hese transitional months from summer to winter are some of the best times to focus on our
interiors. After a summer of enjoying al fresco living, theres something very alluring about the
changing of seasons. With leaves turning from vibrant greens to warm ambers and nights gradually
drawing in, theres a natural tendency to light the candles and bring a cosy feel to your home.
Lindy Clarke, of Thompson Clarke Interiors shares her tips for doing this in her style advice on page 172.
We also have our own little style spy bringing you the latest in Colonial Style, Autumnal Inspiration and
Rugs, all great for adding depth, texture and interest to your interior at this time of year. With theme pages of
oorstanding lamps and sideboards, weve got lots of ideas to help you transform a room with minimal fuss. Go
for something really quirky to contrast with other pieces or choose a design classic for understated cool check
out pages 95 and 170 for inspiration.
On that note of adding personality to your living space, weve spent the past few weeks chatting to readers
whove recently completed their own labour of love. Each kitchen project has unique appeal, where the owners
have created a personal scheme to reect how they live with the help of their kitchen designer, of course! We
have 15 real kitchens we think youll love. Each one has its own bespoke details, so these stories are great for
ideas to inspiring your own project. Would you ever have thought of having a built-in bread-bin? Or how about
creating a secret wall with access to the hallway? Kitchens are becoming even more unique than ever.
Why not take some ideas for your own project?

nterior designer Aine and her husband Mick bought
their beautiful Arts and Crafts style home 18 months
ago. My father lives with us and we have three young
children so we wanted a house that would suit a
growing family. The house had been through a number
of owners and, although well maintained, any updating from the
1970s was uninspiring. We demolished the single storey kitchen
extension and added a spacious new structure to accommodate a
large kitchen, open plan to dining and family room with views of
the mature gardens, explains Aine.
Even from the couples initial viewing of the house, they had
a clear vision of how their kitchen/family room would look. We
always had this style of kitchen in our heads and we knew we could
accomplish this when we walked into the house. We wanted this
space to have a rustic, casual feel with lots of light and views of
the garden with double height ceilings. Spending hours discussing
styles, looking up images on the iPad and trying to envisage how
their new interior could look, Aine walked around the house many
times in her head before consulting any kitchen designers.
I kept my eye on what a few kitchen makers were doing over
the years. A friend of mine had recently worked with Rhatigan &
Hick and her kitchen was amazing. She also said they were a great
company to work with so I went to them with a strong idea of
what we wanted. As soon as I met with Ed and Gary I knew that
I wanted them to make our kitchen. Ed and I admired the same
designers and he was so enthusiastic when I showed him some of
my ideas. It was great working with someone who was as passionate
about my home as my husband and I are! Their designs are elegant
but with a current look; I felt that their kitchens were more pieces
of furniture that were transformed into kitchens.
With a set of ideas rmly in place, Ed took the lead to ensure
the plans suited the scale of the room, determining cabinetry height,
island size and ne details such as storage solutions and nishing
features. Ed scaled the kitchen perfectly to the size of the room
and he knew what the room needed in terms of functionality Even
the most functional of elements are interesting details in their own
right, such as the specially designed shallow drawer in the island
above the bin, which is used for storing refuse sacks and rubber
gloves. Then of course there are the overtly beautiful features such
as the magnicent tiled wall, the glamorous heavily veined calacatta
marble surfaces and handpainted furniture with amazing branded
cup handles. I love the tiled canopy over the cooker. I deliberated
over extending this tiled nish into the dining area and Im so glad
we did, I think its a real triumph.

How specifc was the brief?
Being an interior designer, Aine had
a strong vision for her kitchen. She
came to me with good concept images
and ideas and we worked together
to ensure that the scheme suited the
space while meeting all her wishes
in terms of style and theme. Aine
wanted to achieve a casual feel with
her kitchen and, while she wanted it
to have a classic overtone that would
wear well over time, she was also more
than happy to push the boundaries
and go for something different and
adventurous.
Did you encounter any issues?
This was a new space to the back
of the house so it provided the
opportunity to scale the kitchen to
suit. Expanses of glass, dramatic vaulted
ceilings and generous foor space gave
us a great blank canvas to work on.
Aine came to me early on when she
was planning the extension so it meant
we could determine the location of
windows and beams to ensure we
Were so thrilled with our kitchen I believe you should go for what you love and dont be
afraid to push the design which is why its important to choose a creative designer.
Q

achieved the right sense of balance.
I also determined the sizes for the
double larder and made sure that the
island was scaled to be in proportion
to the room.
What sets the design apart?
The vaulted ceilings and feature
windows so the room itself provides
a beautiful backdrop for the kitchen.
The calacatta marble is a thing of
beauty. The glazed wall cabinets refect
light back into the room and the
combination of handles is interesting.
Aine wanted to bring in a rustic feel
so Ive added these cup handles to
some of the furniture. Theyre brass
with an antiqued bronze fnish, which
add a authentic look to the scheme.
They have an aged appearance, which
works really well with the more
contemporary features. The tiled wall
is another great feature here. We were
initially just going to tile the canopy,
until I suggested taking the tiles along
the entire wall. Im delighted with the
result its adds another dimension.

our children to grow up in the country with plenty
of outdoor space and freedom to play in relaxed
surroundings. Before the opportunity arose to build,
wed been living in a development in town. We decided to build a timber
frame house, which in itself required a lot of preplanning, says Joanne.
All pipe-work and plumbing had to be in place before the concrete oor
was poured, so the couple needed to research and plan their kitchen layout at
a very early stage. Joanne had a good idea of what she was wanted in terms of
design and liaised with her designer, Lisa McAllister of Beechview Interiors to
come up with a perfectly planned kitchen, tailored to how the family would
live in and use the space. Id heard excellent reviews of Beechview so had a
consultation with Lisa before building work had even begun. Because the
house is a timber structure, all the plumbing work had to be done before the
oors were laid. I brainstormed with Lisa, who made sure I was happy with
every element before we made our nal decision on layout. Lisa was such a
pleasure to deal with and so practical. As well as coming up with a gorgeous
design, she also prioritised functionality to make sure the room would work
well as a busy family space.
The kitchen is the core of the house; open plan to the sitting and dining
areas, this is the social centre so Joanne was keen to have a large island as the
main focus of the room. I wanted this to serve as a cook station as well as
a popular spot for the kids to have their breakfast and somewhere we would
congregate to as a family or when entertaining. Taking ideas from magazines
and looking online for inspiration, Joanne knew she wanted contemporary
cabinetry with clean, simple lines. I wanted the room to be low maintenance
and quite minimal in appearance. We went for polished concrete ooring
because I wanted to create an art gallery, industrial feel. On my rst visit to
the Beechview showroom, I fell for these Graphite doors, which tted with
the contemporary theme I had in mind. With the colour combination sorted,
Lisa and I spent time thinking through the layout.
Although a very spacious room, the design is such that everything is
within easy reach when Joanne is cooking and prepping. Lisa planned this
out so well. The walkway between the island and bank of ovens is the working
side of the kitchen. On the far side of the island, theres storage for DVDs,
which is really handy as it faces the sitting area. The whole space just works so
well and looks even more striking than Id hoped.

What brief did Joanne and Richard
give you?
Joanne had been planning ideas
for her kitchen for quite a while
beforehand so she had a good idea
of what she wanted. They planned to
decorate the front of their house in
Richards preferred traditional style so
the open plan kitchen was Joannes
project. As a contrast to the rest of
the house, she wanted a really sleek,
contemporary design that would be
very easy to maintain as well as look
great. She loved the modern lines of
the gloss doors and she knew she
wanted a large island as the central
feature. Details such as colour, layout
and appliances were all decided when
we both sat down and discussed her
preferences in more detail.
Were any structural changed needed
to accommodate the design?
The house was a timber framed new
build, which meant that all plumbing
Q
a &
works etc had to be planned before
the foor was poured. This meant
a lot of preplanning but, because
Joanne came to me before the house
was built, we had the freedom to
devise her ideal layout without any
restrictions.
What prompted the decision to
have handles on the appliance wall?
We felt that handles on this wall of
cabinetry would help break up the
solid feel. The island and cabinetry
along the sink wall are handleless
but we felt that this large section of
gloss doors could be overpowering
without handles. They add contrast to
the large expanse of graphite gloss.

n the run-up to their wedding, Emma and
Nick have achieved a stunning nish in
their rst home together. Having built on
Nicks familys land, this is a farmhouse, in
the sense that Nick is a dairy farmer but this
is where the traditional farmhouse element
ends. People have commented that the interior looks
more beach house than farmhouse, laughs Emma.
I just love the New England style and adore grey
colour schemes so I guess its not your traditional
farmhouse design.
Although very much on-trend in terms of style
and colour scheme, the couples bespoke kitchen
offers so much more than solely visual appeal. It
was important to us to have a kitchen we loved but
nding a design that was really practical, durable and
able to withstand years of wear and tear was every bit
as important. This is a working kitchen that will need
to withstand years of heavy use.
Originally considering a much more traditional
oak design, the couple soon changed their minds
and went with the idea of handpainted cabinetry.
We talked about oak simply because it would be
more typical of a farmhouse kitchen but before long
realised we were better choosing a style we truly
loved. I adore grey shades and nd The Hamptons
style really appealing so weve created our very own
New England look in the Irish countryside!
It was a work colleague who pointed Emma in
the direction of kitchen designer, Ferghal OReilly of
Shalford Interiors. One of my colleagues had built
his house about two years ahead of us and invited
us to come and take a look once it was nished. I
was totally blown away by his kitchen; the level of
workmanship was excellent, you could just tell it was
so well made, solid and durable. One of the main
selling points was the fact that Ferghal makes all of
his kitchens from scratch. His workshop is beside the
showroom so he can show you the wood that will be
used in your kitchen.
Emmas experience of having older siblings stood
her in good stead when it came to making decisions
about the practicalities of the design. My siblings
have all built houses so it meant I could steal some
ideas or, as was the case in a couple of instances, learn
from their mistakes, to make sure the kitchen would
work for me on a functional level. While theres
single larder storage to the right hand side of the
range cooker, Emma loved the idea of a walk-in larder
so Ferghal altered the plans to include a stud wall to
create a spacious double pantry, which is perfect for
housing larger food items such as cereal boxed as well
as the likes of the microwave and Kenwood Chef.

Were many changes made to the
original brief?
Emma and Nick initially considered
an oak kitchen so, as you can see, this
handpainted fnish is quite a departure
from their original idea. I sat down
with them both and talked through
their likes and dislikes as well as what
they hoped to achieve in terms of
practicality and visual appeal. I have a
tick-list I go through with each client,
which gives me a good feel for what
theyre looking for and their overall
expectations. My aim is to meet and
exceed these expectations so I try to
get into their mind set and come up
with a scheme theyll love. From talking
to the couple, I got the impression that
they wanted a light, bright and airy
scheme. They wanted it to be fresh
and modern yet didnt want anything
too contemporary that would date.
I suggested a handpainted fnish in a
pale grey colour palette, which they
loved. We also tweaked the layout,
introducing a stud wall to create a
double larder to the corner.
Thanks to Ferghal for his craftsmanship and early planning, we have the kitchen of
our dreams. Im so looking forward to having lots of get-togethers in here. And with the
wedding just around the corner, there are lots of reasons to celebrate!

Can you offer any advice to couples
taking on a similar project?
If like Emma and Nick, youre building
a new home, do plan your kitchen well
in advance. The earlier you consult with
your chosen kitchen designer, the better.
My clients came to me when the block
walls were just going up so we had time
and freedom to make any necessary
structural amendments to maximise the
layout. The main larder was originally
going to be positioned to the right
hand side of the range cooker but we
moved it to the right hand side of the
fridge freezer to create a much larger
walk-in larder. Planning this at the early
building stage made it so much easier
to make this change.
What are the most notable features?
The overmantel is unusual in that its
been custom designed from one piece
of wood so there are no seams or
joins. It reaches the ceiling, fnished with
cornicing that weve continued along the
top of all the cabinetry for continuity.

hen Joy and Andy spotted this 1970s house for sale,
they couldnt fail to see its amazing potential. A hidden
gem, its situated in an idyllic location overlooking a
tranquil lake. Despite the dated interior, the couple
grasped this unique opportunity to renovate and make this rural retreat their
dream family home.
The layout to the back of the house consisted of a kitchen with separate
dining room leading to a living area. Loving the idea of an open plan kitchen,
Joy and Andy consulted with kitchen designer, Peter Leonard of Greenhill
Handmade Kitchens. Greenhill were recommended to us; theyd designed a
kitchen for my in-laws who were delighted with the results so we didnt feel
the need to look anywhere else, says Andy. The rst thing Peter suggested
when he came to check out the existing layout was to knock the dividing wall
between the original kitchen and the dining room. Pretty much designing
the kitchen for them there and then, Peter suggested that they switch the
positions of the kitchen and dining area so that the kitchen was the central
feature, linking the dining and living areas.
Before their consultation with Peter, Joy and Andy had assumed that
the sink and undercounter cabinetry would run beneath the windows.
We thought wed have the sink at the window but Peter suggested that we
drop the windows to the oor to make the most of the views. He designed
the kitchen furniture along the opposite wall with the central island tted
with a sink and two-tier surface with a breakfast bar. We would never have
considered this layout but it works so well. The mirrored splashback means
we get to enjoy the lake views even when were cooking. We spotted this idea
in the Greenhill showroom but thought the mirrored nish would be hard to
keep clean but its much lower maintenance than youd expect.
Choosing a light stone shade for the main kitchen furniture, Joy and
Andy decided on a dark grey contrast for the island and have accessorised
with grey bar stools and pendant lighting for a co-ordinated look. The work
surfaces complete the scheme. We got to handpick the granite which added
to the whole experience.
Connecting the kitchen with the dining area, the bespoke larder has
been positioned to the far end of the room. Running the full width of the
back of the house, this open plan layout works brilliantly. We couldnt be
happier with how the room has turned out. Im so glad we went with Peters
suggestions for the layout. Dropping the windows has made an amazing
difference and the kitchen layout works so well.

What was the original plan for the
kitchen design?
Joy and Andy originally had much
smaller windows at the back of
the house so they wanted to have
the sink positioned at one of the
windows with undercouter cabinets
running the length of this wall. I
suggested turning the room around
and dropping the sills to have large
windows to make the most of the
stunning views.
What was the greatest challenge?
The design went smoothly but I
needed to reassure my clients that
this layout was the best option for
maximising both the usable space
and the views. Their home really is a
hidden gem, the views are beautiful
so I really wanted give them a living
space where they could enjoy
stunning views from every angle. Im
so glad they went with my idea to
move the kitchen to the other side

of the room. Rather than let the RSJ
support beam dictate the layout
or positioning of the cooker and
overmantel, I concealed it into the

How was the colour scheme
decided?
Joy and Andy both liked the idea of
a muted grey palette so we looked
at various shade combinations. The
room is really bright with lots of
natural light so I knew it could take
a dark, dramatic grey, which we
used on the island. The rest of the
cabinetry is a lighter stone shade,
which is contrasted with the granite
surfaces and accessories, such as the
bar stools and dark grey pendant
lighting. This combination of light and
dark greys gives a very attractive,
balanced look.

t
he renovation of this exquisite period
property has converted three rooms
into one spectacular open plan space,
which ts into one wing of the existing
house. Demolishing dividing walls and
digging beneath oor level, the result of this
refurbishment has given the room an additional
2ft. in ceiling height, which only enhances the
grand scale of the room.
Working with Celia Warbrick of Moneyhill
Interiors, Padraig Donnelly of The Design
Yard has taken this design to completion,
nalising materials and colour selections and
manufacturing and producing a one-off design
that is as functional as it is visually outstanding.
Celia Warbrick of Moneyhill Interiors, one of
our UK retail partners, composed the concept
and commissioned Design Yard to deliver. We
knew the client wanted a dark and dramatic nish
yet a light and bright overall feel so so we settled
on the crown fumed oak as the material for the
oor to ceiling wall to wall cabinetry, which is
spectacularly punctuated with a state-of-the-art
Sub Zero fridge freezer. By way of contrast, a high
gloss island was detailed in the brief. To ensure a
truly bespoke design, we had the gloss cabinetry
manufactured and produced at our workshop,
where a premium gloss nish was applied to
ensure the highest specication possible.
Continuing the sophisticated nish, the
internals of the furniture have been given as much
attention to detail as the faade. To complement
the wall of smoked oak, we matched the interior
of the cabinets with a similar complementary
nish. As a contrast to the gloss island furniture,
we made these internals in pale ash, which
heightens the practicality and usability of the
internal items, which includes a hidden wine
cabinet. The pocket door system in the cabinetry
wall allows doors to be recessed and left open so
this heightened the importance of the internal
nish. No detail has been overlooked. Our ability
to fabricate and create unique furniture sets us
apart and is what puts us in the position to deliver
a world-class product.

What was the brief for this design?
We worked with one of our UK retail
partners, Moneyhill Interiors to fnalise
the design on this renovation of a
stunning period property in England.
Working with Celia Warbrick, the
brief was to maximise natural light
and create a design that was truly
unique with unusual materials and sleek
storage systems.
Defne the most notable design
details.
The client wanted a design with
dramatic impact yet with a sharp, clean-
cut look with zero excuses for clutter.
The wall of full height cabinetry is
undoubtedly one of the most notable
features. The fact that such a large
percentage of storage is contained
along this one wall is a triumph of
the design. The kitchen is contained
between this furnished wall and the
island, so the island with breakfast area,

its circumference is key to the designs
success. The pocket door system and
the secret door leading to the hall
make for added impact.
What was the most challenging
technical aspect?
Coming up with a way of
manufacturing the concept for a top
retailer like Moneyhill Interiors whilst
interpreting that concept and making
it a reality. The client wanted a gloss
door to contrast with the oak veneer
but no European products would have
satisfed the level of fnish required so
we manufactured our own bespoke
door with a painstakingly applied
gloss fnish to ensure the highest
quality. The design provides the best
of both worlds, a contemporary
look with bespoke supreme quality
craftsmanship. We manufacture
and produce our cabinetry in our

which gives us the freedom to create
unique designs from scratch.
Our ability to fabricate and create unique furniture sets us apart and is

year-old country house

y great grandfather built this house so, although we wanted to

extend to give ourselves a larger kitchen, we didnt want to change
the character of the faade. Rather than adding a box extension or
anything too contemporary, the new structure is sympathetic to
the architecture of the house, explains Maria. Extending to the
front of the dwelling, the kitchen overlooks an orchard with double doors to either end,
leading to the hallway and snug. The original kitchen had been a small scullery so weve
converted it into a utility room and created a spacious kitchen with seating area, leading to
the snug so its a great space for all the family.
With her own vision for the kitchen, Maria wanted a grey painted nish and a functional
island yet with space to incorporate her beloved kitchen table that originally belonged to her
grandmother. My mum wouldve sat at this table as a child. I love to mix old with new and
love the history behind old furniture. Our kitchen designer, Garrett Dillon has given it a
new lease of life, retaining the original legs and making a new top to complement the island
surface. Maria knew Garrett and had heard great reports about his designs so felt no need to
consult with any other designers. Garrett is brilliant. He has great ideas and really got to grips
with the look we wanted to achieve, bringing in some of our old pieces of furniture, the table
legs and my mums old kitchen chairs, which he painted to match the cabinetry.
Garrett came on site before the extension was built, which was hugely advantageous in
terms of the overall design of the extension. I was originally going to have a standard at
ceiling for the entire room but with Garretts design to include a long island with half moon
nish on the end, we decided to introduce a vaulted ceiling at one end to add impact and
increase the feeling of space above the breakfast bar.
After twelve years of living in an apartment in London, Maria wanted to maximise space
and ensure there was a place for everything. Our kitchen in London was really small and
easily cluttered so I wanted everything to have its own place and liked the idea of having
the toaster, kettle and even the bread-bin concealed within the furniture. Having travelled
extensively in America, she had admired the X detail on some American kitchens, a beautiful
detail that Garrett has created on the glazed top cabinets. Hes also made a strong feature of
the dining area. As well as making a new top for Marias old farmhouse table, hes tted the
wall with paneling to continue the furnished look and has designed tted bench seating with
built-in storage for everything from tea towels to the childrens school uniforms.

What was Marias brief?
The brief was relatively straightforward.
Maria wanted two runs of cabinetry
with a range cooker and a designated
dining area as well as feature island with
breakfast bar. She had ideas in terms
of colour and style and specifed that
she wanted to totally avoid any clut-
ter. After having a small kitchen with
inadequate storage, she really wanted
to maximise the space and have a place
for everything, hidden from view.
The island is unusual in design. What
was your inspiration?
The island came about because this
is a farmhouse and the idea of a table
style island appealed to both Maria and
Martin. We have a very similar design
in the showroom so, once they saw my
suggestion on display, they loved it. The
curved end makes a lovely breakfast
bar and the open end with table legs
and slatted display area is great for
displaying accessories, with a little wine
rack to either side of the wine cooler.

What are the most notable design
elements?
Maria wanted the kitchen to be a
stylishly furnished space while also
ticking all the boxes in terms of
practicality and storage. Ive combined
both elements to ensure that form
and function are equal. The bifolding
doors, bespoke canopy, island design
and paneled dining area just some of
the notable aspects. The reworking of
the farmhouse table and painting of
the chairs adds another dimension,
bringing authentic character and mix-
ing old with new.

say, the dining with bench seating is a rm
favourite. I love how Garrett has brought
together the old and new with the table and
made such clever use of storage. It works
brilliantly for us as a family.

b
uilding their rst home together the same year as they got
married, 2009 was a busy time for Pamela and Alden. Our
rst child was born a year later, so it was important to get the
house to a certain level of completion where it was livable
even if the interior schemes werent nalised. Four years on
its still a work in progress but I must say, Im glad we didnt rush in or make
rash decisions. It actually really helped us decide what we wanted, especially
with the kitchen design. Living in the house before making those nal
decisions denitely worked out to be the better option for us, says Pamela.
Before consulting with designer, Johanna of Johanna Montgomery
Designs, the couple had a very different concept for their kitchen. We
originally pictured this very traditional wood kitchen with a large rectangular
island, and racked shelving detail but talking to Johanna got us thinking of
more practical alternatives. Johanna came up with this sweeping design. It is
more functional with concealed storage and a lovely breakfast bar, which is
less imposing than a more traditional shape. The curved nishes look lovely
but theyre also very practical. Our four year old likes to do circuits of the
kitchen on this bike so sharp edges would not be ideal!
Having always wanted an Aga, the chimneybreast was incorporated
at the early building stages. Weve never had an Aga in our family and
Ive always just loved the character they add to a room. Its denitely my
favourite appliance! Choosing a cream nish for the range cooker, Pamela
decided on a neutral tone for the cabinetry and went for a rich contrasting
Green Smoke to dene the island. Rather than having typical kickboards to
nish the base units, the couple specied skirting board to give the room a
more furnished feel. Continuing the furnished look, the window seat gives
the room a cosy corner. Rather than continuing the theme with a painted
nish, Johanna recommended solid oak, which picks out the nish on the
breakfast bar. Im glad we had the seat designed in oak because the painted
nish wouldve been easily marked with little feet!
A working kitchen with lots of soul, this open plan layout perfectly
suits family life. When we have friends over, everyone stands chatting at
the island. Its great to have the table and breakfast bar here and we have a
snug that leads off this room so the girls end up at the table or island while
the boys watch the rugby. Its great though, we have our own space yet its
really sociable because were all essentially in the same room.
Weve never had an Aga in our family and Ive always just loved the character
they add to a room. Its denitely my favourite appliance!

JMD.indd 6 25/09/2014 10:53
Were any structural amendments
needed to accommodate the
kitchen?
No, I came on board to design
the kitchen after the house had
been built so the existing layout
dictated the fow of the room and
the scale and positioning of the
cabinetry. Pamela and Alden had a
very clear idea of what they wanted
so the only main change in the
actual kitchen design was with the
island. They had originally wanted a
conventional rectangular island but
I advised them to go for this design
with sweeping contour on the
breakfast bar. It softens the look and
takes up less space in the room.
What was Pamela and Aldens brief?
Theyd been living in their newly built
house for a couple of years before
contacting me to design their kitchen
so they had a lot of time to consider
what they wanted. They have a
substantial utility room so theyd
been using this as a temporary

kitchen until they found what they
were looking for. Their brief was for
a country kitchen to complement
their rural surroundings but they
were keen to achieve a modern
country look rather than anything
too fussy.
What inspired the window
seat design?
This corner was crying out for a
window seat. I felt the need to
continue along this wall with some
form of cabinetry, to give the room
a more furnished feel. The large
windows make this a lovely bright
space so the idea of a window
seat sprung to mind. Pamela and
Alden have two young children
so the built-in drawer storage is
really handy for storing toys. This is
a lived-in family space that needed
to be extremely practical as well as
visually appealing so this additional
storage/seating area adds another
dimension.

SPACE
Jane and Michael have

house in Clontarf to

new open plan family room

h
aving rented for seven years since moving to Dublin, Jane and Michael
instantly saw the potential in this 1950s semi-detached house, which
they purchased last year. We started the renovation as soon as we got
planning permission and lived in our rented house until the project was
complete, says Jane. Extending to the side and back of the house, the
couple now have a double height extension to the back with single height
at the side, giving their interior a new dimension. We didnt change the faade but weve
given the interior a complete overhaul with a contemporary scheme throughout, starting
with the kitchen. After doing some research online and getting recommendations from
friends, Jane contacted Dean Cooper Furniture Design. Dean came out to the couples rental
house where he examined the plans for the renovation and from this was able to come back
with a comprehensive quote covering all the options. Deans designs were so comprehensive,
giving us the full picture so we knew exactly what we were getting from the outset. Of all
the rooms in the house, the kitchen was the most important to get right so it meant a lot to
have Dean on board.
Knowing that she wanted a handleless kitchen, Jane favoured a contemporary design
with clean lines for a fresh and striking look. We have three boys so, while I wanted the
kitchen to look beautiful, it also needed to be low maintenance with a place for everything to
conceal the clutter of busy family life. Choosing a pale grey stone colour for the cabinetry,
this light tone has been contrasted with wood, which warms up the room and adds texture. A
secret wall in the dining area conceals a utility room, as well as the side entrance of the house
and lots of storage for occasional items. This is where the original kitchen had been. We
had planned to dig down to the same level as the living area but the drainage in the original
kitchen was high so we needed to maintain this existing oor level. It wasnt our original plan
but it works well with the steps as a feature.
Complementing the timber wall, Dean designed a bookcase in the side of the island. I
love this little library feature; it faces the living area and adds a more furnished look. Due
to the two oor levels, this part of the island is too tall to sit at so the shelving makes great
use of this area. We still have plenty of space for bar stools on the end of the island, which is
perfect for having a casual bite to eat.

Did Jane have a good idea of what
she wanted in terms of kitchen style?
Yes, she had admired other designs
by Strmer Kchen and tracked me
down as the agent. Even before she
met with me, Jane knew she wanted
a contemporary handleless design so
it was a matter of selecting colours
and materials and devising the best
layout to really maximise the space
in the room. I designed the cabinetry
to specifc heights to make sure
everything was well balanced, with
a combination of tall fush-ftted
furniture contrasting with midi height
cabinets on the other wall.
Did the split-level layout raise any
challenges?
The steps into the lower level living
area dictated that the large, four
metre run of island followed this
split-level form so we made it work
to our advantage. It was too tall to
sit at on one side and also wouldnt
have looked right ftted with doors
Life is much easier with a kitchen like this. Theres a place for everything
and, even though this is a busy family room, its very easy to maintain and
really works for us as a family.

so I designed a bookcase in stained
oak veneer, which faces the living
area. I then ensured that there was
adequate space on the end of island
with a large overhang to create a
spacious breakfast bar. The bookcase
has the effect of linking the living
space with the kitchen and brings
contrast in tone and texture to the
matt stone cabinetry.
What is concealed behind the oak
veneered wall?
Theres a side access door behind
this wall, along with a utility room
and fexible storage space for the
familys non-kitchen items, such as
sports equipment. Rather than having
a conventional wall, the addition of
the oak creates a secret wall, which
also furnishes the room, connects
the dining area with the kitchen and
complements the bookcase.

he kitchen in our last house

was a ten year old maple
design which dated quickly.
For the new house, I knew
that I wanted something
different but didnt quite
know what, says Linda. Building what
would be their long-term family home,
Linda and Shane agreed that their kitchen
investment would have to stand the test of
time, so their requirement was for a well
made classic style that would age well.
Having heard great reports about
OConnors of Drumleck, the couple
visited the showroom for an initial
consultation during the very early stages
of their build. We knew it would work
to our advantage to do the research on the
kitchen as early as possible to ensure wed
have freedom with the design. Designer
Peter OConnor, was excellent. It was
great to have his guidance from the start
and reassuring to know that our kitchen
plans were in capable hands.
Although Linda knew she wanted a
change from her old maple design, she
found it difcult to envisage what style
and colour of kitchen would suit her
new home. The dilemmas began to melt
away after just one visit to the showroom.
OConnors new showroom is fantastic
with an amazing choice of inspirational
designs on display. I fell in love with one
of the display ranges on our rst visit. I
was really drawn to the inframe Shaker
style doors so this was a good starting
point. Unsure about colour and at one
stage considering purple for her island,
Peter persuaded her to go for this timeless
combination of French White with Silver
Birch on the island. Looking at this now,
I cant believe I wanted purple. This light
grey tone is much easier on the eye; I can
imagine living with this for many years
to come.
The island is core to the design with
more than ample room to seat four at the
breakfast bar. Topped in L-shaped solid
oak, this meets a quartz surface, which
forms the main prepping area on the
island. Interestingly, the island is free of
a sink or hob. I liked the idea of keeping
the island free of appliances. I have one
main sink, which is all I need and theres
lots of space for the hob on the far wall.
I wanted to keep the island for casual
dining and serving up meals.
Breaking up the run of cabinetry,
a contoured section beneath the hob
and stepped out undercounter cabinetry
beneath the sink introduce contrast and
interest and rather than opting for an
integrated fridge freezer, Linda chose a
freestanding American style model. The
stainless steel nish breaks up the painted
furniture and gives a nice contrast to the
room which is a feature in itself.
With Inframe doors, butt hinges with
soft close mechanisms, glass light boxes
and ngertip design glass knobs adding
a touch of glamour, this traditionally
crafted kitchen is built to last.

Did your clients have a defnite style
in mind for their new kitchen?
In terms of general style, they knew
they wanted a classic handpainted
kitchen with plenty of storage and
a large central island. On visiting the

displays from the new collection and
were keen to base their kitchen on
this design. They wanted a kitchen that

The kitchen is a high spec design with
30mm solid doors and 40mm beaded
frames. The doors beneath the hob
are S-shaped to highlight this area and
add contrast to the run of furniture,
while the cabinetry housing the sink
is stepped out with pillars to add
defnition. Framed panels feature on the
end of the island as a decorative feature
and all drawers are solid oak with
beautiful dovetail jointed drawers and
solid oak cutlery inserts. Glass sections

refect light in the top of the wall units
fanking the window and a combination
of two different door knob styles adds
interest to the cabinetry. We chose
Queen Anne style chrome knobs
for the undercounter cabinetry and
contrasted with fngertip design glass
knobs for the wall cabinets. The doors
feature butt hinges and are also ftted
with a special soft close mechanism to
give the best of both worlds the look
of the butt hinge with the convenience
of the soft close system.
How did you decide on the colour
combination?
My clients admired a very similar
neutral and grey colour combination
on one of the display kitchens in the
showroom so this was their initial
inspiration. They were keen to go
for a contrast in colour for the work
surfaces yet didnt want anything too
dark. The Silestone Quartz in Bamboo
works very well as it gives texture to
the scheme and complements the
solid oak breakfast bar.

LIGHT
Carmel and Frank have totally transformed
their small, dark kitchen into a light-flled
open plan space for all the family

ur last kitchen was quite small and incredibly

dark. The house is an H-shape so the kitchen
had a at roof and was located in the centre of
the house. The cabinets were dark knotty pine
which didnt help I couldnt wait to open up
the entire space with a sociable new layout with plenty of space for
cooking, dining and relaxing, says Carmel.
Knocking through walls and reconguring the interior, the
couple spent time researching to nd the right architect and
builder for the job. Removing the utility room, they switched
their heating system from oil to gas and converted the old boiler
room into a new utility area. Extending to the rear of the house by
approximately 9ft and gaining around 3ft to either side, Carmel
and Frank now have an extremely spacious open plan layout as the
core of their home.
After having such a light-deprived kitchen, Carmel had visions
of a light and airy space she just needed to nd the right kitchen
designer who could deliver what she wanted. Keith Fennelly of
Woodale Designs came recommended from friends so Frank and
I went to the showroom for some inspiration. Keith was great,
nothing was too much trouble and he had a solution to any
problems previously raised by other designers wed consulted with.
Originally considering a black work surface as a contrast to the
light painted colour scheme, Carmel took Keiths advice and opted
for this Blanco Capri Silestone surface. Keith has a great eye for
interiors and was so enthusiastic with our project. He was so right
to go with the light worktops the whole scheme is so calming!
As well as creating a serene colour scheme, Keith also
incorporated several interesting features to the internals of the
cabinetry. I didnt want to have a wine rack on display so he
suggested concealing this with a door and adding a little oak
pullout to hold our stemware. He also made pullouts in the mantel
to either side of the hob for storing herbs, spices and oils. He had
solutions for everything. Our builder changed the position of the
radiator and I was at a loss as to where it could be repositioned.
Keith moved it to the other side of the door and suggested colour-
matching the paintwork with the kitchen furniture and nishing
the wall with panelling to continue the furnished look.
Carmel and Frank were so impressed with Keiths work that
they commissioned him to design their utility area as well as their
wardrobes and bathroom cabinetry.

Did your clients have a specifc
tick-list?
Yes, Carmel and Frank had taken
plenty of time to carefully consider
what they wanted. They renovated
their bungalow and extended the
original footprint of the kitchen,
knocked dividing walls and created
a magnifcent vaulted ceiling to
create an spacious open plan room
for kitchen, dining and living. Their
previous kitchen was in a small area
and made from dark knotty pine, it
was an incredibly dark room, which
lacked atmosphere and space. My
clients wanted to go to the other
extreme with a light, bright and
spacious room that would refect light
and become the central focus of their
interior. They didnt want anything
fussy or too traditional yet they
wanted to steer clear of anything too
modern that would date quickly.
What are the standout features in
this design?
Carmel had a very clear set of ideas,
not just with the kitchen design but
also the fner details and fnishing
touches. She wanted to incorporate
handy additional features where
possible into the design so I included
lots of handy extras to make cooking

and living in the kitchen as hassle
free as possible. Solid oak spice racks,
cargo recycling bins, drawers ftted
with sockets for charging mobile
phones are just a few convenient
extras. The drawers ftted with
sockets are great you can charge
your phone while keeping it neatly
out of sight. Another good addition
is the pullout rack above the fridge
freezer for storing wine glasses.
Was it a challenge to achieve scale in
this large room?
The ceilings are extremely high so
I ensured the cabinetry was made
to suit these gand proportions. The
cabinetry is 9ft high and I ftted three-
piece cornicing to frame and fnish
the tall furniture. Continuing the look,
I designed wall paneling to ft around
the door and colour-matched the
White Tie paint shade to car paint and
sprayed the radiator for continuity,
which ties the scheme together.

TONES
Carolyn and Mark have gone for warm shades of
grey and basalt black to achieve rich tones and
textures in their new kitchen in Bangor
Photography Rory Corrigan
r
eturning home after several years living in England,
Carolyn and Mark rented a house while scouting for
their ideal forever home. We rented for two years
and were thrilled when this new build opportunity
came up in one of our favourite locations, explains
Carolyn. Forming the central feature of the open plan interior, the
kitchen was the rst room the couple decided to address. Of all
the rooms in the house, the kitchen is the one area I spent the most
time on because I knew this is where wed spend most of our time.
Im sure the design team at Interior 360 will vouch for this! They
were patient and totally grasped what we wanted, in terms of style
and design and also came up with suggestions for extras, such as our
concealed double pantry with retractable door system.
Carolyn and Mark decided on Interior 360 after shopping
around a selection of kitchen showrooms. The guys at Interior
360 came up with innovative storage solutions, in keeping with our
preferred contemporary style. I loved the concept of the retractable
doors on the larder. The double doors open conventionally and also
retract, so they slide into side channels to maintain a streamlined
appearance. This comes into its own at breakfast time or when Im
cooking and need easy access to the contents. Theres also plenty of
space for my baking appliances.
Continuing the streamlined appearance, studded framework
was created to give the cabinetry a linear, ush tted nish. With
the larder tted to the right hand side of the kitchen, the main
appliance wall houses the ovens, fridge and integrated freezer with
ice and water dispenser. Interior 360 completely understood where
we were coming from when we described the look we wanted to
achieve, and the photo-effect 3D visual really helped us see how the
design would look in our home. They suggested design ideas that
we otherwise would never have thought of.
Originally considering white or ivory for the cabinetry, Carolyn
and Mark changed their minds when they saw this stunning Trufe
Grey tone on display in the showroom. The room is very bright
with plenty of glass doors and oversized windows so we knew it
could take this shade. The Basalt Black ceramic work surfaces have
an ultra slim prole, which adds to the striking, sharp look of the
scheme. Initially I was worried that black may look too masculine
but its not a heavy black, it has a matt nish that makes it very
textured and tactile!

Were many changes made to the
initial brief?
A few benefcial tweaks were made
to the brief to really maximise the
space we were dealing with. Carolyn
and Mark were quite specifc in that
they wanted a clean-cut, modern
design with a linear feel and no
fussy detail. We got a good picture
of what they were looking for and
made some changes to the proposed
colour scheme and added fner
details such as specifc door systems
that would make life easier for them,
while maintaining the pared back look
they wanted to achieve.
What are the most unusual design
features?
Wrapping the Basalt Black ceramic
surface around the island really
frames this central feature and is a
fnish that Carolyn was initially unsure
of. She was concerned that it may
look too heavy and oppressive but

DIRECTOR,

when we showed her the samples,
she really loved its tactile, almost
velvety surface. Its more of a matt
black so is much softer in appearance
than she frst thought. Other unusual
features include the door system on
the double larder, which allows the
user to recess the door into side
channels so you can leave it open
without eating into foor space.
What structural amendments were
required?
There were no essential structural
modifcations required although
we did make the suggestion to
incorporate a lowered ceiling
bulkhead above the island to house
the built-in extraction system. We
also recommended that the walls be
studded out to create recesses in
which to ft the kitchen furniture. This
gives a really effective fnish where
the kitchen within the framework of
the room, enhancing the linear look.

iam and Donnas new build is quite literally over the hedge
from their last house, which theyd been living in for the
past ten years. The site next door became available about
two years ago so we grasped the opportunity to build. We
got a set of plans drawn up by a local architect, which we
used as a framework then Donna modied the entire house with
the main focus on an open plan layout, 36ft long and 18ft wide,
for a large open plan kitchen/dining area, with rooms leading off
it, explains Liam.
Donna had a clear set of ideas for the kitchen design so
her brief was specic. She wanted a simple door design and is a
huge fan of the grey colour palette. Although she likes a pared
back, unfussy look, she wasnt keen on anything that would be
too contemporary or quick to date. A timeless design with no
fuss was the order of the day. And when it came to choosing the
right designer for the job, she was every bit as decisive. Donna
saw Andy Spillane of Savvy Kitchens on RTEs Room to Improve
programme, liked his design ethos and we went to his showroom
for an initial consultation. We got on really well with Andy; he was
totally on our wavelength. He was the only designer we went to,
there was no need to shop around.
Liaising with Andy from a very early stage, just one month into
the build proved to be hugely advantageous. It was Andys idea to
add the L-shaped window in the corner. A window was originally
planned to be further along the wall but Andy suggested reciting
this to free up the left hand wall for the bank of cabinetry which
houses the larder, fridge freezer and eye level appliances.
Looking beyond the kitchen design, Andy also took the entire
room scheme into account, coming up with the idea of the window
seat to the right of the hob. We never would have thought of
including a window seat but it was an excellent idea it makes
great use of the space. The seats are solid oak and the base is in the
same nish as the kitchen cabinets. The tall cabinetry housing the
ovens and larder press adds impact and emphasises the sheer height
of the vaulted ceilings. With concealed storage including glazed
cabinets along the top section, the cabinets provide a huge amount
of storage while maintaining a pared back aesthetic. Adding detail
and contrast, Andy has introduced a little display storage in the
form of open wall shelving, perfect for jars and accessories.

How did you strike the balance to
create a modern yet timeless design?
Donna wanted clean lines and
simplicity of form yet she wanted
to steer clear of anything overly
contemporary. Achieving a worthy
compromise, I came up with a design
for a linear inframe design, which
combines the streamlined look of
a contemporary kitchen with the
traditional joinery of classic inframe
furniture. The colour scheme of
Farrow & Ball All White (undercounter
cabinets and dresser) and Railings
(island) gives the room a really fresh
feel with a sharp contrast.
What are this designs strongest
features?
The island shape is an imposing
element in the room. Scaled to
suit the dimensions of the space, it
continues the linear inframe design of
the wall cabinetry, while incorporating
a contour at the breakfast bar. The
We were so pleased with the kitchen that we asked Andy to do all the carpentry throughout

double pantry is a strong feature due
to its sheer practicality and the glazed
top boxes add contrast and interest to
the handpainted furniture. Furnishing
the wall to the right of the hob, the
window seat adds a casual furnished
feel to the room.
Did you make any structural changes?
Yes, I asked my clients to change
the window position to an L-shape
arrangement as a corner window
where the sink is positioned. This
contributes to the overall design,
making good use of a corner while
freeing up the wall for the tall dresser,
which incorporates the larder, ovens
and refrigeration. This is the advantage
of being involved in the design at an
early stage.

CHANGE
Marty and Ciarraigh have completed their new build
in Saintfeld with a statement gloss open plan kitchen
incorporating a striking accent glass feature
Photography Rory Corrigan
h
aving lived in the Sainteld area for twelve years,
Marty and Ciarraigh always loved the idea of building
their forever home in this location. Our last house
was a renovation project so when this site became
available, we grasped the opportunity to start with a
blank canvas, says Ciarraigh.
Renting for a year while their new house was being built, the couple
had plenty of time to consider what they wanted dcor-wise for their
interior. Our previous renovation project was a learning experience so
this helped us decide what wed do differently this time around. There
was no point in going for a similar kitchen to the wooden one in our
last house; we felt wed like something totally different.
Asking their builder for suggestions of kitchen design companies,
Wrights Design House came highly recommended. Meeting with
Glen Wright, Marty and Ciarraigh got a really good vibe and were
very impressed with the showroom and display kitchens. We got a
really good feeling just from chatting to Glen. Hes genuine and has a
real passion for kitchen design. We wanted to go really contemporary
with the nish and colour scheme and Glen encouraged us and
really pushed the boundaries. Even though we had ideas for a sleek,
modern look, he encouraged us to see the full potential and we ended
up with a scheme thats more modern than we initially anticipated
and we couldnt be happier with it! Sometimes you need that extra
encouragement otherwise you might be tempted to play it safe.
Combining grey gloss with icy white surfaces, the kitchen has a
lime green accent colour in the form of a toughened glass splashback.
We played around with this colour for a while before nding the
right tone. Were really happy with the green against the grey its
just enough to give contrast while the white quartz surfaces give a
really crisp contrast. The Zeus surface is immensely practical too. Glen
give us a sample to take home to try and test and no sauces, spices or
strongly coloured food or drinks stain it. We had black granite on our
last kitchen and this white quartz is so much lower maintenance.
To ensure the desired streamlined effect, Glen suggested the wall
and ceiling studwork, which is built to create a ush tted, recessed
nish. Bulkheads have been built to perfectly accommodate the
cabinetry so there are no areas for dust to collect and no empty spaces.
This has not only met but exceeded our expectations. We are thrilled
with our new kitchen.

Did this design pose any structural
challenges?
This project provided us with a
blank canvas. It was a new build and
my clients came to me early on in
the building stage so we didnt have
any restrictions with the layout. Its
a generously proportioned room,
which allowed us to incorporate the
wall studwork to create a fully ftted,
streamlined design. Lowering the ceiling
around the perimeter of the room as
well as in the bulkhead above the island
fnishes it off well.
What are the most notable design
features?
The colour contrast is striking the
grey gloss works well with the white
quartz surfaces and the toughened
glass in lime green adds an interesting
spin. I designed the lighting scheme
to include LED lighting to highlight
the bulkhead above the island, the
breakfast bar and the splashback, which
gives the room a lovely ambience.
Were really happy with the green against the grey its just enough to give contrast
while the white quartz surfaces give a really crisp contrast.

its very well catered for with ample

Matt and Dermot have created a stunning

Graignamanagh, Co Kilkenny

m
att and Dermot had been looking for a
weekend retreat that they could also let
out as a holiday rental when Clarahawn
House came onto the market. A nineteenth
century cottage with an architect-designed
extension, the house is set in an idyllic position with uninterrupted
views of the Blackstairs Mountains. Just minutes from the picturesque
village of Graignamanagh, its the perfect place to relax away from fast
pace of city living.
Buying this hidden gem in 2013, the couple refurbished the house
from top to bottom, creating a open plan space on the ground oor,
where kitchen, dining and living area opens onto a terrace with views
of the mountains and extensive gardens leading to the River Barrow.
We maximised the views by adding a large picture window and loved
the idea of a really relaxed, easy-going look for the interior, which
is why we went for the casual appeal of this handpainted Neptune
kitchen from Castle Cabinets.
Although the room previously had a structural pillar, Matt replaced
it with an I-beam, so removing this and adding the large window
has totally transformed the space and provided the most amazing
panoramic views. The house is rented throughout the year so it was
important for the cabinetry to be sturdy with reliable appliances as well
as looking great. Ive always admired the Neptune designs, which led
me to Castle Cabinets, one of their local dealers. I wasnt able to be on
site throughout the project so it was important that we found a kitchen
designer who would not only create the kitchen scheme but oversee the
entire job. John from Castle Cabinets went that extra mile and was a
pleasure to deal with.
The island was key to the design, positioned midway between the
main run of cabinetry and the dining table, acting as a divider and
practical workstation. Due to the positioning of the window and large
bi-fold doors, the cabinetry is mainly below the work surfaces, which
adds to the feeling of light and space. The white Viking range cooker
was one of Dermots must-have features, which certainly enhances the
scheme and makes a design statement of its own. The range cooker is
great unusually, its positioned by the window so John commissioned a
custom designed concealed ceiling extraction with external motor.
As with the entire portfolio of Neptune kitchens, the cabinetry is solid
wood, featuring traditional joinery techniques such as dovetail drawers
and mortise and tenon joints. Combining traditional joinery techniques
with classic nishes, this design perfectly suits its surroundings.
FARMHOUSE FLAVOUR
Along with the Falcon range cooker, the
Farmhouse style double sink was another
of Dermots must-haves. Positioned by the
window, the views from here are incredible

What was the kitchen brief?
They wanted the kitchen to be the
central feature of the house with a
generous open plan layout and an
emphasis on the spectacular views
with bifold doors and large expanses
of glazing. Matt and Dermot were
drawn to the handpainted fnish and
clean pared back lines of the Neptune
Chichester design. As well as being
their holiday retreat, the house is also
rented out during the year so they
wanted the kitchen and appliances to
be hardwearing and reliable as well as
good looking.
Did the lack of wall space pose any
problems?
The large window and bifolding doors
onto the deck did put pressure on
the design but Matt and Dermot
really liked the casual look of a pared
back design with the emphasis on
undercounter furniture, so this layout
worked very well and suited the look
they were aiming to achieve. Casual
in style with muted tones and simple
Theres nothing wed change about this kitchen. Less is denitely more when it comes
to wall cabinets, especially in an open plan room like this where you want to make
the most of light and space.

lines is what they wanted so the lack
of wall cabinets actually enhanced
the scheme. I did incorporate one tall
cabinet to make the most of the left
hand corner of the room. This larder
with bifolding doors makes great use
of space and doesnt interfere with
the mountain views.
Whats the strongest design feature?
Less is more in the sense that the
understated cabinetry enhances
the feeling of space and allows the
room to shine within the stunning
surroundings. The paint shades in an
eggshell fnish help to achieve the
informal look Matt and Dermot were
going for. Complementing the kitchen
furniture, the Silestone Tigris Sand
work surfaces add texture to the
scheme. For me, the suede fnish really
makes it. This is such a bright room
that a polished surface would have
been too refective. The suede effect
adds a really lovely tactile feel, with
upstands continuing to the windowsill.

QUIRKY
Ann-Marie has retained all the character
of this 1860s property while introducing
some quirky touches to express her
fabulous sense of style
Photography Derek Robinson

t
his gorgeous period house in Monkstown, County
Dublin had not been touched in decades, which turned
out to be a blessing as it has retained its stunning
original features. There was no electricity or heating
and it needed a new roof but we were incredibly
fortunate that the original shutters, architectural details
and 300 year old oorboards were still intact. I adore period houses
and relished the idea of renovating room by room, says Ann-Marie.
Keen to have the renovation complete as promptly as possible,
Ann-Marie had her own very specic ideas for the interior design,
starting with the kitchen. I wanted to have the house ready before I
returned to work after maternity leave with our second child so this
gave us a goal to work towards. Thankfully we lived quite nearby
while the work was underway so I was here everyday!
Ann-Marie has a very keen eye for interior design and had great
vision for the kitchen design and layout. The key to the design was
partially dictated by the architecture of the room. The ceilings are
very high so I knew we needed a bespoke, handmade kitchen with
extra height cabinetry that would be in proportion to the room.
Standard dimensions would look lost; the room really needs the
extra tall cabinetry and the large island to suit the scale of the space.
After some initial research, Ann-Marie decided on Noel
Dempsey Kitchen & Bedroom Design, dealing with designer,
David Dempsey. David was really good. He appreciated the room,
its character and scale and came up with my perfect scheme. I didnt
want the room to look like a conventional kitchen, more a furnished
space so I really didnt want wall cupboards. The larder is the only
tall piece of furntiure, which makes the most of the high ceilings
and all the other cabinetry is under-counter height. I love quirky
touches, such as the ladders propped against the wall. Keeping the
walls free of furniture allows for plenty of space around the island.
We had our daughters rst birthday here recently its such a great
space for entertaining.
Choosing a deeper handpainted nish for the island creates a
subtle colour contrast, while the limed oak island surface gives a
rugged nish in contrast to the Negro Anubis worktop to either side
of the range cooker. This room has the largest window in the whole
house, its south-facing and gives us the perfect place for cooking
and entertaining while the style of the furniture perfectly suits the
period of the house.
STAYED CHILLED
Rather than going for an integrated model,
Ann-Marie chose a stainless steel model.

fnish brings a contemporary element to
the scheme

Did Ann-Marie have her own set of
ideas for the kitchen design?
Yes, she had a very clear vision of
how the kitchen would look and
feel. It was essential that the design
respected the period features of her
home so she knew she wanted a
bespoke, handmade design. Ann-Marie
wanted the room to have a casual
and welcoming atmosphere that
would look beautiful, be practical to
cook in and have an inviting ambience
for entertaining. She had great vision
when it came to choosing colours
and fnishes.
What are the strongest design
features?
The island is such a substantial piece
of furniture and it was paramount
to get the dimensions just right. It
needed to suit the scale of the room
so this was carefully judged. The larder
is taller than standard height with the
top section devoted to glassware
storage. The detailed doors enhance

the traditional style of the design.
Although a timeless design, the room
has an of-the-moment look, with the
cup handles, mixing of materials and
muted colour palette.
Did you encounter any challenges
along the way?
The kitchen design and installation
went very smoothly with no hitches
or delays. The fact that Ann-Marie
had a specifc idea of what she
wanted, there were no grey areas
with the design and very little tweaks
or alterations were required. A
successful project that is very ftting
to its surroundings.

GRIND IT
Bean-to-cup machines offer the ultimate
professional style coffee experience. The beans are
ground in a way that allows the hot water to be
pushed through the coffee so that only the best
part is extracted, giving you the freshest, fullest
avour. With a fully automatic model, all the
work is done for you. Simply pour the beans into
the top, select your settings and allow the coffee to
brew. Look out for models that allow you to adjust
the settings to suit your individual taste so you
can select grinding levels, strength and quantity
of water per cup.
FULL OF BEANS
Freshness is the key to a good coffee so purists will
choose fresh coffee beans over ground. The oils in
roast coffee beans begin to evaporate immediately
after grinding, so using freshly ground beans is the
most effective way of making a rst-class cup and
capturing all the essence.
PRESSURE POINTS
The pivotal decision maker is the power of the
pump, which averages at 15 bar. A motor driven
pump forces water through a thermo block, which
heats it quickly, then forces it through the ground
coffee under pressure, usually between 10 and 19
bars of pressure.
TEMPERATURE GAUGE
Water temperature is paramount in the coffee
making process. While many machines offer a
selection of temperature levels to suit individual
preferences, the maximum water temperature
should be no more than 98C, otherwise your
coffee will taste bitter. The water should be hot
but not boiling where it would burn the coffee
and ruin the natural avour.

TOP TIPS
AVAILABLE SPACE
Its important to make sure the products
will ft into your designated space. Products
should be designed to ft into standard
cabinet widths so ftting should be no
problem. Look out for compact models
worth considering if you have limited space.
POWER SUPPLY
Your machine will need to be near a
power supply. Choose a model with a
water tank so you wont need to worry
about plumbing.
BEAN OR CAPSULE
Decide on whether you would prefer bean
to cup or a separate grinding function. If
you want maximum versatility, go for a
model that provides both options.
BUILT IN?
Consider your other built-in appliances
and try to create a balanced look in an
appliance wall. Where ovens are larger than
the coffee machine, balance the look with a
warming drawer beneath to
achieve symmetry.
We have seen a marked
increase in demand for our
built-in coffee machines in
addition to our freestanding
range. Its indicative of
the growing coffee culture
in Ireland. Mieles coffee
machines are designed to
allow the user to perfect their
coffee drink preference at
home and are the machines
preferred by the more
experienced coffee drinker,
due to the level of control
the user has in creating the
perfect cup of coffee.

ontemporary lacquer kitchens with their clean
lines and purity of form have undeniable
appeal, as do more traditionally inspired
designs with solid wood doors and dovetailed

plain to see the appeal of both very different genres.
This is where the classic contemporary design comes
into its own. Born from both the clean lines of the more
minimal designs and the timeless look of handcrafted,
painted nishes, the modern take on the traditional

sophisticated colour schemes and premium quality, these
modern classics are taking the kitchen world by storm.
Mixing genres allows you to add your own personality

all about achieving a balance. Chrome cup handles can

Today more than ever, especially in open plan
layouts, our kitchens are the soul of our homes
so what better reason to give them a comfortable,
furnished feel? Connecting with living and dining
spaces, kitchens are a huge part of family life
and actually really suit the furnished look that
complements our living and dining areas so well.
Rather than having a clinical conguration of
kitchen cabinetry, these modern classics introduce
a softer look. Whether its in work surfaces,
accessories such as lighting and bar stools or the
chalky, muted colour palette. Work surfaces with
tactile, leather or suede effect nishes are great
for softening a very linear, sharp looking kitchen.
Likewise, chunky cup handles and quirky lighting
gives traditional furniture an upbeat vibe.
Your kitchen, just like the rest of your home
should reect your personality and be as individual
as you are, so dont be afraid to experiment.
Mix it up a bit with contrasting colour, texture
and accessories and take your kitchen from
conventional to inspirational.

WARM UP WITH WOOD
If youre unsure of going for a fully
painted fnish, consider adding
texture and depth with woods
such as iroko, walnut or oak.
Whether you go for an oak top
on an island to contrast with a run
of quartz or choose wall cabinets
in walnut to offset painted base
units or a tall freestanding dresser,
theres no denying that these rich
tones add character.
ACCESSORISING IS KEY
Wall lights to defne a task area,
hanging pendants over an island,
bar stools at the breakfast bar, wall
clocks and candlesticks to dress
an overmantel, its these fnishing
touches that can make all the
difference. Be inspired by things
you see around you, tear pages
out of magazines of items you love
and look online for inspiration.
COLOUR PALETTE
Colour itself makes a huge
statement. Two contrasting shades
work well with a contrasting tone
used on an island or breakfast
bar. Consider how much of a
statement you would like to
make. Farrow & Ball Lamp Room
Gray on the main cabinetry
with Manor House Gray on an
island will achieve a beautiful
yet subtle contrast but if you
want to achieve dramatic impact,

ith the kitchen industry seeing a shift away from stark schemes
and towards more natural materials, soft tones and tactile n-
ishes, the introduction of warm metals, such as brass and cop-
per offers a rich toned alternative to the more conventional
cold counterparts, namely chrome and stainless steel. Over
and above cabinetry design, many of us strive for a kitchen that really stands out, with
huge importance placed on the nest of details. Handles, internals, worktops and cook-
er hoods all enhance the scheme, enriching the design and adding another dimension.
The striking polished copper handles in this bespoke design are showpieces in
themselves. Fitted to handpainted cabinetry in Peacock Paint colour, Scullery White,
these unusual handles, designed by Christopher, make a daring design statement.
Completing the scheme, the walls are painted in Peacock Paint, Cobblestone, the cus-
tom designed hood is polished nickel and the splashback behind the range cooker is
designed using Mother of Pearl tiles from Paris Ceramics. The work surfaces have been
nished using walnut and marble, with cabinetry internals also in walnut to enhance
the premium nish.
Inspired by Flemish country kitchen design, this Culinarium design leaves no detail
overlooked, with drawers lined in Edelman leather adding to the luxurious nish. The
shimmering Mother of Pearl splashback and statement canopy add stunning detail to
enhance the appeal of mixing materials, achieving a scheme that exudes style and per-
sonality while ensuring ultimate functionality.

STEAM
Steam ovens have became more and more popular in recent
years. Foods cooked in them retain more of their favour,
texture and colouring while the moisture from the steam
means the food doesnt dry out

n line with the healthy eating ethos, steam
ovens are really coming into their own
and are becoming a rm xture in new
kitchen installations. The rst generation
of steam appliances was a secondary
cooking appliance but as technology becomes
more sophisticated and the models available
become more versatile and varied, could the steam
oven be taking over from conventional models?
BENEFITS
Food cooked in a steam oven retains natural
avour and colour and more importantly all
its existing vitamins and minerals. Scientic
studies have proven that vegetables contain 50%
more vitamin C when cooked by steam than
by conventional methods, with no need to add
any additional salt, seasoning or cooking oils.
Steam ovens also benet from more even heat
distribution than standard ovens, and are great
for warming food up without drying it out.

HOW IT WORKS
The working principle of the steam oven is simple
and effective. A separate tank or water jug is lled
with just the right quantity of water. An element
heats the water and the resultant steam is then
injected into the oven cavity, gently surrounding
the food from all sides. Rapid heat conduction and
the consequent steaming process ensure exact, even
cooking and, with equal steaming power on all power
levels, guarantee time and energy savings compared
with cooking on a hob or in an oven.
WHAT TO COOK?
A steam oven cooks food such as rice, cous cous,
vegetables, chicken and sh beautifully. Its also
fantastic for risotto, allowing you to cook family size
portions with ease with relatively little washing up.
KEY CONSIDERATIONS
TRY BEFORE YOU BUY
If youre replacing an old kitchen, the
chances are you may not have previously
cooked with steam. If youre considering a
steam oven, ask your kitchen designer if they
have any working models on display in their
showroom this way you can try before
you buy. Some kitchen companies will refer
you to an appliance dealership where you
can beneft from a professional demo of the
various models. You may even get to taste
something freshly cooked with steam.
INTELLIGENT FUNCTIONS
Several multifunctional ovens now have
steam functions so take time to think
about how often you think you will use
this function. For the best of both worlds,
invest in one of each a single oven with
built-in steam oven. Compact steam ovens
are 45cm tall in comparison to the standard
60cm oven so why not also treat yourself
to a warming drawer to create a fush-ftted
linear, eye-level arrangement?
The Combi-Steam oven 400 Series
from Gaggenau has a fxed inlet
and outlet water connection. Five
humidity levels can be combined with
temperatures of up to 230C, meaning
that these ovens can do everything:
steaming, baking, simmering, braising,
regenerating, extracting juice, as well as
grilling and gratinating. Price on request

ith lifestyles becoming
busier than ever, families
generally accumulating
more stuf than ever
and with a rise in home
entertaining, our kitchens beneft hugely from
a little backup. Tere is of course the theory:
the more space we have, the more we use but
there are certain things that do ideally require
storage outside of the kitchen. What used to
be a ramshackle laundry room lean-to with
washing machine and clothes horse now
almost resembles a mini kitchen and gone
are the days of wellies gathering dirt in the
garage. Todays utility rooms and boot-rooms
are features in their own right, extensions of
the kitchen, an almost sub kitchen where large
items can be kept out the way with a place
quite literally for everything.
In an ideal world, the boot-room would be
situated at the back or side of the house. Return
from walking the dog, kick of your boots, hang
up your coat, the dogs leash and any other
baggage before walking into the kitchen no
more need for cluttering up the hallway or
leaving muddy foot or pawprints on the tiles.
Utility rooms are ofen ftted out with
cabinetry every bit as premium as the kitchen
furniture. With additional work surfaces and
space for washing machine and tumble dryer,
this designated space adds another limb to
your kitchen, a space where you can stockpile
large food items for parties, an overspill room
and an organised storage solution, separate
from the core of the house.
CONTINUE THE THEME
With both utility areas and boot-rooms, many
people choose to furnish these spaces with
the same cabinetry and work surfaces as their
kitchen. Tis is a matter of preference and
budget. In some instances these rooms lead
of the kitchen via an open door or walkway so
the preference for a continued style and colour
scheme may be greater.
MINI KITCHEN
Some utility rooms are quite literally a
miniature kitchen, with the same cabinetry,
ftted with an additional sink and storage space
every bit as efcient as a bespoke kitchen.
Flooring, paint fnishes, cabinet handles and
cabinetry internals can be inspired by and
replicated from your kitchen.

kitchen with an updated new design,
consider the possibility of upcycling and
reusing your kitchen to create a utility
room. Dated pine furniture can be painted
and given a new lease of life without
costing the earth. Where you may justify a
stunning quartz or marble work surface in
the kitchen, also bear in mind more cost
efective options for storage rooms.
TOTAL CONTRAST
It can be a popular choice to continue
your kitchen colour scheme into you
cloakroom or laundry room but dont
rule out the idea of introducing a colour
contrast. Tese relatively compact spaces
are the perfect place to make a statement
and experiment with colours and fnishes.

colour in the kitchen, why not test your
creative side in these storage areas to add
a fun or quirky feel.

Your collection of hand-thrown pots, cups and
teapots are striking in their simplicity. Is this pared
back aesthetic your signature style?
I have always been drawn to fairly minimal and
sparse forms, whether its a sculptural object or
something to be used. With the current collection
of studio pieces Im looking for honesty and a truth
in the material. Keeping the nish or the glaze sparse
highlights the slight nuances that tend to appear in
handmade objects. Ive never felt the need or desire
to decorate the surface and, as pieces evolve through
the design process, I pare them back to a pure and
minimal form.
As well as functional pieces such as tableware, do
you also design sculptural pieces?
Whilst studying for my Degree at the University of
Ulster I was interested in only producing sculptural
objects, with a focus on experimenting with the vast
amount of possibilities within the eld of ceramics.
After graduating I wanted to learn more skills, which
led me to apply for a course run by the Crafts Council
in Kilkenny, focusing primarily on throwing and
all of the traditional skills required for producing
domestic ware. I then progressed on to working as
an apprentice for a range of production potteries
throughout Ireland. I eventually got to the point
where I wanted to concentrate on my own designs
and decided to do my Masters at the University of
Ulster, focusing on producing sculptural objects that
were still wheel thrown, but would gradually lead to
ideas for producing functional pieces.
What is, or has been, your greatest design inuence?
I have numerous inuences such as mid century
design and the vast array of innovative production
during the Festival of Britain. I am also interested
in art movements such as the Russian and British
Constructivist artists. Im greatly inspired by artists
such as Ben Nicholson, William Scott and abstract
artists that fall under Minimalist and reductive
categories and theories. Im also interested and
inspired by early work produced by artists and
designers under the Bauhaus.
Describe the design & creating process.
I draw and keep sketch books. For me its a very
natural process of documenting, keeping and
generating ideas. I also research and visit museums
such as the Victoria & Albert Museum and have
previously spent time in Helsinki and Copenhagen
building up a body of research such as sketches and
other forms of documentation. Ideas tend to spring
from numerous sources, whether its a piece in a
museum, a sculpture, a painting, or sometimes it can
be a particular process that I nd interesting.
What materials do you work with?
The tableware is made out of porcelain and has a
celadon glaze achieved through a reduction ring.
After experimenting with different clay bodies, I
was drawn to porcelain due to its inherent qualities
its translucency, strength and whiteness. Its a
challenging material to work with as it tends to
warp during the ring process, but Ive grown to
appreciate all its qualities. The sculptural work is
predominantly made out of a stoneware body. These
pieces tend to be cut and altered at different stages of
the drying process; stoneware clay tends to be much
more forgiving with complex methods of making.
The sculptural pieces have an engobe nish; this is
a layer of coloured clay thats painted on and then
re-red and layers are added until the desired quality
of nish is achieved. All of the work is thrown on a
wheel in my studio.
What in your opinion constitutes good design?
I guess we are currently bombarded with objects due
to cheap manufacturing processes. I feel that objects
that hold value, honesty and a truth to material and
processes constitute good design.
Where can your ceramics be purchased?
Do you do commissions?
Most of my work can be purchased in my galleries
in London such as Contemporary Ceramics in
Bloomsbury or more recently the Paul Smith store
in Mayfair. Im also stocked in The Conran Shops in
London and Paris and a few other galleries in different
countries. My work can also be purchased directly
from my studio in Belfast. I have previously worked
on commissions, but more recently its much more
difcult to dedicate the time to private commissions.
Whats next for Derek Wilson Ceramics?
At the moment Im working towards a range of
upcoming exhibitions at galleries such as at the
Ruthin Gallery in Wales. I also have exhibitions
coming up in Dublin at the Farmleigh Gallery and
Gallery SO. I have just shown some new studio
production pieces at the London Design Festival
this September. Over the next few months I will be
developing some new sculptural pieces and Ill also
be designing a new production range with the aim to
employ and train other people to produce.

INTERIOR
Its that time of year again when the leaves on the trees
change from fresh greens to the warm hues of autumn,
and thoughts turn from crisp summer colours to rich
tones and tactile fnishes. Lindy Clarke of Thompson
Clarke Interiors captures cosy autumnal ambience
DESIGNER ADVICE
With just a few alterations, its easy to update
your interior in harmony with the changing of
the seasons.
Interior design mirrors fashion trends. So,
in the run up to winter its quite simple to make
subtle changes to our interiors by adding
warm shades and textures to create
an eclectic feel. Accessorise
with blankets or throws,
perhaps some knitted cushions the key is to using
contrasting textures with a touch of autumnal colour
think burnt oranges and reds in a combination
of velvets, wools and silks. Bold notes of crimson
and burgundy have been dominating the trade
shows. At Thompson Clarke weve extended our
collection of ikat cushions by introducing a strong
red colourway, mixing it with some muted grey
tones and off-whites. The cushions are very striking
a simple and very effective way to add instant impact
and update the ambience of your living space. Another
on trend look for the season sees a departure from this more
obvious autumnal palette.
Blues, greens and aquas
are also coming through
in fabrics, accessories and
wallpapers. These colours
are subtle and reect nature,
featuring glints of gold with
painterly prints on some of
the autumn/winter fabric and
wallpaper books.

a very effective nishing touch. A

often go to the bottom of the list
when planning a project or pulling

Alternatively, wenge or other such
dark woods are great options if youre

black can look gothic! If balanced well

demand, there is a tendency to shy
away from colour but, in the same
way as using a dramatic dark colour,
so long as you strike a balance, a
splash of colour can really bring life
to a room. Grey with a splash of zesty
yellow or duck egg blue in a neutral
room can be all you need to bring out
an accent colour. Colours featured in
your blinds can then be picked out to
dene a theme; take one colour and
carry it through in accessories vases,
fruit bowls or cushions and before you
know it, youll have an effortless yet
coordinated look.
ROLL WITH IT
Roller blinds are a very practical, low
maintenance option. Their clean lines
complement modern architecture and
contemporary interiors with their
streamlined fuss-free nish. Roller
blinds are made using a stiffening
process to give them their strength
and durability and are available in
blackout, moisture resistant and
thermal insulating fabrics.
WHEN IN ROME
Roman blinds can be made using
most medium to lightweight fabrics.
Folding elegantly to open and
graciously unfolding to provide
privacy, this style is classic with a
more tactile and softer look than
roller blinds. These can also be lined
with a blackout fabric and are really
effective when made in linen and
other textured fabrics. Classic stripes
and feminine orals looks fabulous as
Roman blinds.
SHUTTER-EFFECT
Available in various colours and wood
nishes, Venetian blinds are versatile,
giving a neat nish and suited to
both traditional and contemporary
interiors. Dark wood options add
dramatic impact and look particularly
striking against a crisp white wall.

BAKING
celebrity
Food stylist to TV chefs and celebrities, Sharon Hearne-Smith
channels her years of experience into her very own debut
cookbook No Bake Baking
These impressive no-bake brles
make for a handy, stress-free dinner
party dessert as they can be made
24 hours in advance. You can set
the brle mixture in shop-bought
chocolate cups or 125ml ramekins,
pretty glasses or teacups for a
speedier pud.
crme brle:
2 gelatine leaves
300ml Irish cream liqueur
250ml double cream
250ml whole milk
8 large egg yolks
75g caster sugar
2 tbsp cornfour
1 tsp vanilla extract
chocolate cups:
400g dark chocolate (at least 70%
cocoa solids)
to decorate:
250g Hazelnut Praline
1 tsp cocoa powder
essential kit:
12-hole muffn tin
10 paper muffn cases
Soak the gelatine leaves in a small
bowl, with just enough cold water to
cover, for 510 minutes until soft.
Pour the cream liqueur, cream
and milk into a large, wide saucepan
and slowly bring to the boil over a
medium heat. Meanwhile, beat the
egg yolks, sugar, cornfour and vanilla
extract together in a large jug until
smooth and well blended. Remove
the cream mixture from the heat
as soon as it comes to the boil and
gradually pour it into the egg mixture,
stirring all the time. Return the whole
lot to the saucepan and bring to a
gentle simmer over a low heat, stirring
constantly until thickened enough to
coat the back of the spoon.
Remove from the heat. Squeeze
the excess water from the now
softened gelatine and stir into the
mixture until dissolved. Pop a piece
of cling flm directly on the surface to
prevent a skin from forming and leave
to cool completely.
To make the chocolate cups:
line the muffn tin with the cases.
Snap the chocolate into a medium
heatproof bowl and melt either in
the microwave in 30-second blasts,
stirring between each go, or over
a pan of simmering water, shallow
enough that the water doesnt touch
the bowl. When melted, stir and
remove from the heat.
Spoon a tablespoon of melted
chocolate into a paper case and
use a small brush to spread it from
the bottom up the insides to coat
completely. Repeat with the other
nine. Three-quarters of the chocolate
should remain so set this aside for
now. Pop the muffn tin in the freezer
for 20 minutes, until the cups are set.

Describe a typical day in the life of Sharon Hearne-
Smith no two days are the same Im guessing?!
No two days are the same indeed! That is one of the
really great parts about my job. While sometimes
it can be stressful juggling all of the balls, it is very
exciting to work on such a variety of things each
week. I spend a lot of time food shopping, prop
sourcing, carting kitchen equipment around and
prepping and styling food on shoots. It is hard work
but very rewarding when you see what everyone
has achieved by the end of the day. I get to meet
and work with a diverse range of very talented and
passionate people. I then also look forward to slightly
calmer desk days where I recipe write, plan the next
lot of jobs and catch up with the dreaded accounts.
How do you balance your career with family life?
This is always a concern for freelancers as the
timing of and type of jobs you take on can be so
unpredictable. After my little girl Pearl was born I
took it one step at a time, gradually building up my
working days from one day a week to all systems go
again. Now, although I have Pearl two days a week,
I juggle my work around. She makes for a great little
shopper and kitchen helper. I used to feel guilty
about dragging her around sourcing and to meetings
but actually at least we are spending time together
(and she will have had a great training in the industry
by starting school age!). Obviously, its hard to get a
chef interview
huge amount done with her in tow, so I make up my
work in the evenings and on weekends. Then its just
ngers and toes crossed for no sudden illnesses and
we seem to sail along nicely!
What do you do to relax?
Sleep! Im a terrible musical or movie date once I sit
down, Im out like a light. After the madness of work
and family life I do just love some peace and quiet.
Im a sucker for massages and have regular reexology
treatments to bring me back down to earth. I would
happily go off for a few days on my own to clear the
headspace and recharge.
Whats next in the pipeline?
I am very excited about what lies ahead as I steer
my career in a slightly different direction. I have
lots of upcoming TV cooking appearances and am
working on ideas for a second book. From back in
my Home Ec. days Im still head over heels with
all things interiors, craft and fashion and so hope
to branch more into those areas. My new website -
sharonhearnesmith.com will keep you updated with
my goings on and give you a taster of whats to come!
I will be No Bake Baking at two demos, answering
questions in the VIP lounge and book signing at this
years BBC Good Food Winter Show in Birmingham
on Friday November 28th. Hopefully see you there!
sharonhearnesmith.com
Youve just launched your rst cookbook in June
congratulations! Is this something youd been
planning for quite some time?
Thank you! I d always dreamt of one day doing
my own book but I was so busy working on other
peoples that it seemed like I would never have the
time to take the plunge. For the rst time in my life
I had to say no to a job, as it meant moving back
to London for a few months, which I just cant do
now as I have a little girl Pearl, whos 3. Instead the
publishers, Quercus, asked if Id like to do my own
book and I bit their hands off!
No Bake Baking this is a fun concept, especially
for those with kids who like to get hands-on. Is this
one of the reasons you decided on oven-free recipes?
Initially I didnt have a kids book in mind, it was
more the idea of trying to be creative in putting a
different twist on baking. It turned into a fun book,
full of easy and novel ideas perfect for baking novices,
for hot summers when we cant bare to have the oven
on, for experienced bakers interested in new ideas
and of course No Bake Baking is perfect for kids.
Has food and cooking always been a huge passion?
Yes, I grew up surrounded by food as I lived above
my familys restaurant, The Lobster Pot in Carne,
Wexford. I began working in the kitchen from a very
young age where I was apparently great at making
food look great on plates! Besides food, I have a huge
love for all things interior, fashion and crafts and
so relished my B. Ed. degree in Home Economics.
The course gave me a great grounding for all of the
basics in food preparation. I then moved to London
for my rst teaching job but knew I wanted to work
in something to do with food magazines. On my
summer holidays I was lucky enough to go on work
experience with BBC Good Food Magazine and with
freelance food stylists and suddenly my whole world
opened up to me. Needless to say, I rang school and
said I wasnt coming back! I worked as a freelance
assistant for about 3 years on everything from movies
to food packaging, TV cookery shows and cookbooks
and I was gripped. I learnt a huge amount about food
in my London days where I cooked everything from
baby purees to Michelin star food.
Have you worked with many celebrity chefs?
Yes, Ive worked in the industry for about 17 years
now and have been lucky enough to cook with and
learn from lots of the big names in food in the media.
I worked on Ready, Steady, Cook for over 10 years
and have worked with Jamie Oliver, Gordon Ramsay
and Gary Rhodes. I got to travel to The Hamptons
to work with Ina Garten on four of her Barefoot
Contessa series and currently I work with Lorraine
Pascale on her cookbooks. Ive worked with Neven
Maguire for about 12 years now on all his books and
TV shows and Ive worked with Rachel Allen also.
TV chef, Donal Skehan did the photography on
your debut book. How did this come about?
Donal and I have worked together for about 3
years now, where Ive styled for his latest cookbook
Homecooked and his magazine Feast: A Dinner
Journal. I was delighted when he was so enthusiastic
about photographing my cookbook. Not many
people realise he is actually also a very accomplished
photographer, shooting all of his own food. Besides
that, he has been a great, encouraging and positive
force behind me for which I am very grateful.

These go down a treat at any party,
whether the room is full of kids or grown-
ups. Theyre perfect for afternoon tea
or make a welcome addition to a picnic
hamper or lunchbox. Theyre also gorgeous
as a gift. The cases can be prepared and
flled ahead of time, leaving you just the
fnal fourishes to add at the last minute.
Makes 12
75g unsalted butter
100g digestive biscuits
3 tbsp shelled green pistachios
100g white chocolate
50ml double cream
Seeds scraped from 1 vanilla pod
12 fresh raspberries
Essential kit:
12-hole mini muffn tin
12 mini paper muffn cases
Line the tin with cases, and line a small tray
with parchment paper. Melt the butter in
a large saucepan over a low heat. Blitz the
biscuits and 2 tablespoons of the pistachios
in a food processor, or seal in a food bag
and bash with a rolling pin, until you have
fne crumbs and fnely crushed nuts. Stir
into the melted butter to coat well, and
divide evenly between the cases. Press
the crumbs frmly into the base and up
the sides, cover with cling flm and chill for
about 1 hour, until set frm.
About 15 minutes before the cases
are ready, prepare the flling. Snap the
chocolate into a medium heatproof
bowl and add the cream. Either melt
in the microwave in 30-second blasts,
stirring between each go, or over a pan
of simmering water, shallow enough that
the water doesnt touch the bowl. Once
melted, stir until smooth and add the vanilla
seeds. Leave to cool to body temperature.
Use the tip of a pointed knife to lift
the tarts carefully out of the tin. Gently
peel the paper cases away and arrange on
the tray. Spoon the flling equally between
them and chill for 15 minutes or until the
flling is set. These can be prepared a day
in advance.
When ready to serve, arrange on a
pretty tiered cake stand. Sit a raspberry,
pointy side up in the centre of each one.
Roughly chop the remaining tablespoon of
pistachios and scatter over.

Baked Alaska is always a showstopper and this is
no exception. The cakey texture of the ice-cream
sandwiches will have people baffed as to how you
made it without an oven. You can fnd ice-cream
sandwiches in many supermarkets. The meringue
layer here is toasted rather than fully cooked its
totally delicious but not suitable for very young
children, pregnant women or anyone frail.
750ml Mint Ice Cream
8 100ml rectangular ice cream sandwiches
5 egg whites
275g caster sugar
1 tsp white wine vinegar
tsp peppermint extract essential kit:
900g loaf tin (about 23cm 10cm or roughly twice
the length and width of your ice cream sandwiches)
Heatproof and freezer-proof serving plate (slightly
longer and wider than the loaf tin)
Food mixer
Piping bag with plain 1.5cm nozzle or disposable
piping bag snipped to this size opening
Blowtorch or grill
Allow the mint ice cream to soften until easily
spreadable. Meanwhile, line the tin with a double
layer of cling flm, allowing a 10cm excess to hang
over the edges. Once soft, spoon the ice cream into
the tin, compact it down and spread it out evenly
with the back of a spoon. Cover with the excess cling
flm and freeze for 12 hours until frozen solid. This
can be prepared up to a few months in advance.
When ready to assemble, lay two ice-cream
sandwiches beside each other at one end of the
serving plate, with the rectangles pointing in the
same direction as the plate. Follow with another two
sandwiches on the other half of the plate. Unwrap
the frozen mint ice-cream block and sit it on top.
Arrange the remaining four ice cream sandwiches on
top of that. Cover and return to the freezer.
Whisk the egg whites in a food mixer until
soft peaks form. Gradually add the sugar in stages,
continuing to whisk. Add the vinegar and peppermint
extract and continue to whisk until really stiff and
glossy. Spoon into the piping bag you may have
to refll once or twice. Pipe meringue peaks in neat
rows all over the sides and top of the ice-cream loaf.
Alternatively, simply spread it on with a palette knife,
creating whatever pattern you like.
Use a blowtorch to brown the meringue all
over or toast briefy under a hot grill. Serve at once,
decorated with pretty bunting if you like. Cut into 10
even-sized slices. This is best done with a long sharp
knife, dipped in boiling water and wiped dry between
each cut. The meringue doesnt freeze well so this is
best eaten on the same day.

EXTENSION
contemporary
architectinsight
192 | decor-living.com
Architect Paul Moore of McCann Moore Architects has created
a unique industrial-inspired extension to a 1930s semi-detached
in Belfast. Ciara and Philip had already renovated the existing
footprint of their charming 1930s semi when they approached me
to design a contemporary open plan extension to the back of the
house, linking old with new.
Retaining the character of the original dwelling, their brief
was for a linear extension with lots of light and plenty of space for
an open plan kitchen with dining and living area and also including
a separate utility area and w/c. Ciara and Philip both have a great
passion for interiors and share a very cool and quirky interiors style,
so this was a very rewarding project to be involved with.
The old kitchen, pantry and coal shed jutted out the back
of the house with a garage to the other side. The garage was
demolished to create space for the open plan kitchen and living area
while the original kitchen footprint was transformed into a dining
space connecting the existing dwelling with the new extension.
Rather than going for a conventional sunroom style
structure or the other extreme, a clinical white box, Ciara
and Philip wanted to incorporate the warmth and texture
of wood and concrete to achieve a raw yet inviting scheme.
This connection between old and new was very important, as
was retaining the integrity of the old house. Featuring a huge
frameless kitchen window onto an inner courtyard, frameless
glass roof-lights, enormous glazed doors, a chic German kitchen
against a backdrop of reclaimed timber cladding and polished
concrete oors, this is an architects dream!
