Thank God we pray to Allah Almighty Subhanallahu blessings and His mercy research
titled The Utilization of Jackfruit Seed (Artrocarpus Heterophillus) as Bio-plastic starch
based with Plasticizer Glycerin Effort Substitution of Instant Noodle Flavor's Wrapper can
be resolved properly. Writing scientific papers is intended to follow the Indonesian Science Project
Olympiad which was held by the Indonesian PASIAD.

Abstract

The Interest of Indonesian people in instant noodle is very high, so that instant
noodle is important commodity in Indonesia. But, the increase of the interest of Indonesian
people in instant noodle has positive correlation with the increase of plastic waste in
Indonesia. The aim of this research is to utilize Jackfruit seed as bioplastic with
concentration treatment of glycerin and also troughs the testing of dissolve point,
absorption, and hedonic as substitution of instant noodle flavors packaging. This research
start by taking jack fruit seeds starch, the making of bioplastic, and the testing such as
troughs the testing of dissolve point, absorption, and hedonic. The result shows that
dissolve point of bioplastic with concentration 2.5%, 5%, 7.5%, and 10% have not
changed in shape, but it change in texture. At the testing of bioplastic absorption shows
that bioplastic with concentration 2.5%, 5%, 7.5%, and 10% glycerin toward water are
53.28%, 70.37%, 27.03%, 90.00%. The interest of Indonesian people toward instant noodle
with bioplastic happened in 5%.

CHAPTER I
INTRUDUCTION

1.1 Background
The Interest of Indonesian people in instant noodle is very high. Indonesian
people eat instant noodle 324 times/year (Kantar, 2012). Research of Kantar(2012)
also finding a lot of instant noodle product on market basket while consumer
buying product at market, more of than other product like, instant coffee and
biscuit. The request for noodle come from middle class consumer and lower-class.
They are main motivator ofgrowth of noodle market. Because this ascending of
request here noodle production jump up to 1,44million ton at 2010 (Kompas,
2011/11/17).
However, tinterest of Indonesian people in instant noodlehas positive
chollerated with the increas plastic waste in Indonesia. In this case, plastic waste is
the waste that hard to degradable. Now, plastic still become one of main material
tool besides iron, tree, and paper. Though consumption of plastic product per capita
Indonesia about 10 kg/capita/year, inferior than other ASEAN countries such as
Singapore, Malaysia, and Thailand that coming upon 40 kg/capita/year. The
potency of the increase of request plastic in Indonesia is still high. Requirement of
national plastic product is about 4.6 billion ton per year with mean development 5
% per year where the highest portion (40 %) is for wrapper. Request of wrapper
plastic mainly influenced by the development of food and drink industry (60%) and
the other of fast moving consumer good (FMCG). Industry which used many plastic
is component industry (Automotive and electronic tools), construction (building
profile, pipe, cable) and household tool (Industry update, 2012).But actually the
case is, to make conventional plastic degraded it need thousands year.
Meanwhile in the world there is material which can be utilized as the
substitution of bio-plastic, which is jackfruit seed. According to. Fairus (2010), in
jackfruit seed there is 35% starch. Starch is carbohydrate in polysacaride group.In
indonesian people too, pati has utilized as food. But, it definitely just its flesh.In
fact, beside the flesh, fruit waste such as seed and peel are contain starch altough
not much as its flesh. Beside the ingredients of food, starch is the main material to
mke bioplastic. Therefore, Jackfruit seed is has potency as substitution of plastic in
the future.

1.2 Problem Formulation
The problem formulating for this research are:
1. How the effect of an addition glycerin at bioplastic to dissolved point bio-
plastic?
2. How the effect of an addition glycerin at bioplastic to absorptionbio-plastic?
3. How the effect of an addition glycerin at bioplastic to hedonicbio-plastic?
4. Where is the best concentration betweeen 2.5, 5, 7.5, and 10% glycerin
concentration in dissolve point, absorpion, and hedonic test?
1.3 Purposes
The purposes of this research are:
1. To know the effect of an addition glycerin to dissolve point test
2. To know the effect of an addition glycerin to Absorption test
3. To know effect of an addition glycerin at bioplastic in hedonic test
4. To know the best concentration between 2.5, 5, 7.5, and 10% glycerin
concentration in dissolve point, absorption, and hedonic test.

CHAPTER II
LITERATURE PERVIEW

2.1 Jackfruit Seed


Jackfruit seed is a seed from jack fruit. Jackfruit is the plant that derived from
India and spread into tropical region include Indonesia. In Indonesia, this plant has
several names includingnongko/nangka (Java, Gorontalo), langge (Gorontalo),
anane (Ambon), lumasa/malasa (Lampung), nanal atau krour (Irian Jaya), nangka
(sunda). Several foreign names that are: jackfruit, jack (United Kindom), nangka
(Malaysia), kapiak (Papua New Guenia), liangka (Philiphine), peignai (Burma),
khnaor (Cambodia), mimiz, miiz hnang (Laos), khanun (Thailand), mit (Vietnam).
Jackfruit in biology has classified as folowing:

Jackfruit seed is rich with nutrient so it can be an alternative for new food
sourch.The composition in jackfruit seed imcluding amilum, phospor, iron, water,

calcium, and the other which is very useful for our body. The following is the table
of details of chemical composition in jackfruit seed.

The seed which have lengt between 2-5 cm and widh between 1-2 cm generally
used as food ingredient such as vegetable, yoghurt, and the others. Besides was
food ingredients, Jackfruit seed has potency to be a bio-plastic starch based. In fact,
according to Fairus (2010), the conten of starch in jackfruit seed reach 35%.This
amount even more much than cassava that usually used as food ingredient
Indonesian people.

2.2 Starch
Starch is a white, tasteless, and not smell complex carbohidrate. Starch has
molecule formula (C6H10O5)n and can be easy degradated in environment and
renewable. Starch consists of two the components, amylose and amylopectin.
Amylose is a linear chain polymer formed from glucose by the bond of unity -1,4-
glycosidic.Amylopectine is divided chain polimer which formed from glucose -
1,4- glycocidic and -1,6-glycosidic based on fairus literature (2010). The
following are chemical structure of Amylose and amylopectin.

Starch can be used as an ingredient for plastics because of its biodegradable.


Beside that, starch is material that renewable and cheap enough. But, starch layer is
easy broken and its result didnt have the same caracteristic as convencional
plastic.The following is chemical composition of jackfruit seeds starch.

2.3 Glycerin
Glycerin is a trihydroxyl alcohol which consist three carbon atoms.So,each
carbon atom has OH groups. One molecule can bond 1-3 fat acid molecule in ester
form, that called monoglyceride, digliceride, and triglyceride. Glycerin has a role in
indstry based on West Sumatera Universitys literature.

Glycerin cannot be found in environment in free state, but it is producxed as


side result of sort of chemical process. Process that can produce glycerin are the
process of making soap, process of making bioethanol, and transesterification. But,

glycerin have generally used in common life altrough in an industry. In common
life, glycerin is used an the following.

Glycerin can be absorbed by foods and drinks, can be used as medicine and
cosmetic, processing tobacco, wrapper material, lubricant, and the others.

2.4 Bioplastic
Bioplastic is a plastic or polimer that in natural process can be easly degradated
by insect altrough by the wheather (wet and sun radiation). Bioplastic ussualy used
for single use plan. Bioplastic is produced from sintesa essense intermediate
biology compound which derive from natural producs. The material now
commonly used as the substitution of plastic and degradable the result that good for
environment. According to Cowd(1991) the process to make a polimer called
polimerisation. This polimerisation is the making of giant molecule trough the
annexation little molecules called monomer. The annexation of polymer bond is
produced key bond between monomer which called backbone.

Bioplasticis kind of plastic which has main natural material. The main material
which is usually used is starch and natural oil. The main caracter of bioplastic is
degradable naturally because of microorganisms activity, so it can be categorized
as biodegradable polymer. The meaning ofbiodegradable iscan be degraded into
simplesenyawa which is influenced by any factor, one of them isenzimatic activity
by a microorganism. Based on the source, polymer is classificateas natural
polymerand synthetic polymer.
Bioplastic is usually used for once-used thing, like pack food
andcatering.Bioplastic is also used for bag, plate, place for fruits, vegetables, eggs
and meat, bottle for drinking and milk product, and foil packing for fruits and

vegetable. Now is being developed bioplastic for non-disposable plastic, included
phone cells cover, carpets dietary, cars interior, saluran bahan bakar, aplication
of plasti cpipe, and electro-active bioplastic which is being developed can be used
to electric on literatur fromSuszkiw, January ( 2005).Medical Implant which is
made from PLA, which dissolve in body, makes patien not to be surged again to
take the implant. In agriculture, composes pocket is made from starch polymer, so
after used the compose the pocket can be unused for longer time. Kind of bioplastic
are starch bioplastic, cellulose bioplastic, a few aliphatic polyester, plastik asam
polilatik (PLA), poly 3 hydroxiburitate (PHB), polyhydroxialcanoat (PHA), dan
polyamide 11 (PA 11).

RESEARCH METHODOLOGY

3.1 Place and Time


This research was do neat Chemistry and Biology LaboratoryMAN 2 Kota
Bogor on Desember 27th2013 until January12th2014.

3.2 Materials and Tools


The main material in this research is jackfruits seed which is got from
jackfruit seller at Bogor. Beside jackfruits seed, the other materials are aqua, water,
and glycerin. The tools are chemical glass, oven, bioplastic maker, knife, filter,
blender, heater, and thermometer.

3.3 Research Method


This research consist of three main steps, those are jackfruits starch extraction,
making of bio-plastic, and testing of bio-plastic shaped uji usia bioplastik, uji serap air
dan uji hedonik. Picture4displayresearch process:

.3.1 Starch Extraction
Starch extraction of jackfruit in condition damp start with set material
jackfruit which after strip then washable and give water with comparison 1:3
and repeatable as much as 2 river. Furthermore, jackfruit after strip grind with
blender then give water as much as 6 liter. After give water, jackfruit which
already grind then filter. After filter, precipate while 12 hour. precipate starch
afterwards take and dehydrated with method input kitchen stove. After dried,
starch afterwards grind.

3.3.2 Making of Bioplastic


On making of bioplastic give treatment glycerin, is increment glycerin
2,5%, 5%, 7,5%, and 10%. Jackfruit starch with quality constant 2,5 g which
add glycerin with concentration 2,5% afterwards add aquades until quality
composition film become 25 g. afterwards stir to homogeneous mixture
coagulate. After that, stir to 5 minutes and cast on crucible kiln. Bioplastic
dehydrated with into oven until bioplastic apart from crucible kiln. Process
which same to od treatment glycerin 5 %, 7,5%, and 10%.

3.3.3 Test Bioplastik

3.3.3.1 Dissolve Point


To do stew bioplastic until 3 minutes on boiling water. After
stew, will happen change shape on bioplastic. Because that, we
category change shape become 5 (five) floor is :

Floor 1: bioplastic still shape solid/incorruptible shape

Floor 2: bioplastic already trickle 25% from wide bioplastic

Floor 3: bioplastic already trickle 50% from wide bioplastic

Floor 4: bioplastic already trickle 75% from wide bioplastic

Floor 5: bioplastic already trickle 50% from wide bioplastic

3.3.3.2 Absorption
This test is begun with bioplastics mass measuring. After that,
the bioplastic is boiled in 400 ml water. Then, measure bioplstics
mass. After measured, it will look the different between the first

mass (W0) and the last mass (Wt) until the percentage of absorption
power can be formulated like this,

3.3.3.2 Hedonic Test

In this test, dilakukan giving of bioplastic sample that has been


complicated with instant noodle to 14 panelists, all panelists character had been
trained. Then, the panelists taste and give value to every instant noodle that has
been given. The valuation are aroma (A), taste (R), Texture (T), and color (W). For
every valuation is given value between 1-7 with details:

2: Dislike

3: Probably Dislike

4: Same as Usual

5: Probably Do Like

6: Do Like

7: Very Do Like

3.4 Making of Bioplastic
The making of bioplasticin this research is done with four treatment and twice
repeating, the details:

A: Making of bioplastic with treatment of glycerin 2,5%.

B: Making of bioplastic with treatment of glycerin 5%

C: Making of bioplastic with treatment of glycerin 0%

D: Making of bioplastic with treatment of glycerin 7,5%

E: Making of bioplastic with treatment of glycerin 10%.

HASIL DAN PEMBAHASAN

4.1 Starch Extraction

Main material which is used in this research is jackfruits seed which was got from
waste of Bogor people. The first step is process of starch extraction. This process was done
by used wet method. It is becausedof the wet method could maximalize the starch result
from main material which rich of diatery. The result of process jackfruits seed extraction
in this research is laid out on Table 3.1.

Based on the table, can be known that jackfruits seed consist of two main
parts, bot are jackfruit seeds peel and flesh . Used 744 g of jackfruits seed, resulted
703 g flesh (94%). On the second, used 653 gr of jackfruits seed, resulted 566 g
flesh (86%) with flesh percentage from every jackfruits seed are 84%, 79% and
86%. From the first step also known that the jackfruit seeds peel has mass 41 gram
(5.5%) from 744 gram of jackfruits seed. But on the second step, resulted 87 g
(14%) of peel form 653 g of jackfruits seed, then can be concluded that percentage
of peel from jackfruits seed is 12%. And what is more, on test the first can starch as
mush as 116 gram or equivalently 15,6% from totality jackfruit. On test 2, can strach
as much as 106 gram from 653 gram or equivalently 16,3%. Until can conclusion
that starch which can from process extration starch is 15,95%. Totality not as much
as which can of Fairus (2010), is as much as 35%. This because water in purpose
extracese jackfruit seed more little than used by Fairus, that comparisan 12:1 water
with starch.

Starch that will use as component in this product bioplastic obtain from meat
jackfruit seed in making extract wetly. It is the picture starch jackfruit seed showed

The comparison of bioplastic with content 5% glicerin of the best. Two superiority
from this research is the benefit of material food for making of bioplastic. Material food
that mean is jackfruit seed. Beside, increase material food, starach jackfruit seed increase
many nutrition that potential increase funcitional food. Cobination among two materials
that is, starch from jackfruit seed with glicerin can rever on the picture 5, that :

4.2 Dissolve Point


Every treatment alredy to do dissolve point on boil water with production
bioplastic dissolve in boil water but bioplastic isnt dissolve with perfect.If never from
the shape, bioplastic keep on same of shape, didnt change not a praticle. But, it
happen change texture of bioplastic. That bioplastic change become phlegm of water
and if touched that texture is resemble like porridge. And when tried for eaten
bioplastic didnt taste anything or tasteless and easy dissolve when in mouth for a
moment that lost.

4.3 Absorption

In this test is happen different mass of bioplastic after boiled into water, as
below,

On table this seen clear that bioplastic can absorbtion very much is bioplastic with
concentrarion glycerin 10%. This matter happen because glycerin in multitudes
make bioplastic become much more elastic and stronger have inside water. This
demondstrab at the moment drying bioplastic, treatment 10% is treatment at longest
dried. While bioplastic at the least absorbtion is bioplastic with teratment 5 %
glycerin.

Bioplastic with charater mechanics which the best in concentration glycerin 10%
prosses price absorbtion which enough so high as big as 186,60%.

Based on the table we can conclude that panelists who tested the hedonic test prefer
5% of glycerin to make bio-plastic. It because, amount of water from this bio-plastic more
little than other concentration, those are 2,5%, 5%, 7%, and 10 %. The highest result from

total result of hedonic test is 21,86, we know that panelists liked bio-plastic with 5% of
glycerin.

CLOSING
3.2 Conclusion

We know that in dissolve point test happened the influence of concentration


starch and the influence of addition glycerin to bioplastic shape, it is happened
change of texture. In absorption test, this research resulted the best result in
mechanic test with 10% of glycerin treatment and absorption amount of 186,6 %.
Absorption percentation in absorption test from every control treatment 2,5%, 5%,

the utilization. Also needed involvement all people in sosialize the using of this bio-
plastic.
