1.1 INTRODUCTION

HR department and sending email along with my resume. They accepted my request
for doing the internship for two months.

Period of internship: 2 months (8th may 2017 to 30th June 2017)

1.1.1 OBJECTIVE OF THE INTERNSHIP

To work as an intern and to get familiarized in the HR and Finance functions


of the firm.
To enhance the interaction with the industry to build the confidence level.
To develop the practical and managerial skills in the working environment and
be able to apply them effectively.
To gain relevant experience working within the Hospitality.
To understand the organisation structure.

1.2 INDUSTRY ANALYSIS


Hotel Presidency is coming under the Hospitality industry. The hospitality industry is
a broad category of fields within service industry that includes lodging, event
planning, theme parks, transportation, cruise line, and additional fields within the
tourism industry. The three main categories of hospitality industry is food and
beverage, accommodation and travel and tourism.
A Hotel or Inn may be defined as an establishment whose primary business is
providing lodging facilities for the general public, and which furnishes one or more of

the following services. Additionally, according to the category of the hotel they
provide different level of personalised services such as:

Food and beverage service

Room attendant ( Housekeeping ) service

Concierge

Laundry or dry cleaning service

Use of furniture or fixtures

Bell and Door attendant service

Conference and Banqueting

Business centre etc.

In hospitality, food and beverage reigns supreme. It is the largest element of the
hospitality industry and can take the form of high-end restaurants, fast-food eateries,
catering establishments and many other manifestations. The food and beverage trade
can symbiotically function as part of other businesses, such as in bowling alleys or
movie theatres. When your restaurant is part of a hotel, food and beverage can
dramatically enhance the overall guest experience by offering excellent food and first-
class customer service.
Accommodation includes Hotels, bed and breakfast enterprises and other places
offering lodging represent a broad segment of the hospitality industry. Types of
businesses run the gamut from extravagant resorts to hostels and campgrounds. Your
business' focus on providing lodging should integrate comfort, efficiency and
attentive customer service as its foundation. Travelers value thoughtful treatment and
simple amenities. When they feel appreciated and catered to, your guests will tell
others about their experience and may become repeat customers.
Travel and Tourism is another chief segment of the hospitality business encompasses
transportation. This includes airlines, trains, cruise ships and the staff for each. Flight
attendants and cruise staff function as food servers and hoteliers in their efforts to
provide food or drink and a comfortable experience. Business travellers and
vacationers alike form the basis for this area of hospitality. Travel and tourism

requires knowledgeable employees in information technology, and they are also
considered a part of hospitality. Destinations such as amusement parks draw
thousands of people, all of whom want to benefit from great customer service while
enjoying a memorable adventure.
The Indian tourism and hospitality industry has emerged as one of the key drivers of
growth among the services sector in India. Tourism in India has significant potential
considering the rich cultural and historical heritage, variety in ecology, terrains and
places of natural beauty spread across the country. Tourism is also a potentially large
employment generator besides being a significant source of foreign exchange for the
country.

1.1.1 ABOUT TRAVEL AND TOURISM INDUSTRY


The hospitality industry is part of a larger enterprise known as the travel and tourism
industry. This industry is a vast group business with one goal in common: that is to
provide necessary or desired products and services to travellers.

Travel and tourism industry has now become the largest civilian industry in the world,
according to statistics one out of every ten person worldwide is part of the Travel and
tourism industry.

Travel and Tourism industry are divided into five major parts as shown below .
Lodging operations stands apart from other travel and tourism business as they offer
overnight stay for the guests.

1.2.1.1 LODGING OPERATIONS

Under lodging operations comes Hotels, Motels, Resorts, Timeshare Hotels,


Condominiums, Conference Centres, B&B, Casinos Etc. Lodging operations is
the largest sector under Travel and Tourism Industry.

1.2.1.2 TRANSPORTATION SERVICES

Ships, Air planes, Autos, Bus, Railways, Metro's, Bikes, Limousines all comes
under the Transportation Services in the Travel and tourism industry.

Food and Beverage Operations:

Restaurant, Lodging Properties Retail stores, Vending Machines, Catering,


Snack Bars, Cruise Ships, Bars, Banquets, Out Door Catering all Comes under
the F&B operations sector.

Gift Shops, Souvenir shops, Handicraft Shops, Art Shops, Markets etc.

1.1.2TYPES OF HOTELS OR CLASSIFICATION OF HOTEL


BY TYPE
Hotels are classified according to the hotel size, location, target markets, levels
of service , facilities provided, number of rooms , ownership and affiliation etc.

1.2.2.1 SIZE OR NUMBER OF ROOMS

Under 200 rooms

200 to 399 rooms

400 to 700 rooms

More than 700 rooms

The above categories enable hotels of similar size to compare operating


procedures and statistical results.

1.2.2.2 TARGET MARKETS

Hotel targets many markets and can be classified according to the markets they
attempt to attract their guests. Common type of markets include business,
airport, suites, residential, resort, timeshare, casino, convention and conference
hotels.

Business Hotels: These hotels are the largest group of hotel types and they
primarily cater to business travelers and usually located in downtown or
business districts. Although a Business hotel primarily serves business
travelers, many tour groups, individual tourists and small conference groups
find these hotels attractive. Guest amenities at business hotels may include
complimentary newspapers, morning coffee, free local telephone calls,
Breakfast etc.

Airport Hotels: These types of hotels typically target business clientele, airline
passengers with overnight travel layovers or cancelled flights and airline crews
or staff. Some hotels might give free transport between hotel and airport. Some
Airport hotels also charge the guest by hour instead of normal daily night
charges.

Suite Hotels: These kind of hotels are the latest trend and the fastest growing
segments in the hotel industry. Such hotels have a living room and a separate
bedroom. Professionals such as accountants, lawyers, business men and
executives find suite hotels particularly attractive as they can work and also
entertain in an area besides the bedroom.

Extended Stay Hotels: Extended stay hotels is somewhat similar to the suite
hotels, but usually offers kitchen amenities in the room. These kind of hotels
are for long stayers who wants to stay more than a week and does not want to
spend on hotel facilities.

Serviced Apartments: Serviced Apartment / Residential hotels provide long-


term or permanent accommodation for Guest. Usually guest makes a lease
agreement with the hotel for minimum of one month up to a year. Rooms
generally include living room, bedroom, kitchen, private balcony, washing
machines, kitchen utensils etc. Unlike normal hotels Serviced apartment only
provide weekly one housekeeping service.

Resort Hotels: Resort hotels are usually located in the mountains, on an island,
or in some other exotic locations away from cities. These hotels have

recreational facilities, scenery, golf, tennis, sailing, skiing and swimming.
Resort hotels provide enjoyable and memorable guest experiences that
encourage guest to repeat to the resort.

Bed and Breakfast / Homestays: These are houses with rooms converted into
overnight facilities; this can size up to 1 to 10 guest rooms. They are also
known as 'Home Stay's'. The owner of the B&B usually stays on the premises
and is responsible for serving breakfast to guest.

Timeshare/Vacation Rentals: Another new type or segment of the hospitality


industry is the timeshare hotels. These are sometimes referred to as "Vacation-
interval" hotels. Timeshare hotels are where the guests who purchase the
ownership of accommodations for a specific period. These owners may also
have the unit rented out by the management company that operates the hotel.

Casino Hotels: Hotels with gambling facilities are called Casino Hotels
.Although the food and beverage operations in casino is luxurious their
functions is secondary to and supportive of casino operations.

Conference and Convention Centres: These type of hotels focus on meeting


and conferences and overnight accommodation for meeting attendees. They
also provide video conferencing facility, audiovisual equipment, business
services, flexible seating arrangements, flipchart etc. These hotels mostly
located outside the metropolitan areas and have facilities like golf, swimming
pools, tennis courts, fitness centres, spas etc.

1.2.2.3. LEVELS OF SERVICE

World class service: These are also called luxury / Five Start hotels, they
target top business executives, entertainment celebrities, high- ranking political
figures, and wealthy clientele as their primary markets. They provide upscale
restaurants and lounges, Valet, concierge services and also private dining
facilities.

Mid-Range Service: Hotels offering mid-range or otherwise 3 to 4 star hotels


service appeal the largest segment of the travelling public. This kind of hotels

does not provide elaborate service and have a adequate staffing. They also
provide uniformed service, food and beverage room service, in room
entertainment's and also Wi-Fi etc.

Budget / Limited Service: These hotels provide clean, comfortable, safe,


inexpensive rooms and meet the basic need of guests. Budget hotels appeal
primarily to budget minded travelers who wants a room with minimum services
and amenities required for comfortable stay, without unnecessary paying
additional cost for costly services.

1.2.2.4. OWNERSHIP AND AFFILIATIONS

Independent / Single Owner Hotels: They do not have identifiable ownership


or management affiliation with other properties. Example for the same would
be family owned and operated hotel that is not following any corporate policies
or procedures.

Chain hotels: Hotels which are part of a hotel chain and these kind of
ownership usually imposes certain minimum standards, rules, policies and
procedures to restrict affiliate activities. In general the more centralised the
organisation the stronger the control over the individual property.

1.2.3 HOTEL DAILY BUSINESS REPORT


Every hotel produces a daily business report AKA Manager flash that recaps all
the activity within the last 24 hours. This daily report includes hotel statistics, like the
total earnings from hotels revenue centres. For example, Rooms, Food and Beverage
outlets, Laundry, SPA, Shop rentals etc. In most of the cases actuate generated
revenue of each revenue centres is often compared with the budgeted figures to
calculate the variance (+ / -). This will also help the management to track if these
revenue centers are doing well or not and also in par with their forecasted budgets.

The hotel General manager reviews this daily business report in the morning meeting
which is attended by all revenue centre managers / heads. They then discuss on the
performance of each revenue centres after reviewing the revenue generated by them.
Strategical decisions are then taken by the General Manager if certain revenue centres
are not achieving their targeted budgets. Daily Business Report may also includes

customer requests, or any complaints that have occurred during the day. It also
includes maintenance issues.

The industry is expected to generate 13.45 million jobs across sub-segments such as
Restaurants (10.49 million jobs), Hotels (2.3 million jobs) and Travel Agents/Tour
Operators (0.66 million). The Ministry of Tourism plans to help the industry meet the
increasing demand of skilled and trained manpower by providing hospitality
education to students as well as certifying and upgrading skills of existing service
providers. India has moved up 13 positions to 52nd rank from 65th in Tourism &
Travel competitive index.
Indias rising middle class and increasing disposable incomes has continued to
support the growth of domestic and outbound tourism. Domestic Tourist Visits to the
States/Union Territories grew by 15.5 per cent y-o-y to 1.65 billion (provisional)
during 2016 with the top 10 States/UTs contributing about 84.2 per cent to the total
number of DTVs, as per Ministry of Tourism.
As per Ministry of Tourism, foreign tourists arrival (FTAs) on e-tourist visa increased
56.6 per cent year-on-year in December 2016. In 2016, foreign tourist arrivals on e-
visas more than doubled to 10,79,696 from 4,45,300 in 2015, partly because the e-visa
facility was extended to 161 countries from 113 previously. India is expected to move
up five spots to be ranked among the top five business travel market globally by 2030,
as business travel spending in the country is expected to treble until 2030 from US$
30 billion in 2015. International hotel chains will likely increase their expansion and
investment plans in India, and are expected to account for 50 per cent share in the
Indian hospitality industry by 2022, from the current 44 per cent.
The tourism and hospitality sector is among the top 10 sectors in India to attract the
highest Foreign Direct Investment. During the period April 2000-December 2016, the
hotel and tourism sector attracted around US$ 9.93 billion of FDI, according to the
data released by Department of Industrial Policy and Promotion.
With the rise in the number of global tourists and realising Indias potential, many
companies have invested in the tourism and hospitality sector. Some of the recent
investments in this sector are as follows:
MakeMyTrip has agreed to buy Ibibo Groups India travel business at a deal
value of US$ 720 million, thus creating Indias largest online travel firm with
a value of US$ 1.8 billion, as estimated by Morgan Stanley.

Yellow Tie Hospitality Management Llp, specialising in franchise
management of food and beverages firms, plans to invest up to US$ 15-20
million in five restaurant ventures of celebrity chef Mr Harpal Singh Sokhi,
with the aim to have 250 outlets under these brands by 2020.
Chaudhary Group (CG) Hotels & Resorts aims to have 200 hotels operational
by 2020.
Dine Equity Incorporation has signed a franchisee partnership deal with food
services firm Kwals Group, in order to enter the Indian markets with their
breakfast chain IHOP.
As per industry experts, mid-hotel segment in India is expected to receive
investments of Rs 6,600 crore (US$ 990 million) excluding land over next five
years, with major hotel chains like Mariott, Carlson Rezidor and ITC planning
to set up upscale, budget hotels in state capitals and tier-II cities.
Hyatt Hotels Corporation has outlined plans of bringing its Hyatt Centric
brand to India soon along with three new hotels in Kochi, Rameswaram and
Hyderabad by 2017.
Vatika Hotels Pvt Ltd has raised Rs 495 crore in debt from Axis Bank Ltd to
expand its hotels and quick-service restaurant chain besides its business
centres.
AccorHotels, a French multinational hotel group, plans to expand its footprint
in Guwahati and Kolkata by adding more 550 rooms to its portfolio of hotels
in the next three years.
The first Incredible India Tourism Investment Summit 2016, which was
organised from September 21-23, 2016, witnessed signing of 86 Memoranda
of Understanding (MoUs) worth around Rs 15,000 crore (US$ 2.24 billion),
for the development of tourism and hospitality projects.
Steigenberger Hotels, a German luxury hotel company, and MBD Group, a
Delhi-based firm which runs 5-star Radisson Hotels in Noida and Ludhiana,
have formed a joint venture to build five luxury hotels and manage another 15
luxury hotels in India by 2030.
Keys Hotels, a premium brand of Berggruen Hotels, plans to launch three new
hotels in India at Vishakhapatnam, Calicut and Jaipur, and further add up to 10
Keys Hotels in the country by the end of FY 2017.
Stayzilla, a budget hotels and homestays aggregator, has raised over US$ 13

million in Series C round of funding from Matrix Partners and Nexus
Ventures, which will be used to improve product, technology and marketing
initiatives for its alternate stay business.
Ctrip.com, China's largest travel portal, has bought a stake in India's largest
travel portal MakeMyTrip for US$ 180 million via convertible bonds, which
allows Ctrip to increase its share in MakeMyTrip up to 26.6 per cent.
Global investment banking major Goldman Sachs has invested Rs 441 crore
(US$ 65.76 million) to acquire an equity stake in Gurgaon-based hotel
development and investment start-up SAMHI Hotels which will help fund
SAMHI's expansion plans.
Thai firm Onyx Hospitality and Kingsbridge India hotel asset management
firm have set up a joint venture (JV) to open seven hotels in the country by
2018 for which the JV will raise US$ 100 million.
Goldman Sachs, New-York based multinational investment banking fund, has
invested Rs 255 crore (US$ 38.02 million) in Vatika Hotels.
The Indian government has realised the countrys potential in the tourism industry and
has taken several steps to make India a global tourism hub. In the Union Budget 2017-
18, the Government of India announced some initiatives to give a boost to the tourism
and hospitality sector such as setting up of five special tourism zones, special
pilgrimage or tourism trains and worldwide launch of Incredible India campaign
among others.
Some of the major initiatives taken by the Government of India to give a boost to the
tourism and hospitality sector of India are as follows:
The Central Government has taken a number of steps for smooth transitioning
to cashless mode of payment to ensure that no hardship is faced by the tourists
and the tourism industry remains unaffected from government's
demonetisation move.
Maharashtra Tourism Development Corporation (MTDC) has come up with a
unique tourism experience of visiting the open cast coal mine of Gondegaon
and underground coal mine of Saoner, which are near Nagpur and part of
Western Coalfields Limited.
A Tripartite Memorandum of Understanding (MoU) was signed among the
Indian Ministry of Tourism, National Projects Construction Corporation
(NPCC), National Buildings Construction Corporation (NBCC) and

Government of Jammu and Kashmir for the implementation of tourism
projects in Jammu and Kashmir.
The Ministry of Tourism has approved projects worth Rs 450 crore (US$
67.10 million) under the Swadesh Darshan scheme, for the improvement and
creation of tourism infrastructure in Madhya Pradesh, Uttarakhand, Tamil
Nadu, Uttar Pradesh and Sikkim.
The Union Cabinet has approved a MoU between India and South Africa,
aimed at expanding bilateral cooperation in the tourism sector through
exchange of information and data, establishing exchange programmes and
increasing investments in the tourism and hospitality sector.
The Union Cabinet has approved the signing of Memorandum of
Understanding between the Ministry of Tourism of India and the Ministry of
Trade Industry and Tourism of Colombia in order to boost cooperation in the
field of tourism between the two countries.
The Central Government has given its approval for signing of a MoU between
India and Cambodia for cooperation in the field of tourism with a view to
promote bilateral tourism between the two countries.
The Heritage City Development and Augmentation Yojana (HRIDAY) action
plans for eight missions cities including Varanasi, Mathura, Ajmer, Dwaraka,
Badami, Vellankini, Warangal and Amaravati have been approved by HRIDAY
National Empowered Committee for a total cost of Rs 431 crore.

Indias travel and tourism industry has huge growth potential. The tourism industry is
also looking forward to the expansion of E-visa scheme which is expected to double
the tourist inflow to India. India is projected to be the fastest growing nation in the
wellness tourism sector in the next five years, clocking over 20 per cent gains
annually through 2017, according to a study conducted by SRI International. JW
Marriott plans to have 175-200 hotels in India over the next four years. AccorHotels
India has adopted a born in France, made in India approach to increase its properties
in India, which has reached a total of 45 hotels and is expected to increase to 55 hotels
by 2017. Global hospitality major Carlson Rezidor Hotel Group, which is also the
largest foreign hotel brand in India by number of hotels, plans to increase its total
count to 120 hotels in India by 2020.

2.1.1 NATURE OF THE ORGANIZATION AND ITS BUSINESS

The hospitality industry is a multibillion-dollar industry that depends on the


availability of leisure time and disposable income. A hospitality unit such as a
restaurant, hotel, or an amusement park consists of multiple groups such as facility
maintenance and direct operations (servers, housekeepers, porters, kitchen
workers, bartenders, management, marketing, and human resources etc.).

The organisation is coming under service providing sector. The hospitality industry's
backbone is comprised of customer service, a concept shared by all segments of the
industry. Hotel Presidency focus on one or all facets of hospitality. The staffs are
serving the customers their best to provide customer satisfaction. Hotel Presidency is
a 4- star property which consists of 114 Rooms, 5 Restaurants, 10 Banquet Halls,
Swimming Pool, Health Club and an Ayurvedic Center. The important is the
characteristics of the personnel working in direct contact with the customers.

PERFORMANCE
The share of Hotel Presidency is not acquired by issuing shares to public; it is a
private owned firm. Its share capital is Rs. 3 Crore and its total revenue for the
financial year 2016-17 is Rs. 7.34 Crore and the operating Profit is Rs. 48.7 lakh.

The hotel operates direct bookings through their websites offering customers with
loyalty benefits. However, OTAs and online accommodation booking services helped

o Create a list of missing details of all staffs
o Create Front page, Pledge and Contract for all staffs and file it in their
respective files

3.2.2 DEPARTMENT ALLOTED & REPORTING TO WHOM

During the time of first week of my internship days I understood all the department
functions of the hotel and know how important each of these department functions. I
was allotted in HR and Finance Department and asked to report to Mr. Jerim
Sakharias, HR Manager of Hotel Presidency and worked there for 2 months. My first
assignment was to get familiarization with the firm and understanding what all are the
departments working in the hotel also try to know about the basic functions of each

departments with the help of each department staff allotted for me.

3.2.3 BRIEF DETAILING ABOUT THE WHOLE INTERNSHIP

Got an overview of working of the organization as a whole. Understood about new


concepts like Employee Pension Scheme, Provident Fund, Professional tax, difference
in rates when GST implements. The daily activities in the accounts department were
Collect bills, Vouchers, Cash, Cheques, redit card settlement etc. from all other
departments viz. Front office, Bar, Restaurant and Laundry. Verifying all bills and
vouchers as per records (e-mail, Travel agent agreements etc.). Deposit Cash and
Cheques to bank. Data entry of cash vouchers, bank vouchers, purchase bills of
general store, kitchen store, and beer and wine store. Stock verification of physical
stock with system reports and at last Filing bills and vouchers. Weekly activities
includes vouching of all bills for finding errors or omitions. Monthly, tax remittance
and tax return filing is done. Also profit and loss statement preparation, cost analysis
is being done. Evaluating the head of the departments and employees attendance
report and their hours of working per day to update in the system was the first main
task assigned to me.

4.1.2 CONTRIBUTION OF THE INTERN TO THE


ORGANIZATION

First task assigned to me was to update the duty timings of HODs, it is being done for
the monthly evaluation of HODs. For the classification process of Hotel, updating the
details of all staffs in their respective file is recommended. The file of each staff
should include Front page, Pledge, Resume, Identity Card Copy, Photograph,
Contract, Educational Qualification, Aadhar Card Copy, Pan Card Copy, Passbook
front page copy. I was asked to make a note on the missing details of each staffs and
give note to each department about the missing details for collecting it. Updating the
personal details in WPS and ESI site are other tasks assigned for me. Updating May
month contribution of staffs in ESI site is also done. Calculating the bonus of staffs
who completed working last financial year in the organization.

4.1.3.2 Analysis of Achievements Vs Objectives

My objective in working as an intern was to familiarise with the functioning


of the HR and finance activities performed in this organisation. As being a intern for
the first time and working in a reputed organisation like Hotel Presidency, I could
acquire not only the knowledge of functioning of the HR and Finance activities but as
the organisation as a whole. Its employees, work culture and the working conditions
provided in the firm and how the employees reacting to it rather than studying from
the textbook I could get a deeper understanding on that topic. Also, how the sales
team and engineering team are working together for attaining successful results.

4.1.3.3 Major areas where the concept can be practically used

As being a Business Development Intern, I have gained of working in a HR and


Finance department and understand the skills of dealing with the employees. And
have gained the skill of using tools and techniques of maintaining accounts of
everything we are doing for further clarifications or doubts. The importance of
creating a healthy relationship with employees when working in an organisation was
understood and to adapt with the working culture and conditions provided in a firm.

CONCLUSION

The internship was conducted successfully at Hotel Presidency, Cochin for a period of
two months. After completing the internship in Hotel Presidency, it provide me a
chance to learn different departments in the hotel industry and also have the
opportunity to achieve my own learning goals, without the responsibilities of being a
permanent employee. The internship was done in HR and Finance department of the
organisation and an overall study of the whole functioning was done. It helped to
understand the roles and responsibilities, organisational structure, different functions
in different departments. The internship also helped me to understand the
coordination, staffing, management of resources and the importance of organisations
to be socially responsible. Inspite of limitations to the study, it has helped to open the
window towards the real corporate world and exposed to the managerial and
functional aspects of an organisation.
