance of mortality due to flu in many countries (including Canada) are merely estimated (read: educated guessing) and not actually counted or assessed. In my brief research, I've even found a couple of peer reviewed articles that seem to voice a concern about the aggressive marketing in the area of the flu vaccine, and the

the person whose opinion I didnt share. My lack of success leaves me wondering: Could I have done more? Could I have said less? Should I have not engaged in clarifications of my position and just let it drop? Did I not have as much of a right to my opinion as the person I was discussing this with? Can you respect another opinion whiles speaking up for your own? Where does the balance between empathy and selfeffacement lie? I dont know the answers to these questions, but I know that next time Ill try to avoid letting my ego get the better of me. I will disengage much sooner. While I do respect my friends position, I still remain suspicious of any argument that gains strength from causing fear and panic by playing with statistics that use catastrophe to illustrate ultimate consequences, or use outright anger as an appeal of sorts. A good argument should stand on its own, without depending on emotions or faulty statistics. Im not getting the flu vaccine any time soon. I can neither carry the burden of collective fears, nor buckle under the pressure of a friends indignation. If cause arises, I will let my body do what it does best: adapt. I will be responsible enough to stay home until it passes to avoid launching a cataclysmic epidemic. As for the upcoming zombie apocalypse, I refuse to be blamed for that either. All good things must come to an end, and so does the journey to your ideal health and body. How long should the process take? Well, that's up to your unique situation, specifically how much muscle you want to build, how much fat you have to lose, how much stamina you want to maintain, and how hard you are willing to work to get there. Make sure you set reasonable goals for yourself, ad dont be afraid to set new ones as you achieve your own standards. It is important to find a reasonable timeframe in which to accomplish your goal, and then focus all your energy on meeting this deadline. www.jUsttrAiN.CA

Adult hoops for beginners are larger, heavier, and MUCH easier to use than the small plastic hoops from the 50s. There are multiple ways to hula hoop, spinning the hoop at your waist and pushing from front to back or side to side.

Five years ago, I was just entering college to study Massage Therapy. Id been out of high school for a few years, living on my own, working in retail and was quite frankly, pretty unhappy about the whole thing. My return to college and my eventual career saved me from death by boredom.

Blowing off some steam would ensure I walked into that test room cool as a cucumber. So spinning and dancing and music became my pre-test rituals. It kept me sane, level, ready.

Its a common story these days. A patient comes in who had been on birth control since she was 16. She would like to get pregnant now, but there are no signs of her cycle coming back at all. From the conventional medical point of view you can a) go back on birth control to regulate your cycle or b) go on a combination of meds to simulate your cycle to increase the chances of pregnancy. Going off of birth control leads to the most common cause of female infertility, PCOS. Polycystic Ovarian Syndrome (PCOS) is a syndrome where your ovaries increase in size and are laden with cysts. These cysts develop because youre not ovulating. Basically there are hormones which stimulate a follicle in the ovary to grow and grow to eventually become an egg and then there are other hormones that release that egg from the ovary (ovulation). With PCOS your hormones are developing that follicle but the signal to release the egg is not there so those wannabe eggs dont end up getting ovulated. They just get stored in the ovaries and turn into cysts (which can grow and rupture!). Your hormones are off, because youve been providing your body with hormones so it never had to make them while you were on birth control. Think about how hard it is for your body to just all of the sudden start knowing how to produce, secrete and metabolize a hormone out of nowhere. Another reason is because your liver has to metabolize every hormone you make, every hormone you put into it and basically anything you consume. Since its been metabolizing synthetic estrogen for the past couple years, its going to need some loving too. Other symptoms of PCOS are acne on the face, chest or back, unwanted hair, masculinization, weight gain and thinning hair. PCOS is diagnosed via ultrasound. Its difficult to get pregnant when you have PCOS so some patients either give up hope and go back on birth control, while others fork out thousands for IVF (In Vitro Fertilization), which according to ivf.ca has a 27% live birth rate. Going through the process can be taxing on you physically, mentally, emotionally and financially. Some couples spend over $100k before a successful pregnancy! For those of you not looking to get pregnant and wondering why its important to regulate your cycle you have to take the following factors into account. If you have amenorrhea (no period for >6 months), your uterine lining will get thicker and thicker, predisposing you to uterine cancer. If you have oligomenorrhea (random periods) the predictability is out the window in terms of trying to get pregnant as well as when you can expect to get your period. There are several other factors that contribute to amenorrhea, oligomenorrhea or infertility. Sometimes, it just takes a couple months for your body to restore your cycle naturally. THERE ARE MANY REIKI PRACTITIONERS TO CHOOSE FROM THESE DAYS. HOW DO YOU KNOW WHICH ONE IS SUITABLE FOR YOU?
Reiki is a gentle, safe and effective healing technique that originated in Japan in the early 1900s. Reiki is pronounced RayKey and it means Universal Life Force Energy in Japanese. During a session the Reiki Practitioner acts as a channel to transfer the Universal Life Force Energy to the client. This energy helps to remove blockages within the body, create balance and promotes feelings of well-being. Reiki does conflict with any medical treatments, medications or other modalities such as massage. My clients find it extremely relaxing. It helps them to deal with pain, anxiety, depression and sleep issues.

Here are several things to look for when choosing a Reiki Practitioner. Unfortunately, in Ontario, Reiki is not a regulated profession. What this means is that anyone can say they are a Reiki Practitioner and open a Reiki business regardless of their training or background. Thats why doing your research before choosing a Practitioner is important. The Canadian Reiki Association is an organization that is committed to promoting ethical practices and teaching; encouraging educational standards; and providing the public with referrals to our Registered Practitioners and Registered Teachers. However, membership in the association is not mandatory for Reiki Practitioners to practice. In fact, most Reiki Practitioners and Teachers in Hamilton are not members of the Association.

WORD OF MOUTH
Is one of the best ways to get started. A good reference is important. Ask around to friends and family members, people at your yoga class or on Facebook. Ask them if the Practitioner offered a safe space and professional session. Strongly consider having a Personal Interview with the Reiki Practitioner prior to making an appointment. The Practitioner should answer their phone professionally and have an available answering machine. A good Practitioner will not have a problem with you touring their office or treatment room and asking questions. During the interview use your intuition. Do you feel comfortable with this person? Do they seem to be genuinely interested in your best and highest good? Do they explain their services with confidence? Do they have professional business cards and price list? Do they offer receipts for their service for you to claim on your taxes, insurance or wellness account? Were they on time for your appointment with their room set up and ready to go?

RED FLAGS
The treatment is ALWAYS fully clothed. If any Practitioner asks you to remove your shirt or pants this is inappropriate. The Practitioner touches you near any private part of your body. Or they do the session in complete darkness. The Practitioner breaches confidentiality by mentioning clients names or situations or they say something in bad taste about a client. The Practitioner requests more money than initially agreed upon. They refuse to give you a receipt for service. The Practitioner causes you to feel like you need the service or you will be doomed. No service should be forced upon anyone or anyone made to feel they will not get better without having the service. They offer sessions after 9 pm at night or work out of 24 hour salons (you know the ones). Some Reiki Practitioners have psychic or intuitive abilities. If messages come through they should be given in a supportive and appropriate manner. It is not appropriate for someone to manipulate you using these gifts. Reiki is an extremely beneficial and relaxing treatment. Reiki is now being practiced in Hospitals, hospices and work places. When you work with the right Practitioner it can be a life changing experience. Do your homework and trust your intuition. DOES THE ENVIRONMENT FEEL INVITING AND SAFE?


Reiki Practitioners can work out of various spaces: wellness centres, yoga studios, fitness centres, medical centres, retreat centres and resorts or out of their homes. Is the treatment area quiet? My first Reiki job was at a Martial Arts Studio. The sound of testosterone pumped men pounding the bags was definitely not relaxing or quiet. Lesson learned! Is there a childs playground outside the window? Will people be chatting right outside the door or phones ringing? Guaranteed you will not be able to relax if you do not feel safe. Is the space clean? Is there clutter everywhere? I once visited a Reiki Master who had personal photos of friends and family in her treatment room including diseased individuals. She had all sorts of knick knacks and personal items not related to Reiki or the sessions. That was a little creepy to me and I felt that the space was more about her than me, the client. Do they have their Reiki Certification posted in their office? This is a professional given. In order to be a Reiki Practitioner a Level 2, Level 3 or Reiki Master Certificate it is suggested by The Canadian Reiki Association that you have a Level 2 or more.

AT YOUR FIRST VISIT, THE PRACTITIONER SHOULD:


Ask you to sign a consent form that states you understand the session and that Reiki Practitioners do not diagnose or treat medical conditions and that you should see a Dr. regarding medical concerns (or something to that effect). Explain how Reiki works and what they will be doing during the session. They should ask you if you have any questions. Ask your permission to touch you in appropriate areas (some Practitioners work off the body some work on and off the body) Explain any use of crystals, wands, smudging, aromatherapy or anything other than Reiki. Ensure that you are comfortable before they start the session. After the session they should ask again if you have any questions and explain what to expect and what measures to take after the session. It is nice if they offer you water or tea and they should not rush you to get off the massage table. If at anytime you want to stop the session the Practitioner should understand \ and ask again if you have questions. If you choose to leave the Practitioner should be empathetic and let you know that they are available if you want to talk. A good Practitioner will follow up with you within a few days of your first session to see how you are feeling.

According to CHCH.com, the debate over fluoride is an old one, but is still surfacing across the province because the majority of communities in Ontario add fluoride to their drinking water. Hamilton is one of them, and the debate on fluoride was alive and well at city hall Wednesday. Hamilton City Councillor Brad Clark: Do parents get the right to decide whether their children receive hydrochlorosilic acid in their water? Simon Kiss is with Wilfrid Laurier University: The World Health Organization are of the opinion that this is a safe, cost effective and beneficial way to protect childrens dental health. There was talk of holding a referendum on fluoride, but that idea was turned down. However, Hamilton City Council is considering a committee to look into the issue. Fluoridation of our water is hot issue for parents, doctors and researchers. One side says the appropriate dose of fluoride in our water will prevent cavities and tooth decay while the other side says fluoride can cause serious health problems. The problem some groups have with putting fluoride in our water is that theres no way of monitoring how much of it people drink every day. Public health argues its a safe amount and it helps people who cant afford to go to the dentist. When you drink water from the tap you may not know exactly what youre swallowing. Fluoride is a naturally occurring mineral, that can be processed into fluorosilic acid. For the last 46 years, its been added here at the water treatment plant in Hamilton before it makes its way to your tap. Dan McKinnon is the Director of Hamilton Water: So the target concentration that we look for is point six milligrams per litre is the recommended dose from Health Canada.Alarms will sound off in this control room if something goes wrong with the addition of fluoride to the water. The water treatment plant is designed so that employees here dont have to come in direct contact with fluoride but whenever fluoride and other chemicals are delivered here, delivery men and employees here have to wear this equipment to protect themselves. Thats because people are warned to avoid contact with fluoride, but in the appropriate dose, Hamiltons public health says its good for your dental health. Dr. Ninh Tran is with Hamilton Public Health: We know that less than half of people with low income have dental coverage, no insurance where 80% or more have dental insurance so its one of those things that are safe and effective. Gideon Forman is with physicians for the environment, a group of 6,000 doctors and researchers who say fluoride in our drinking water can cause fluorosis which is damage to the enamel. Forman also says fluoridation of drinking water can cause cancer, neurological, thyroid and embryo concerns: Its uncontrolled, I mean, if youre dosing a whole population theres no way of knowing how much water people are taking so if you had a child for example who had the proclivity to drink lots of water then theyd get significant amounts of it theres just no way to check it. Forman also says the province of Alberta is largely fluoridated. British Columbia is largely not fluoridated and the rates of cavities are the same. Health Canada says it approves fluoride in drinking water and says 25% of Ontario communities have decided to stop putting fluoride in their water. Niagara Region stopped in 1999 and the Region of Waterloo stopped three years ago.

Choose a couple different types of dried herbs for your scented dryer sock. We chose lavender, chamomile and sage..

INGREDIENTS:

STEP 2
Place your dried herbs into a bag (Must be able to tie or button shut).

3/4 CUP HEAVY CREAM 5 OUNCES MILK CHOCOLATE, CHOPPED 5 OUNCES DARK CHOCOLATE, CHOPPED 3 TABLESPOONS OF YOUR FAVOURITE CABERNET SAUVIGNON SPRINKLES OR COCOA POWDER FOR ROLLING

DIRECTIONS:

STEP 3
Pick out a sock to use (an excellent use for those mismatched pairs). For best results, use cotton or other natural fibres.

ADD CHOPPED CHOCOLATE TO A LARGE BOWL. HEAT HEAVY CREAM IN A SAUCEPAN OVER MEDIUM HEAT. THE MINUTE IT STARTS BOILING, REMOVE FROM HEAT AND POUR OVER THE CHOCOLATE. ADD WINE. LET SIT FOR 3 MINUTES, THEN WHISK CONTINUOUSLY UNTIL SMOOTH. PRESS A PIECE OF PLASTIC WRAP OVER TOP OF THE BOWL AND PRESS DOWN SO IT ADHERES TO THE CHOCOLATE. REFRIGERATE FOR AT LEAST TWO HOURS THEN USING A SMALL MELON BALLER OR SPOON, SCOOP CHOCOLATE OUT AND ROLL THEM INTO BALLS, PLACING ON A SHEET OF WAX PAPER. * ROLL THE TRUFFLES IN COCOA OR SPRINKLES, THEN REFRIGERATE FOR ABOUT 30 MINUTES BEFORE SERVING.
