550 acres on both the east and
west sides of Paso Robles, where
it grows about 20 different vari-
etals. And Niels and Bimmer
own a winery in San Miguel, a
few miles north of Paso Robles,
which is also leased by a couple 4
of larger wineries for custom
crush services.
“We took the backwards
approach to owning a winery,”
Niels says. “We started with the
product, slowly bought equip-
ment, opened a tasting room,
and eventually bought the
winery site, planted grapes and
purchased existing vineyards.”
The approach has proved
successful and, yes, sustainable.
Castoro has also developed a
niche as one of the premier year-
round music venues on the
Central Coast, with both indoor
and outdoor concert facilities.
Just as the winery itself boasts a
diverse lineup of varietals that
include unusual blends and
obscure grapes, the roster of
musicians booked at Castoro
offers an array of styles and
genres.
In January and February
alone, for example, guests can
hear performers ranging from
traditional folk to a world music
ensemble.

The Castoro Cellars tasting
room is located just off Highway
46 West at 1315 North Bethel
Road. Visitors get three compli-
mentary tastes, or can sample
seven wines for $3. The fee is
waived with the purchase of a
bottle. The tasting room is open
daily from 10 a.m. to 5:30 p.m.

You have to wonder what Old Timers would say when they
saw the word “The Way Station” emblazoned on the outside of
this handsome restored building in the middle of Cayucos just

Where the Wine Speaks for Itself
Longtime friends Craig Shannon and Marco Rizzo shared many
meals filled with conversations of one day making wine together.
Craig, a third-generation vineyard manager, had mastered the art of
growing grapes and knew it would translate into crafting a superior
product. Marco, owner of Café Roma, knew it would be a successful
partnership and a perfect fit for the restaurant. They both agreed on
the fundamental idea of pairing the best possible fruit with solid
winemaking in order to produce wines of distinction. Marco’s child-
hood of reading comic books in Italy gave him an idea for the label.
Perbacco is a northern Italian phrase used to describe an unex-
pected surprise but it literally means “for Bacchus,” the Roman god
of the vine.
Visiting the tasting room, which is located inside the winery, can
truly demystify the winemaking process as well as provide the best
tasting room experience in the area. The goal is to provide a unique
and educational tasting experience while escaping from the hustle
and bustle of a larger winery. While the wines are superior, you will
not find fancy window dressings to impress the crowds; instead,
they leave that up to the wine. At certain times of the year you can
taste their award-winning Pinot Grigio out of the tank along with
an informal tour of the winery.
Currently, Per Bacco Cellars produces Pinot Grigio, Chardonnay,
Pinot Noir, Syrah, Petite Sirah and a late harvest Zinfandel Port. The
Dionysus Pinot Noir is a Barrel Select Reserve and has consistently
rated the highest of their wines.
Per Bacco Cellars is located at 1850 Calle Joaquin Road in San

members receive free tastings and quarterly wine shipments, which
include unique bottlings available only at the tasting room.
Costa De Oro Winery is the off-shoot of parent company Gold
Coast Farms, located in Santa Maria. Founding members Ron Burk
and Bob Espinola, began farming in 1978, growing a variety of crops,
including strawberries, cilantro, broccoli, spinach, cauliflower and
sweet corn. However, on a bluff at Fuglar’s Point, where the soil proved
to be poor for vegetable growth, Ron and Bob decided to try wine
grapes. It was a wise and profitable decision. The well drained, sandy
loam soil, although difficult for vegetable production, was perfect for
wine grapes. So, in 1989 Gold Coast Vineyard was planted with
cuttings from the prestigious Sierra Madre Vineyard. Today, 20 acres of de Oro continued to grow, reaching 2500 cases in the year 2002. At

Exhibition runs through January 31
Robertson’s first show at Carina Cellars’ Los Olivos Tasting Room
was such a success last year that she is back again to display a new
selection of her beautiful watercolors. A Santa Barbara resident for 31
years, Robertson’s watercolors display a range of landscapes, still life
portraits, animals and California historical landmarks. “I’m not a one-
dimensional artist; I’ll paint just about anything I can get in front of
me and so my exhibits tend to be comprised of a little of everything,”
Robertson said. “It makes it more fun for me, and hopefully, more fun
for the people who come to see it.”
Robertson first discovered her love for watercolors when she took
an adult ed class with her son several years ago, and from that
moment she knew she was hooked. After that class ended she
continued to take several more classes and has read through

Simply using organically grown grapes wasn’t enough for the
creators of Casa Barranca Winery. They also took great lengths to
utilize the natural features of the land to help them create great wine.
“Our winery facility is the first certified organic winery on the Central
Coast. It was converted from a century-old subterranean stone water
cistern, which we excavated 15 feet down one side, and cut through
two feet of stone wall to gain access.In building the tiered shelving
system in the winery for our gravity racking protocol, we used local
craftsmen who employed Old World skills like “mortis and tenon,”
and “scarf joinery,” and who finished the walls in a “board and batten”
style. Our press “hopper” (the funnel we use to dump the fermented
grapes into the press) is crafted of oak and is inspired by Greene &
Greene design. Both the estate and winery draw their water from an
artesian spring and are powered by solar energy.”
Even their day to day life reflects the simplicity of the arts and crafts
movement. “We sweeten our day with honey from our apiary. We get
sustenance from our organic orchards and vegetables gardens which
are pollinated by our Italian honeybees. And we end our day with the
evening family meal, a sunset over the fertile Ojai Valley, and a glass of
our handcrafted boutique wine.”
While the home is not open for tours at this time, the folks at Casa
Barranca tasting room in Ojai invite you to come and enjoy the bounty
