Fried Bangus Kare

Kare
Ingredients:
1

kilo

bangus (milkfish),
cleaned and cut into 6 pieces
2 pcs
kalamansi juice
salt and pepper
3 cups cooking oil for frying
cup peanut butter
cup grounded toasted rice
2 pcs
onion, dices
6 clovesgarlic,
minced
cup atsuete
extract
2 pcs
eggplant,
sliced 1 inch
thick
1 bundle pechay cut into 2
pieces
1 bundle sitaw (string
beans) cut to 2
long
4 tbsps cooking oil
2 tbsps fish sauce
5 cups water
Cooking Instructions
1. Season bangus with kalamansi juice, salt and pepper
2. Heat the cooking oil in a pan. Fry both sides of the bangus
in medium heat until the color turns medium brown. Place
with paper towel to absorb excess oil. Set aside.
3. Saut garlic, onions until golden brown, then add the fish
sauce and 5 cups water.
4. Add toasted rice, peanut butter and atsuete extract. Bring
to boil and simmer for 10 minutes.
5. Cook vegetables in boiling water. Do not overcook the
vegetables. Drain and set aside.
6. Pour the kare-kare sauce in a deep platter. Arrange the
fried bangus and vegetables on top.

7. Serve with bagoong and chopped toasted peanuts on the


side and hot plain rice.
