So what are the latest trends in
wedding cake design? This is a
frequent question asked of
Executive Pastry Chef Robert W.
Bennett of Classic Cake. Thats
easy anything ones heart
desires. While that may seem
clich, its true. Couples are no
longer bound to tradition; they can
have this quintessential centerpiece be a reflection of themselves.
To succeed, Bennetts first
piece of advice is to start planning
early. We have couples sit down
for their consultation months and
sometimes a year in advance, he
says. Yet when last minute planning is needed, we can certainly
accommodate. The key is a wellmanaged consultation and tasting
with a welcoming setting, skilled
consultants and an open forum for

creative expression.
A professional wedding cake
specialist will guide a bride and
groom through with questions
about event-related specifics such
as theme, colors and number of
guests. Says Bennett, We ask if
the cake will be the only dessert
or one that complements a larger
pastry menu to help determine
the most appropriate size and portion.
The likes of Pinterest and various wedding planning web sites
have made way for soon-to-be
brides, grooms and others to
explore ideas in advance. Many
couples do research before they
come, Bennett notes. Together
with our portfolio, we collaborate
and capture the details in a rough
sketch.
No consultation is complete
however without a tasting. Similar

to endless designs, the choice of

flavors is equally as vast.
Refreshing flavors of spring and

Today, there is a lot of excitement in wedding desserts. From

or wrong, Bennett shares his longstanding advice Its something I tell any couple. This is their

angus steaks, fresh seafood and
