Welcome to the Cinco de Mayo edition. This month
our food and tequila features, local profiles and travel piece all salute that culture which first challenged
our coastal skylines with white, gleaming missions.
The longstanding link between Mexican influences and the
Golden State is still strong. As famed chef, traveler and pathfinder Anthony Bourdain once pointed out, Lets be really, painfully
honest: Who is cooking? Who is the backbone of the American
restaurant business? Who, pound for pound, are the best
French and Italian cooks?
Mexicans, Bourdain writes, and everyone in the dining industry knows it.
I get enough behind-the-scenes access to the regions most
lauded restaurants to know hes not wrong. And even beyond
what you dont see at Nor Cals mouthwatering steakhouses,
Mediterranean restaurants and elevated pub epicenters, a number of Chicano chefs have stepped out to put their own mark on
the regions eating alchemy. Think about the searing flavor-flare
Chef Ryan Rose has brought to us with Zocalo. Or how about the
way Chando Madrigal has knocked area foodies back on their
heels with the purity of his Michoacan street food?
And the connection goes well beyond food. For me, its been
an obsession with storytelling: It starts with the writing of Mexicos Octavio Paz, whose tale My Life with the Wave is an aching
reflection of love concussions on the beach, woven with prose
so filled with sensually ephemeral images and softly exhausting
symbols that they melt one to the core. And it was on the Mexican island of Cozumel I first discovered the writing of the Columbian master Gabriel Garcia Marquez, whose word wizardry
opened for my imagination a doorway to all of Central America.
Even translated, the way Marquezs Love in a Time of Cholera
lived and breathed on the page was staggering. Glancing around
the sights and smells the Caribbean, I understood the visceral
power of this authors orbit and how perfectly hed captured
those balmy night breezes, the slow, tipping turns of the palm
leaves, fading, sun-cracked plazas. Like Paz, Marquez is remembered for his ability to play with our perception of reality itself.
Their poems and stories still feel like painful bridges between
jungle myth and hard human emotion.
One of Marquezs most famous opening passages describes
a suicide by gold cyanide, which he recounts in a way thats
timeless in any language: It was inevitable: the scent of bitter
almonds always reminded him of the fate of unrequited love.
And Central America, especially Mexico, has a vibrant love for
life that continues to drench California to the core.

MarQueen takes
the worry away for
four-legged friends

MarQueen Pet Emergency and Specialty


Group is growing:
What was a small,
14-hundred-square-foot
clinic with one doctor
and two staff members
a year ago is now bursting at the seams a
bustling animal medical
center with 10 doctors
and 15 technical and
administrative support
employees. Co-founders
Rick Miller and his wife,
Dr. Erica Queen, are now
moving the operation
into a much larger space.

e needed more room to better provide for our patients


and the logical thing to do
was expand, Miller said. And fortunately, we had an empty space next door,
which eliminated the logistic nightmare
of moving elsewhere.
When the new MarQueen clinic is finished, this state of the art facility on the
border of Granite Bay and East Roseville
will be more than 5,000-square-feet and
feature pet treatment options that include
cardiac care, oncology, surgery and physical therapy.
According to Dr. Queen, the clinic
came to life after she and her husband

grew weary of the long hours their separate careers were demanding. The couple
missed spending a lot of time together.
Miller was working in finance. Queen
was following her calling for veterinary
work. Both were logging very long hours
on different schedules. When they finally
decided to merge Millers business acumen with Queens medical expertise,
they knew they were on the verge of having a perfect solution.
Now we work long hours together,
Miller explained with a chuckle.

who are experts in their field. While general care is available at the center, Miller
stressed the technological advances it
embraces sets it apart.
Years ago, there was only so much that
could be done by a veterinarian, he observed. But now more specialized procedures are readily available to people looking for more detailed care for their pets.
MarQueen veterinary roster includes
pet surgeon Dr. Peter Walsh, a leader in
his field, Dr. Deb Morey, an emergency and critical care specialist (think an
ER doctor who treats life threatening
conditions), Dr. Lori Siemens, a pet cardiologist and Dr. Marilyn Koski, an ex-

pert in physical therapy for animals that


are comfortable with both eastern and
western methods, from acupuncture to
cold-laser therapy. Koski is also a certified rehabilitation therapist.
Miller said customers have been impressed with the entire team. One pet owner was especially thankful to Dr. Walsh.
A local author was so impressed with
(Walshs) skill and bedside manner that
she named a character in one of her
books after him, Miller remembered.
As co-owner, Dr. Queen equally passionate about her work and says it a threat
that she and Miller have in common.

Our clients (both human and furry)
are everything to us, Queen emphasized.
And we strive to give them the very best
care possible.
Along with a breadth of care options,
the clinics equipment from digital
imagery to diagnostic is also state of
the art. Most of its lab work is sent to the
renowned vet services at UC Davis, an
international leader in animal sciences.
Even more important in an emergency,
MarQueen Pet Clinic is a 24-hour facility.
However, its in-patient services mean the
doors are locked between midnight and 8
a.m., and people rushing over with a pet
in trouble should call first for notification.
The clinic is always staffed with at least
one veterinarian on duty, along with one
technician or pet nurse.
Our staff can triage the situation over
the phone and make recommendations
from there, which allows us to maintain a
level of care for our inpatients and prepare
for incoming cases, Miller explained. This
is one of the finest teams of veterinary professionals out of the UC Davis Veterinary
Medicine Teaching Hospital.
As for Queen, she finds
her own inspiration to help

animals from figures such as the world


famous researcher, author and conservationist Jane Goodall. Goodalls revolutionizing work with chimpanzees set a new bar
in the sciences, and Queen was thankful to
finally meet her role model at a Bay Area
award. Queen wasnt disappointed, finding Goodall very humble.
She was so genuine and she shared a
simple piece of advice; she told me to follow my dream, Queen recalled. And so far,
I have and it has been very rewarding.
The meeting inspired Miller and Queen
to start taking part in Goodalls Roots and
Shoots program, which gets young people involved in animal welfare and environmental conservation.
Another luminary who Queen and Miller have had the fortune to be acquainted
with is Dr. Kevin Fitzgerald from Animal

Planets TV show, Emergency Vets. Fitzgerald paid the Granite Bay clinic a visit
told the couple he was impressed.
Dr. Fitzgerald is a passionate guy and
liked what he saw here, Miller remembered. He is a big proponent of specialty
medicine for animals.
When MarQueen Pet Clinic finishes
its new expansion there will be a total of
eight exam rooms to assist in that kind
of specialization, as well as an expanded
lobby with refreshments and new spaces
for surgery and diagnostics. The target
date to finish renovations is June 1.
We do a heck of a lot in a small space
right now, Miller said. But this expansion is not only going to give us a little
more room to move, it is going to improve
our ability to keep providing world-class
service to our patients.

equila. Its the ageless elixir of agave, warming spirits since the days
when Aztecs fermented Pulque
sap and Spanish conquistadors brewed
Mezcal in dried pyramids of mud. Wrung
from spiky, prehistoric-looking vegetation, tequila has been a southwestern
blessing mystery and desert fortitude
in a glass.
There are countless legends around
how the modern margarita was born.
Some claim it was created on a blistering
day in Ensenada to impress an ambassadors daughter. Others swear it was first
mixed in a hotel outside Rosarito to captivate a dancing beauty. Divergent myth
holds the cocktail was a tribute to the
1940s jazz singer Peggy Lee, who caught
the eye of a Mexican-American bartender on the border town of Galveston. Perhaps the strangest tale around the rise of
the margarita involves a hard-drinking,
exiled Irishman living in Tijuana during
U.S. Prohibition.
Whichever history is true, tequila continues to be considered a candy-touched
shot of gold, a true treasure of the Sierra
Madre and the liquid heart of the margaritas cascading freshness. In the Granite Bay area, a handful of bartenders are
veteran masters of Margaritaville.

Cabos
Granite Bay

Cabos is a classic hideaway by the lake,


made even more transporting by its Hacienda faade, straw cantina top and the
piercing Pacific blue colors in its dining
room. Storm shutters and a fishing boat
suspended from the ceiling enhance
the escapism: From wooden parrots to
Nuevo Mayan art, this well-established
restaurant has all of the little touches for
a perfect sunset of margarita drinking.
The shelves at Cabos bar are stocked
with tequila options Don Julio, Lunazol, Tres, Cazadores and each is
ready to be infused into a slushy, citrus-popping margarita. The Cabos house
blend is made with Suaza Giro Tequila,
which brings out smooth, sour touches
and a lime-bright sweetness.
Flavored margaritas are also a mainstay at Cabos, served in peach, strawberry and melon incarnations. The peach
selection has gained notoriety for its sugarcane sleekness and the crisp, cooling
effect it has against Cabos popping salsa: As with all of the house specials, the
peach essence is lightly accented
by an edge from the Suaza Giro.
Cabos strawberry margarita
is another hit, as its smoothly acidic undertones pull out
the berry taste with a biting,
honey-sweet finish.

But for fans of the traditional margarita, the fruit flavors can be set aside for
Cabos authentic specialty, the Margarita Perfecta. Blasted with Suaza Hornitos
Anejo Tequila, this mix is gliding citrus
satin in a glass, bolstered by calm sour
clicks and a dash of salt accents. Its the
margarita that can instantly transport
one south of the border.

Folsom, near the Granite Bay border

Bartender Danny Burlando has a genuine appreciation for artisan, hand-crafted margaritas. Located just three miles
from Folsom Lake, El Pueblo has established a following around splashy and
vibrant dishes that include chili relleno,
tomato salad with cilantro pesto and

with the La Paloma Margarita: The mix
uses ruby-red grapefruit as it main ingredient. The Tamaulipas region of Mexico
has some of the best grapefruit-growing
farms in the world, and Burlandos La
Paloma can be seen as a tribute to that,
swirling a Caribbean fruit centrifuge
with the award-winning character of El
Tesoro tequila. Everyone at El Pueblo
also makes sure this particular flavor
medley is served with a rim of rock salt
on the glasss lip.
Burlando and his team have also proven they can push the envelope of creativity, elevating the idea behind the margarita to something a little more cutting, like

he sign on the door says homemade food, and the homeland


invoked is Guanajuato, a terrene
of brushy mountains, deep silver mines
and raging arts festivals that channel
energy under cracked, colonial architecture. Its a true Mexican heartland where
the fusion of indigenous ingredients and
Spanish influences has had 500 years to
evolve into culinary fame.
El Pollo De Oro in Granite Bay has built
a following around its Guanajuato-influenced food, and while every option on
the menu has fans, there is little denying

the popularity of how its cooks prepare


their array of pork dishes showing a
mastery of that moist staple of smoky
kitchens from Salamanca to Len.
There are hints to Guanajuatos jubilant style everywhere in El Pollo De Oro.
A massive Mexican flag is draped across
its dining room like a ships sailing mast,
striking red, white and green over the
stone tiles of the cantina. Dolls in Folkloric dancing dresses line the walls. An
embroidered fiesta quilt is framed in
the corner. The welcoming atmosphere
has already lured in a number of writers

poultry dishes, which are served tender
and tempting, highlighted with a subtle
dash of lime. Chef Federico Hernandez
has also earned accolades for his beef fajitas, softly diced and covered in a sauce
punctuating mild summer spices with
the white wine sweetness of seared onion and salt.
The food is definitely inspired by
cooking in Guanajuato, said Mario Medina, manager and head waiter for Hernandez and owner Luz Hurtado. Weve
been here, in Granite Bay, cooking this
style for six years now.
But if there is one cuisine category
where locals say El Pollo De Oro really
stands out, its the kitchens flavorful take
on pork in four different menu items.
One is Cochinita Pibil, a slathering of
slow-roasted, delicate strings of pig meat
soaked in a light crimson sauce of tangy
acidity and smoky paprika notes. The
dish is colored with long slices of fresh
avocado and it pairs well with El Pollo De
Oros carbonated beer margaritas.
Another sought-after plate from Hernandezs cooking arsenal is the Chili
Verde with pork. The concoctions green
Tomatillo topping is sharply cloying with
sour pepper touches, cut with searing
nuances and mixed as a subtle stew of
spices and cilantro hints. Its a Chili Verde
with the same smacking zest thats alive
in the restaurants signature Pico de Gallo served fresh on the side.
And while Hernandez and his team
also put out a straight Carnitas plate,
pork lovers can double down on the
idea by ordering the big, bursting Carnitas burrito. Its topped with one of
the restaurants bronze-colored sauces,
mustering lively tomato hues over a nice
base of piquant undertones. The sauce
enhances the burritos grilled pork bits,
which have a clean freshness that prove
Hernandez doesnt over-season meat,
instead trusting the essence properly
gilled pork to speak for itself. Keeping a
California touch, its a burrito that uses
rice, guacamole and sour crme to hit
those grilled textures with an old fashion flavor infusion.

The Arellanos represent dozens of regulars that Medina, Hurtado and Hernandez
have gotten to know through cooking.

t might seem unlikely that a mortgage


broker would create salsa recipes that
people are demanding by the caseload,
but since jumping into the game of brewing chilies, tomatoes, cilantro and onions
together, Granite Bays Sean McMenamin
has conjured up a popping, spicy salsa
line thats nearly gone viral.
The salsas surprising popularity is now
causing McMenamin to morph from a
home cook to a commercial producer.
Hes even starting to dream of the time he
might give up his day job in the lending
business to commit himself exclusively
to the crisp flavors of Soul Patch Salsa.
Everybody wants it, McMenamin said
of his concoction with a laugh. I grew up
in Napa, and when people hear that Im
driving down, I start getting messages:
Hey, will you bring us some salsa?
The buzz is even stronger in Granite
Bay. Whenever word gets around that
McMenamin is making a new salsa batch
his wife Kelly immediately starts fielding
texts: Can I get two jars? Can I get five
jars? Can I get a case?
Until recently, that was basically how
people bought Soul Patch Salsa in South
Placer: McMenamin cooked it in his
kitchen and then delivered it to customers doorsteps while his kids are at school.
In fact, the entire business started as a
school project for oldest son, Blake, who
was then a junior at Granite Bay High
School. Blake was taking an economics
class that required him to create a business and sell products.
Id already been making (salsa) for two
or three years, McMenamin recalled. And
Blake came to me and said, Hey, I want to
make a business out of your salsa.
The father and son came up with the
name, designed a logo and started putting it in jars.
And then things got crazy.
There were people meeting me in the
school parking lot and buying a case at a
time, McMenamins wife Kelley remembered with a chuckle. Id take it out of
my trunk and put it into theirs.
Since then, Soul Patch has only grown
more sought-after, as friends of friends
have started to talk about what some describe as a near-addictive quality. Lauren

from Granite Bay brought it over last fall.
Now we cant live without it, Willis acknowledged, adding that shes reluctant
to leave her husband Matt home alone
with a jar. Willis also admitted to sometimes fearing her Granite Bay friend
i.e. her salsa connection will go crazy
from her constant requests for more.
But that cumbersome process could
change soon, as McMenamin finalizes the
companys food certification and moves
into Gourmet Garage, a commercial kitchen owned by Matt Williams of Loomis.
My short term goal is to get through
the approval process and get it into the
local farmers markets like at Quarry
Ponds by this summer, McMenamin
said. Next would be small grocery stores,
then maybe Whole Foods or the Nugget.
There has even been some interest
from the new Kings arena in having Soul
Patch Salsa be the official dip of its new
Mexican restaurant.
McMenamin noted that his biggest
problem at the moment involves how to
keep up with the growing demand while
not getting in over his head.
I cant quit my day job yet, he acknowledged. But ultimately Id love to be
some guy with a salsa t-shirt on, shaking
hands and talking to people I always
envisioned a second life with a small
restaurant or a food truck. But that takes a

lot of investment. When this came around,


I thought, I could totally do this.
And McMenamin is doing it, from getting his new business license, lining up
his commercial kitchen, working toward
state food certification, to charting a path
through social media outreach like Instagram and a Facebook business page. At
the moment, Granite Bay can follow his
progress at soulpatchsalsa.com, which
also sells hats, t-shirts and other merch
designed by his brother. The salsa-makers growing fanbase will be watching, as
well as keeping a hopeful eye out for him
at this summers farmers market.

have changed a lot since Aquatique
opened its doors in 1998: Gone
are the struggles inside truck cabs with
large, crinkled, half-folded Thomas maps.
These days the service team takes full advantage of smart phones, the internet and
social media in daily business operations.
Yet even with the modern conveniences
of technology, some things in the pool
service business never change, such as
meeting and greeting customers pets and
being ready to hand out dog treats. On
any given summer afternoon, Aquatiques
techs are engaged in weekly pool service,
pool inspections and pool clean-up jobs.
Helping homeowners maintain and replace their pool equipment is another important task for them.
These days variable speed pumps are
a must-have for energy conservation,
Hogue said. Conversion to a salt-water
system is also worth looking into.
Aquatiques technicians currently service more than 600 pools between Granite Bay, Rocklin and Roseville. Enjoying
friendly interactions is a must for their
team members, though so is having a
certain interest and pride in the whole
concept of pristine, pool-side life.

in his friendly, but competitive
sibling rivalry. The 6-foot-8 right-handed
pitcher helped lead the Granite Bay baseball team to the Sac-Joaquin Section Division I championship game in 2015, but
the Grizzlies couldnt get over the hump.
A win against Elk Grove would have at
least pulled him closer to the eye-popping resume his older sister Taylor has
put together.
Shes an absolute stud, Darren said.
Its just ridiculous. I think if she played
basketball or a bigger sport, she would be
a bigger name in the media, but because
its volleyball and because shes the setter, people may not realize just how good
she really is.
Taylor, a former Gatorade California
Volleyball Player of the Year and Prep
Volleyball.coms National Player of the
Year as a senior in high school, was the
starting setter for the 2013 Granite Bay
volleyball teams 45-0, state championship team.
We always joke about if Darren can get
a state championship, but he was pretty close last year, Taylor acknowledged.
But he still has two more chances in
baseball and another year in basketball.
A two-time SFL MVP award-winner,
Taylor was a four-year varsity player for
the Grizzlies and saw improvements
each season capping her career with an
undefeated record and a Division I California State Championship.
We got to play at a pretty high level
and play against solid competition while
I was at Granite Bay, so I definitely feel
that helped prepare me for college, Taylor explained. The best part about that
final season was the fact that we didnt
really realize how well we were doing or
how good of a team we really were.
We just took it one game at a time. It
wasnt until the very end, after the state
game, that we looked back and realized
exactly what we did and how rare of a
feat that was.

digs, 90 service aces and 61 blocks before
entering her freshman season at Cal Poly.
I got to come into a rare situation where
we had a lot of freshmen in the starting
lineup my first year, Taylor recalled. So
I think we grew a lot from that, together,
and gained a lot of experience by playing
against upperclassmen on other teams.

Siblings earn Team


USA nominations
This past year, Taylor Nelson helped Cal
Poly post its most successful conference
finish and highest number of victories in
a season since 2010 with a 19-8 overall record and 11-5 mark in Big West play. Taylor
was one of four Mustangs to earn All-Big
West Conference First Team honors thanks
to a team-high 1,052 assists in 2015.
Although its just her second season at
Cal Poly, Nelson has already moved into
No. 7 in program history with 1,932 career
assists. That sort of court management
helped her gain national recognition.

Last week, Taylor was honored as one


of the 36 underclassmen who will train
and compete as part of the U.S. Collegiate National Team-Indianapolis program. The squad, which is part of USA
Volleyballs High Performance pipeline
and is considered a second tryout for the
U.S. Womens National Team, will train
and compete from June 21-30 in Indianapolis, Indiana.
I was just excited to have the chance
to go tryout, Taylor admitted. I havent competed in the High Performance
tryouts or competed with Team USA in
high school, so going in, I just had an
open mind and I was excited to compete
against tough competition. But to be selected was a huge honor.
Im definitely excited to represent my
school and our program.
Although Taylors prep Olympic experience was limited, she did lead her club
team, NCVC out of Sacramento, to a fifth
place finish at the 2013 Junior Olympics
in the 18s Open Division and received AllTournament honors. In the 2012 Junior

country and thats always been a goal of

the program has to offer, but thats
been my dream school since I was
young. My dad and mom met there,
my sister Lindsay was going to
commit there, Taylor goes there now,
so Cal Poly has a special place in all
of our hearts.

mine, Darren acknowledged. The competition level was legit. It was about 40
kids in the nation and every guy on the
team was a legit Division I prospect, so it
was exciting to be a part of that.
The nomination gave Darren new
bragging rights with his siblings, but it
didnt last very long.
Any time our family is together, were
always competing or arguing about who
won, whether its a board game or if were
out playing a whiffle ball game, Taylor
pointed out. I actually think that helps
push one another. Especially when we
were in high school I would be going
to work out and that would make him
want to work out, or I would see him putting in extra work and that would make
me want to go do it.

Family tradition
continues at Cal Poly
Exactly like his sister, Darren Nelson
committed to Cal Poly as a sophomore.
The 6-foot-8 multi-sport athlete will
compete for the baseball team as part of
the 2017 recruiting class.
I actually wanted to commit before my
sophomore year, but their pitching coach
left for Cal and I took some time to think
over my decision, Darren explained.
The Nelsons love for Cal Poly stems
from their parents. Both their mother,
Vera, and father, Rich, played sports at
Cal Poly as they starred for the volleyball

and baseball teams, respectively. After


Lindsay, the oldest Nelson sibling, went
to UCSB, Taylor and Darren did something unique.
We definitely followed in their footsteps, Taylor said. And I dont think Ive
ever met anyone who has had both of
their parents and then their siblings play
the same sports at the same college.
Following his dads path to Cal Poly,
Darrens verbal commitment came back
in October last year, but he had help
making that decision. Pat Esposito, the
head coach of the Granite Bay baseball
team, played at Cal Poly with Darrens father and the two shared their favoritism
for the university and campus with the
high school prospect when they could.
They definitely told me all that the

program has to offer, but thats been my


dream school since I was young, Darren
recalled. My dad and mom met there,
my sister Lindsay was going to commit
there, Taylor goes there now, so Cal Poly
has a special place in all of our hearts.
Although the Nelson family has enjoyed much success in a Grizzlies uniform, its overshadowed by their efforts
and accomplishments at the collegiate
level and that will continue to grow.
We were very excited to hear that,
Vera admitted. It was his decision, but it
will be great having them both there.
It will only be for one year, but well
probably want to move down there so we
dont miss their games, she added with a
laugh. But its a great place to go for school,
so were very excited for both of them.
With Darrens commitment and eventual signing, theres only one thing left.
Darren must win a section title and narrow the gap in his sibling rivalry.

Team Stanley FatMax, was just declared a state champion in innovation. It now has its sights set on an even
bigger horizon.
School officials said the Granite Bay team is divided into two
subsets according to grade level. This year each half of the team
built its own robot to enter into the Vex Robotics Competition.
The 7th grade team members are Nariaki Fujita, Aidan Filban
and Clint McElroy. The trio banded together to create Robot
#9573B. Cavitts 8th graders were comprised of Theo Tran, Kyle
Miller, Cameron OConnor and Ali Hashim: Together they are
the creators of Robot #9537.
Cavitt Junior High began delving into robotics in 2013 when
a group of students expressed interest in building machinery.
With the support of the schools Project Lead the Way program,
and the PTC, a framework was formed for students to work on
the robots while being supported and supervised by adult mentors. One of those mentors is Kevin Miller.
Most of the boys joined the team because of their general
interest in STEM, and specifically Cavitts Project Lead the Way
classroom, Miller recalled.

For three years Cavitt Junior Highs students have used research
skills, engineering and teamwork to build their metallic creations
and then enter them in the Vex Robotics Competition. The competition is the largest of its kind globally, as well as the fastest
growing for middle and high school robotics programs. More
than 12,000 teams from 33 nations go head-to-head in over 1,000
tournaments worldwide. The combination of programming
skills, robotic technical capabilities, driver skills and alliance/
game strategy all come into play during these competitions.
Each year the VRC adds a new themed challenge to its trials.
For the 2015-2016 school year that theme was Nothing But Net.
Prior to going to the California State Championships, Cavitts
8th grade team earned the top prize for robotics building in a
regional tournament. Cavitts 7th graders placed 12th in the same
competition, granting them a spot in the knock out rounds.
After many late nights and overcoming a host of technical difficulties, Team Stanley FatMax was ready for the VRC California
Middle School State Championship, held on February 27 in San
Jose. The team reportedly dominated the field and ultimately won.
That was a huge success for the team, Miller noted. Not
just for winning the state championship tournament and earning their spot to worlds, but how they overcame some significant problems during the tournament.
In April Team Stanley FatMax modified their robots and made
adjustments to ensure that they were prepared for the World
Competition in Louisville, Kentucky. The students went up
against 150 middle school teams from around the earth.
Joining the robotics team has helped improve my leadership
skills and given me a new way of thinking mechanically and
technically, said 8th grader Theo Tran.
Granite Bay residents helped raise funds for the trip and all
of South Placer is now waiting to see what these young Tony
Starks will event next.

Regional boxing
program looks to
knockout bullying

olsom police officer James Dorris has


stepped into the ring with some of the
most intimidating fighters in California, but now the triple-belt amateur boxing champion is trying to land a finishing
hook on something harder to pin down
a culture of hurtful and even deadly teen
bullying on local school campuses.
Unlike previous battles in his career,
Dorris is not stepping through the ropes
to meet this challenge alone. From police and correctional officers to some
of Folsom High Schools most proactive
seniors, Dorris has been building a volunteer coalition to try to change the way
students think about protecting for their
fellow classmates.

Its a rainy Friday afternoon at Folsom


Middle School as Dorris calls his class of
aspiring boxers to attention. Of his current 60-plus participants, the majority
are students from this campus. A handful
are even younger, attending Folsom Hills
Elementary School. The loud, would-be
contenders listen to Dorris call out fitness drills. They know their coach for this
ongoing class happens to be the current
cruiser weight and super-cruiser weight
boxing champion for Badge vs. Badge, as
well as the reigning heavyweight champion for Battle of the Badges both
sanctioned police boxing circuits on the
west coast. However, for the students,

Dorris is an even more familiar face in
the sense that hes one of Folsom Police
Departments most veteran school resource officers.
The policemans mission for these
free classes is to use the focus, discipline, confidence and sportsmanship
embedded in the art of boxing to kickstart a new movement of anti-bullying
in Folsom schools. He calls the program
Fighting for Fitness. And like any
experienced police officer,
hes brought some backup with him. Retired
Folsom Police Sgt. Ty
Schantz, Folsom Prison correctional officer
Shay McIntyre and Folsom Prison paramedic
Duke Juanitas have
each stepped up to be
assistant trainers. Yet,
its one thing for adults to
tell middle-schoolers they
should have a protective mentality toward their peers,
but Dorris is also emphasizing the point
more directly by

using upperclassmen from Folsom High


School to say the same thing. Folsom High
seniors Emily Griner, Marcos Legrande,
Tyler Parks, Anthony Barera along with
recent Folsom grad Carlos Solis are all
former boxing students of Dorris who
are now volunteering to be group leaders
for his anti-bullying program. The middle-schoolers are hearing the message
from the very faces who are part of a school
many of them will eventually attend.
As Dorris draws his large group of boxing-gloved teens to attention, he calls out
to them, What are we?
The group energetically shouts back,
Sheep dogs!
The whole time were working on boxing technique and physical fitness, were
constantly talking about this analogy I
use this comparison to sheepdogs,
Dorris explains. We talk about how the
majority of people they know are like
sheep, people who just want to mind
their own business and live their lives in
peace. But there are also wolves out there
who will steal from the sheep and hurt
them. So, what we learn in this class is to
think like sheepdogs. We talk about having the confidence to see all of the flock
as part of your family, and being there to
protect someone, even if you dont know
them, if you can see theyre in trouble.
Dorris added that Folsom Middle
School Principal John Bliss has been
extremely supportive of his efforts.
Additionally, Folsom businesses such
as 9Rounds Boxing, Folsom Lake Bowl
and the Powerhouse Pub have jumped
in as financial sponsors, helping buy
much-needed equipment for the stu-

Folsom parent Cherre Henderson has
been bringing her sixth-grader, James,
to the class and feels that its helping lift
him up physically and mentally.
Its building his self-confidence and
making him stronger, Henderson says.
Its a good social activity.
For Schantz, who has been boxing
since he was 12 , the overall goal of the
program could not be more important. Before retiring his badge, Schantz
had been on tragic police calls involving teenagers who had fallen into dark
mental spaces they couldnt escape. Hes
willing to try anything that might prevent
the on-campus and cyber cultures that
cause kids to feel that way.
What James (Dorris) is doing here is all
about promoting an attitude where the
kids want to help one another, Schantz
observes. They will want to help out the
people they see getting picked on. Its a
message about building healthy habits
and a healthier community.

shielding my eyes from the sparkling blue and white waves in the
Baha de Banderas, I suddenly heard the
unmistakable beats of a horse cantering.
I sat up, removed my hat and saw a majestic gray-white stallion splashing along
the edge of the beach, ridden by a handsome, dark-haired man attired in white
breeches, navy-blue polo shirt and elegant black boots.
Welcome to the common sights of
Mexicos Puerto Vallarta, a place Ive
been watching change and stay the same
for 32 years.
When it came to the stallion and rider
going by that day on the beach, I could
not resist skipping down into their
path. Seor, el garan es de usted? I
asked, hoping the equestrian words Id
memorized from my pocket dictionary
were correct.
Si, seora. Su nombre es Nebuloso,
he said.
I stumbled to find the words for another sentence. Would this be easier in English? the rider politely inquired. I smiled,
responding, Yes, but you wouldnt get to
laugh at my Spanish!

Two days later, my husband and I were
touring Octavios rancho in the hills above
Puerto Vallarta, seeing his Azteca horses and swapping horse breeder stories.
Nothing like that had ever happened in
our two-plus decades vacationing in Puerto Vallarta, but when friends ask me why
weve continued to go there, I tell them its
because something new, exciting and unusual is always happening in Vallarta.
When we first came to Vallarta in 1984,
the roads to town were cobblestoned and
the main street along the beachfront was
full of fuming buses and worth your life
to try to cross. One year we arrived at our
Los Tules condominium along a newly
paved highway from the airport, which
continued on to the edge of Old Town, or
El Centro, where the city government had
decided to keep the old-fashioned cobblestones, much to the chagrin of the taxi
drivers. Palms were planted all along the
center of the highway, and we watched
the full-sized trees being plunked in place
for several days. The beachfront Malecon
became a lovely paved walkway, adorned
with contemporary sculptures by Sergio
Bustamante, Alejandro Colunga, Ramiz Barquet and others. While there had
always been good restaurants along the
Malecon, now there was a delightful mix
of cuisines from around the world. Today, Puerto Vallarta is known as a city of
fine restaurants, with chefs from around
the world, many of whom are featured in
Mays two-week long Restaurant Week,
and in November at the Gourmet Festival. In addition to the fine restaurants,
for years we have enjoyed attending the
many festivals in town, munching on various local specialties from fish-on-a-stick,
to barbequed shrimp and more kinds of
tacos than one can imagine. A new tour
called A Taste of Vallarta takes visitors to a
nice selection of local and family-owned
restaurants where a true taste of the local,
traditional cuisine can be enjoyed.
There is no question that the 1963
filming of The Night of the Iguana by
director John Huston in Mismaloya, a
small beach town just south of Puerto
Vallarta, and the torrid affair of his star
Richard Burton with Elizabeth Taylor,

helped provide much media coverage


as journalists regaled their readers with
essays and photos of the beauty of the region. When we first arrived in Vallarta, we
toured the set for the film that was still
on the hill above the beach in Mismaloya
and ate at a small palapa-covered fish
and fruit stand; today the set is gone and
in its place is a sweep of luxury hotels
with commanding views of the bay. But
there are still palapas along the beach
where you can get delightful fish tacos,
cool beers and tropical drinks, and the
water is fine for swimming and snorkeling. That activity is probably best at the
Los Arcos National Marine Park, designated in 1984, and indicative of the increasing awareness of the environmental
consequences of unchecked development. The bay is cleaner today than we
have ever seen and ecotourism abounds.
Whale watching tours, jungle canopy
tours, horseback riding outings, fishing
and tours of the El Salado Estuary are all
fun and educational.
While Puerto Vallarta is often incorrectly described as a sleepy fishing village that was discovered in the 1960s
because of Hustons film, its true history goes back to the 15th and 16th centuries of Spanish exploration, and long
before that for the indigenous people of
the area. In 1524 Hernan Cortes reportedly battled an army of 10,000 or more
natives, finally taking control of the rich

agricultural valley along the Ameca River. He named the valley and bay Banderas, or flags, after the colorful standards carried by the fighters. The Bay of
Banderas figures in some 17th and 18th
century accounts of pirate and smuggling operations, since local tradition
says the bay provided a way to evade
the customs operations at San Blas. By
the 19th century, Las Peas as the village
was then known, provided an important
port in support of the mining, fishing
and agricultural interests from the bay to
the Sierra Madre mountains. In 1918, the
village was renamed for the former state
governor, Ignacio Vallarta.
The beauty of the bay and tropical hillsides could not be denied and in 1942, the
first advertisement for a Puerto Vallarta

There is no question that the 1963


filming of The Night of the Iguana
by director John Huston in Mismaloya,

Puerto Vallarta, and the torrid affair of

Taylor, helped provide much media
coverage as journalists regaled their
readers with essays and photos of the
beauty of the region.
vacation appeared in the New York-based
Modern Mexico magazine; by 1945, the
Air Transport Company of Jalisco was
landing DC-3s in Puerto Vallarta carrying
21 passengers. By the 1950s, Puerto Vallarta had started to attract American artists and writers in search of a retreat from
the USA of the Eisenhower and McCarthy
era. The area still-called Gringo Gulch
developed as an expatriate neighborhood
in the hills above El Centro. Today there
is a strong community of Americans and
Canadians, reportedly comprising a third
of the areas 256,000 people.

Some years ago, my husband and I


toured the two houses that Burton and
Taylor built in the hills above the central
part of Vallarta, linked across the street
by a bridge resembling Venices Bridge of
Sighs. Called Casa Kimberly, its views of
the city, bay and surrounding hills were
indeed stunning. As we walked through
the place, the Burtons books, magazines and even clothes were still there; I
picked up a script off a coffee table with
Richard Burtons notes inside. For a short
time, the then-owners tried to use it as
a bed-and-breakfast, but finally it sat
idle. Today, the Burtons two homes
and their Puente del Amor, or Bridge of
Love have been reborn as the luxurious Hotel Casa Kimberly and as the fine
restaurant The Iguana. Travel writers are
quick to point out the restaurant features
authentic cuisine, like squash blossoms
filled with requeson and poblano chili,
and elegant desserts like rompope flan
with chocolate sauce. Some of our favorite restaurants are found along the pathways of the Isla Cuale, a small island in
the middle of town, with the Cuale river

flowing along both sides. Oscars at the


end of the island, offers a wonderful view
of the beach and ocean, plus close-up
views of pelicans nesting in the tropical
trees, shore birds and ducks wandering
just outside the open-air parts of the
restaurant, and great people watching.
For a truly elegant evening, its impossible to beat The River Caf, a landmark
on the Isla Cuale since opening in 1996,
with fine international cuisine, live jazz
on most evenings, and the chance to see
iguanas in their natural setting.
One of the most unexpected and exquisite additions to the Puerto Vallarta
region has been the Jardn El Botnico
the Puerto Vallarta Botanical Gardens now celebrating its tenth year.
This magical place is located about 30
minutes south of Vallarta, up in the hills
and along a river providing a cooler environment than in the city itself. The
gardens feature what is probably the
finest collection of orchids, all native to
Mexico, in the world, along with agaves,
cactus, palms and other native plants.

Yellow, orange and blue butterflies are
everywhere, and though difficult to
catch in a photo, theyve often surprised
me by landing on my outstretched hand
or shoulder. The variety of tropical birds
is amazing, so much so that we attended a class there on birds of the region,
in advance of the annual December
bird count. Fortunately for those of us
beginner bird watchers, the Vallarta
Botanical Gardens staff have erected
great feeding stations for the birds, and
watching the bright yellow and black
caciques and iridescent blue and black
San Blas jays squabble over the pieces
of melon and mango is mesmerizing.
There are numerous hiking trails, including the fairly difficult Jaguar Trail,
and the partly-paved one down to the
river. The centerpiece of the Gardens is
the beautiful Conservatory of Mexican
Orchids, a creative mix of the classic English hexagonal conservatory building
and chiseled Mexican-design columns,
holding a spectacular collection of every kind and size of orchid imaginable.
Not to be missed is the Hacienda de Oro
visitors center and restaurant, where we
have enjoyed the blue corn fish tacos

and arguably the best freshly baked pizza in Puerto Vallarta. The views from the
restaurant are above and across the river, with the bird feeding stations clearly
in view, butterflies and hummingbirds
fluttering among the trees and flowers.
There is no better place to spend an
afternoon after hiking and viewing the
gardens treasures.
Bob Price, founder and curator of the
Vallarta Botanical Gardens, originally
searched for and finally found the land
for the gardens in 2004 an overgrazed
20-acre site criss-crossed by hard trampled cow paths. Bob loved orchids and
had learned of the considerable traffic
in illegal poaching of the plants from the
jungle highlands around the area. These
plants were being plundered to extinction and brazenly sold in a thriving black
market, he once told a journalist. Price
created the gardens with the help of his
mother, Betty, a delightful woman whom
we had the pleasure of meeting several
years ago before her untimely passing.
In November 2005, the Gardens opened
to the public and new garden areas and
buildings have been added since then.
This past December we had the pleasure
of touring the newest addition to the gardens with Bob, the not-quite-completed

the Garden, chapel. Workers were still
adding tiles and working on the bell
tower but everyone greeted us warmly
as we walked carefully around the workin-progress. The chapel had its formal
opening on Palm Sunday this year, with a
multi-faith ceremony attended by representatives from the local Catholic, Protestant, Jewish, Buddhist, and Wixrika
(Huichol native) communities. Bob is
assisted by a dedicated team of staff and
volunteers, headed up by Neil Gerlowski,
Executive Director, and donations from
not only the local community, but from
around the world. The staff are all understandably proud of being named one of
the Top 10 Gardens in North America
Worth Traveling For.
While much has changed in Puerto Vallarta over the last 30 years, including the
creation of the very-Americanized Nuevo
Vallarta, the aspects of the area that we
love the friendly people, the stunning
Baha de Banderas, the mountains, jungle and beaches, the relaxed atmosphere,
the celebrations of art and culture, the
creative shops and fabulous restaurant
scene have remained. As the locals
say, No hay nada como Vallarta there
is nothing like Vallarta.

pring is the time when admirers of


reverent stone angels and rare roses
from across the globe tour the historic Sacramento City Cemetery.
The first week of May is the last chance
to see the rioting colors of plant life
twisting around granite crypts and along
marble obelisks that date to 1849. From
railroad barons to members of the Donner Party, this California landmark is a
vault of history and funerary art, as well
as a living garden of fuchsias, poppies,
perennials and roses from as far away as
France and China.
The historic Sacramento City Cemetery
recently made headlines when Sacramento County officials proposed destroying
a large number
of its famous
roses.
The Placer
Heralds historic writer Jaime
Rubio closely followed the ensuing
outcry from the public and is now reporting
that, for the moment, the controversial proposal to uproot
the Victorian era roses has been

s we move into the warmer months of spring and summer our tendency is to shift our wine drinking habits
from the heavy reds of winter to more refreshing chilled
white wines. But there are other options then your favorite
Chardonnay or Sauvignon Blanc, there is Ros. Slowly peoples
perception of Ros is changing, it might look pink but it is not
your grandmothers White Zinfandel.
Made from red grapes, but left only for a limited time with
the color-giving grape skins, Ros can vary from the palest powder-puff pink to deep opaque red, depending on how long the
grapes macerate.
French Ross tend to be made of blends of various varietals:
Grenache,Syrah,Cinsault,Mourvedre, Tibouren,Carignanand
Cabernet Sauvignon and the constitution of these blends vary
depending on the region.
Whereas here in the California, Ross are predominately
made from single varietals, anything from Pinot Noir to Cabernet Sauvignon and everything in between.
Lighter drier Ross made from Pinot Noir, pair well with light
salads, light pasta and rice dishes, especially with seafood, raw
and lightly cooked shellfish and grilled fish and goat cheeses.
Whereas heavier drier Ross made from Syrah or Cabernet
Sauvignon makes them ideal for a barbecue and for drinking
with spicy food such as curries.
Ross are usually a bargain, especially compared with red
wines. These wines are young and relatively cheap to make.
There are plenty of good options in the $10-$15 range.
Its the perfect barbecue wine, the perfect beach wine, and the
perfect picnic wine, but its also the perfect wine sitting around
and relaxing.

Grab your headband, leg warmers, parachute pants and totally rad friends
for the most excellent adventure! Group warm-ups begin at 8:30 a.m.
Sunday May 1, 10K starts at 9 a.m. and the 5K shortly after at 9:15
a.m. The cutoff time is 11 a.m. Stay afterwards for a totally gnarly dance
party, contests, and other awesome 80s activities. After April 8 the 10K
is $45, the 5K is $40 and youth are $35. Register by April 8 for a discount
