TITLE
ICOD - INNOVATIVE TECHNOLOGIES FOR THE VALORIZATION OF THE BY-PRODUCTS OF
COD FISH PROCESSING INDUSTRY

HIGHLIGHTS
Extraction of gelatin, with good rheological properties, flavor and aroma with fish and with
a very interesting potential for integration in the food industry and possibly in other
industries. Gelatin was integrated into one of the company's main pre-cooked meal,
obtaining a product with several important nutritional properties, such as high protein
content, combined with the reduction of total and saturated fat content). From saltwater,
the project investigated the recovery of proteins by membrane separation processes, on a
laboratory scale and later on the pilot scale.
The extraction of the mineral fraction of the bones was also studied in the project. In fact
compounds based of calcium phosphates were obtained, the most important being
hydroxyapatite; they are used in biomedicine and for environment remediation.

ABSTRACT
The iCOD Project proposed to develop R&D activities with the objective of identifying High Value
Compounds (HVCs) present in the by-products of cod processing and their potential incorporation
into food products or as their own products, thus exploiting the value of these HVCs. The main
objectives and goals of the iCOD Project were: a) to quantify the IVCs present in the main by-
products generated in the cod processing industry; b) characterize the potential of by-products
generated in the processing of cod; c) to develop innovative technologies for extracting and
purifying IVCs; d) to develop functional products and nutraceuticals with the addition of CEVs; e)
characterize the market potential of the developed functional and nutraceutical products; f)
demonstrate at the prototype scale the extraction and purification of HVCs for the production of
differentiated products: functional and nutraceutical.
