Faver, Turner ramp up campaigns for judge runoff

Both candidates hope U.S. Senate runoff will help drive turnout

“From the perspective of fi-
nal decisions, they couldn’t re-

was going to be in the runoff,”
Turner told The Dispatch. “No
one wants to spend more money
if they’re no longer in the race.
The delay, while unavoidable,
is something that could have
a bigger impact on the 21-day
count, Faver led the general
election field with 5,017 votes.

ney, holds a 12-vote lead (4,797-

Now in Mississippi, Mike
Espy is challenging Republi-
can Sen. Cindy Hyde-Smith.
She faces sharp criticism for a

video that surfaced Sunday of
her praising a supporter at a
Nov. 2 campaign event in Tupe-
lo by saying: “If he invited me
to a public hanging, I’d be on
the front row.”
Mississippi has a history of
racially motivated lynchings.
Hyde-Smith is white and Espy
is black.
Hyde-Smith said the hang-
ing phrase was “an exagger-
ated expression of regard” for
the person who invited her to
speak. She also said it is “ridic-
ulous” to think the phrase has
a negative connotation.
Democratic consultant Joe
Trippi retweeted the video of
Hyde-Smith with the comment
“incredible” and a request for
people to donate to Espy.
Trippi, who is working for
Espy, has been on several
high-profile campaigns, in-
cluding Jones’ in 2017. He told
The Associated Press on Tues-
day that Hyde-Smith’s verbal
gaffe shows she is a weak can-
didate.
“She just doesn’t seem to be
ready for prime time,” Trippi
said.
Hyde-Smith was in her sec-
ond term as Mississippi agri-
culture commissioner when
Republican Gov. Phil Bryant
appointed her to temporarily
succeed longtime Sen. Thad
Cochran, who retired amid
health concerns in April. The
winner of the Nov. 27 runoff
will serve the final two years
of the six-year term Cochran
started.
Hyde-Smith and Espy each
received about 41 percent in a
four-person race Nov. 6 to ad-
vance to the runoff.

more conservative than Cindy
Hyde-Smith and they see what
Doug Jones has done in Ala-
bama and they have no reason
to believe that this wouldn’t be
the exact result in Mississip-
pi if we elected a Democrat,”
Barbour told AP. “I think those
people will vote and when they
vote, they will vote for Cindy
Hyde-Smith.”

JACKSON — A study
of whether ingredients
extracted from marijua-
na can reduce seizures in
children is moving ahead
in Mississippi.
The University of Mis-
sissippi Medical Center
announced last week that
the six-month trial began
early last month, after
years of bureaucratic ob-
stacles.
The state Legislature
carved out a narrow ex-
that don’t respond well to
current medicines. That
means children may not
be able to sleep, walk, or
do other daily tasks.
The medical center
had to win approval from
the FDA and DEA before
it could move ahead, and
get the National Insti-
tutes of Health to agree to
give the marijuana to the
study. That’s because the
marijuana grown at a Uni-
versity of Mississippi cen-
ter in Oxford is actually
owned by the federal gov-
ernment. Ingram said the

causes marijuana users to
get high. The marijuana is
processed in Oxford and
shipped to Jackson, where
a pharmacist adds it to
sesame oil for patients to
take orally or through a
feeding tube.
Ingram says the study
aims to find out whether
cannabidiol is safe, has
harmful interactions with
other drugs and helps pa-
tients.
“These kids are very,
very sick,” he said.
They’re not currently re-
sponding to what’s on the
market to help.”
He said preliminary
results are encouraging,
but it’s too early to draw
any conclusions, especial-
ly because of the small
size of the study. Ingram
said that if the study is
promising, he will seek to
widen the number of par-
ticipants.

however, said her daugh-
ter isn’t a part of the study
because there are other
children who are sicker.

“Toccata,” a work by St. Paul’s own
organist, Len Bobo, will add festive
energy to the event.
“‘Toccata’ threatens to put the
organist in traction afterward,”
Bell explained of the physically
demanding piece. “The piece
has a perpetuum mobile motive
throughout, a festive recurring call
of sorts, while brimming with soar-
ing, joyful melodic fragments.”
Bell, who serves on the faculty
of the Hayes School of Music at
Appalachian State University, has
performed a number of Bobo’s
compositions and premiered his

community as a beloved teacher at
Heritage Academy for nearly two
decades.
“All the children loved her,” said
the Very Rev. Anne Harris, rector
of St. Paul’s. “Martha Claire’s light
was a gift to all of us.”

MSU’s Veterans Day ceremony rightly recognizes Montgomery

On Saturday, Mississippi
State will honor veterans
during its final home football
game, a tribute that the univer-
sity observes each November.
There will be an Air Force
fly-over and the MSU band will
perform a salute to the mili-
tary at halftime.
But this year, there will be a
new wrinkle to pay homage to
a special veteran.
When the Bulldogs take
the field Saturday, they will be
wearing a special uniform de-
signed to pay homage to 1943
MSU graduate G.V. “Sonny
Montgomery,” a distinguished
World War II veteran who
represented Mississippi’s
Third Congressional District
for 30 years in the U.S. House
of Representatives.
Montgomery’s commitment
to the military started when he
left his home state shortly af-
ter earning his degree at MSU
for the U.S. Army and World
War II, where he fought in
Europe with distinction, being
awarded a Bronze Star, Legion
of Merit and Combat Infantry
Badge.
He also served in active
duty in Korea as a member of
the Mississippi National Guard
and remained in the National
Guard for 35 years, much of it
without pay.
But in some respects, his
enduring contribution to the
military came through his
service in Congress, where he
was an unflinching advocate
for the military. It was in that
role that Montgomery made a
contribution that continues to
affect the lives of our veterans
to this day.
In 1984, Montgomery
authored a revamped GI Bill,
which has been known as the
“Montgomery GI Bill” ever
since. The legislation assured
that the legacy of the origi-
nal GI Bill, passed in 1944,
would live on as VA home loan
guaranties and education pro-
grams continue to work for our
newest generation of combat
Veterans.
Montgomery died in 2006
and since that time, his alma
mater has taken steps to pre-
serve his memory. A statue of
Montgomery is located on the
Drill Filed while the universi-
ty’s veteran center bears his
name.
But perhaps the best tribute
to Montgomery’s legacy is the
university’s commitment to
providing veterans educational
opportunities. The university
is regularly recognized as
being a “veteran friendly” insti-
tution and the veteran center
that bears his name continues
to be a valuable resource for
veteran students.
Saturday’s program is
intended to honor the service
of all veterans, but in taking
time to remember and appre-
ciate Montgomery’s special
contributions, the university
understands its connection to
Montgomery’s unique service.
Montgomery is more than a
statue or a name on a building.
His contributions continue
to improve the lives of our
service men and women.
Saturday’s tribute is a fitting
reminder of that.

A poll worker’s thoughts
I have worked at the polls for
a number of years and have both
pleasant and unpleasant experienc-
es. For the public’s information,
the poll workers are required to be
at the poll before 6 a.m. and don’t
leave until all the voting machines
are downloaded and poll tallies are
completed, after the polls close at
7 p.m. This procedure takes up to
two hours or more. The results are
then carried to the courthouse by
the poll manager, where the absen-
tee and affiliated ballots are logged
in and verified and the memory
cards are downloaded and paper
work is checked.
During the voting process, iden-
tification is verified and checked
against the poll roster, the voter
signs the roster and a voters card is
given to the voter. If an individual’s
name is not on the printed rolls, a
call is made to the clerk’s office,
where the name is checked against
the master roll. As poll workers
we only do what the clerk’s office
directs us to do. We don’t get paid
enough to be threatened by saying,
”I’ll call the Secretary of State,”
if a voter who is not on the rolls
isn’t allowed to vote. And I know
about provisional ballots and their
purpose.
There is a shortage of workers
at the polls and to complain about
poll operation, long lines and the
wait to vote, maybe you should toss
your hat into the ring and volunteer
for poll duty. The complaints come
from a select few, because on more
than one occasion, I have heard a
hearty thank you. That makes our
day, because we don’t work for the
pay.
I’ll close with a final thought:
A little kindness and patience and
respect for our fellow citizens will
go a long way, whether you are a
voter or poll worker.

The tickets were pre-sold
for $3.50 apiece, with the
sales deadline almost two
weeks in advance to en-
sure there’s enough time
to prepare enough food.
Shumpert said stress
began with one particu-
lar dish, but everything
has come together just in
time.
“It has been a little
stressful on the dress-
ing, but we made our way
through,” Shumpert said.
“It’s the taste test. You
have to make sure it’s
just right with all the in-
gredients. Everybody has
to pitch in. I have a won-
derful staff. Wonderful. I
wouldn’t ask for anybody
better.”

“I don’t think we could have asked
for anything better,” Trufant said. “We
had tremendous effort from both teams.

a game Tuesday night.
“Winning at Starkville is a big deal,”
White said. “They are always one of
the best programs in the state. They
don’t lose at home, so for us to come
here and play well enough to win is
exciting. This was just big. Everybody
was excited. It doesn’t matter how you
win. You just have to find a way to win.”
Columbus built a 12-point halftime
lead, lost the lead, but then found a
way to take a 32-25 victory against
Starkville at the Bee Hive.
“Two years since we won here, so this
is special,” Columbus coach Yvonne Hair-
ston said. “Just lost our composure there
in the second half. Proud we regrouped
and found a way to win the game. Defen-
sively, we were outstanding.”
In the opening half, Starkville (1-2)
missed all 24 shots it took from the field.
The teams were tied 2-2 after one
quarter. The Lady Falcons outscored
the Lady Jackets 13-1 in the second
quarter for a 15-3 halftime lead.

sive end,” Columbus forward JaTyler
Turner said. “Everybody was playing

Atavius Jones made a habit of becom-
ing the enforcer on the Starkville High
School boys basketball team last season.
This season, as the football playoffs
and Jones’ absence from the court con-
tinues, sophomore Jamarvis Phillips is
more than happy to fill the void.
Phillips scored 16 points and had
eight rebounds in Starkville’s 62-49 victo-
ry against Columbus on Tuesday night at
the Bee Hive.
“He is just going to get better and
better with time,” Starkville coach Greg
Carter said. “Tonight, we got him loose
underneath the basket several times.
Our ball movement in the second half
was very pleasing.”
Starkville has mixed some varsity vet-
erans with some newcomers to get off to
a 3-0 start. On the other end of the spec-
trum, new Columbus coach Phillip Mor-
ris is coaching a bevy of new faces on the
reigning Class 6A State champions.
“Our inexperience got us in trouble
some tonight,” Morris said. “We will be a
lot different team when district play starts
in the new year. Right now, we are just log-
ging minutes. Players are getting better
with each game. The effort is there. We
are playing tough, aggressive basketball.

SCOOBA — The No. 1 and reigning national cham-
pion East Mississippi Community College football
team had 13 players earn postseason honors Tuesday
when the National Junior College Athletic Association
(NJCAA) All-Region 23 and Mississippi Association of
Community and Junior Colleges (MACJC) All-State
teams were officially announced.
NJCAA Region 23 Coach of the Year Buddy Ste-
phens had seven players named to the All-Region
team: wide receiver Dontario Drummond, running
back Deon McIntosh, quarterback Messiah deWeav-
er, offensive linemen LaQuinston Sharp (Columbus
High School) and Jakoby Jones (Starkville), defensive
lineman Everitt Cunningham (West Point), and kick
returner DJ Clayton.
Lashawn Paulino-Bell, Fred Hervey, and JaQuez
Akins (Starkville) joined them as first-team MACJC’s
All-State/North Division selections.
EMCC’s wide receiver Kalem Reddix, offensive
lineman Connor Reinike (Starkville) and defensive
back Josh Miller also were second-team MACJC’s All-
State/North Division picks.
The MACJC coaches selected McIntosh, a trans-
fer from Notre Dame, and Sharp, a Mississippi State
commit, as the Offensive Most Valuable Players for the
MACJC North Division’s backs and linemen.
EMCC will try to win its fifth national title in eight
years at 7 p.m. Thursday, Nov. 29, when it takes on No.
2 Garden City (Kansas) C.C. in the NJCAA eTeamS-

STARKVILLE — Mississippi State football legends
Walt Harris and Art Davis will become the newest in-
ductees into the Bulldogs’ “Ring of Honor” in a ceremo-
ny when the MSU football team plays host to Arkansas
at 11 a.m. Saturday in Davis Wade Stadium.
Harris and Davis will join Johnie Cooks, Jack Cris-
til, Joe Fortunato, Kent Hull, D.D. Lewis, Tom “Shorty”
McWilliams, and Jackie Parker in the Ring of Honor.
Fortunato was inducted last October.
Harris and Davis will sign autographs prior to the
game in the C Spire Fan Zone.
Harris, one of the most prolific cornerbacks in SEC
history, started 24-straight games for MSU from 1992-
95. He set the school record for career interceptions
with 16. He is tied for the record today. Harris tied the
MSU career defensive touchdown record and set Bull-
dog single-season marks for interceptions in 1993 and
1994 with six.
Harris became the first NFL first-round draft choice
for MSU in 13 years when he was selected 13th overall
by the Chicago Bears in the 1996 NFL draft. He played
13 NFL seasons, including six seasons with the Bears.
Davis, a Clarksdale native, etched his name into
MSU and Southeastern Conference lore as a two-way
player from 1952-55. Davis starred as a two-time All-
SEC halfback and defensive back for the Bulldogs,
racking up 1,148 rushing yards, 18 touchdowns and
averaging 4.8 yards per play for his career.
Davis, whose NFL career was cut short due to an
injury, was inducted into the MSU Sports Hall of Fame
in 1971 and the Mississippi Sports Hall of Fame in 1981.

become more ingrained
in the community. I think
they are going to support
us pretty well.”

other exciting sports news
coming at The W. The
school likely will add at
least one more sport —
possibly track and field
— to the mix in the next
year or two. Trufant also
has been working hard to
attract financial support for
the school’s plans to build
an artificial turf baseball
stadium on campus. The
architectural renderings
of the facility, which would
be right next door to
Pohl Gymnasium, offer
a glimpse at a beautiful
field right in the heart of
the campus. There’s no
telling how much of a draw

“Berniya had another really good
year,” Thornton said. “Throughout
the last three or four years, she has
been one of our most consistent hit-
ters. We tried to play her at second
base and do some different things, but
we kind of got to the point where we
knew we had to move her to pitcher,
which probably wasn’t her first option,
but she stepped up and pitched well
for us. ... Her willingness to accept
that role was a big part of that.”
Hardin went 6-for-6 (all singles)
with a walk in the two games. She
said she also had a chance to play
catcher for the first time, which she
enjoyed. She said she volunteered to
play catcher and played the position
at least four innings. She said she will
play on the school’s fast-pitch team
in the spring in hopes of realizing an

is to keep that positive attitude.”

Given the NCAA regulation of no
more than 20 hours per week, prac-
tice time on the field is limited, which
is why MSU chooses not to focus on
something that requires significant
repetitions to master.
“They watch the NFL, they’ll see
other teams in college, they see under
center and it looks so easy,” Nebrich
said. “If you’re practicing it over and
over again, it is an easy concept.
“When you’re in a high-pres-
sure situation, you’re going into
something that you just don’t do.”

Andra Espinoza-Hunter and
Anriel Howard are the latest
players to evoke the familiar
“welcome to my world” comment
from Schaefer.
On Tuesday, Howard, a gradu-
ate transfer from Texas A&M, was
discussing the different shades of
blue nail polish she has on her right
hand. The same colors appeared on
Howard’s right hand, although you
would be mistaken if you thought
the color on her thumbs was yellow
and the color was green on her in-
dex fingers. The colors on all five of
Howard’s nails were shades of blue
— Sea Foam blueish green, royal,
cloud, sky — in part because she
said she couldn’t figure out which
one she liked the best.
“I thought it was pretty cool,”
Howard said.
Said Espinoza-Hunter, a trans-
fer from Connecticut, “I don’t know
about those last two (referring to
the shades that looked like they
were green and yellow).”
If all coaches dealing with trans-
fers in key positions had to worry
about issues like colors of nail pol-
ish, they likely would be in trou-
ble. For Schaefer, the impromptu
fashion discussion at the end of the
team’s news conference signaled
a new beginning. While Vivians’
name was mentioned, Schaefer’s
Bulldogs have turned the page and
will look to Espinoza-Hunter and
Howard to lead the way. Judging
from Schaefer’s comments about
his sophomore guard and the re-
bounding wizard, the newcomers
already have made their impact on
the program.
“They’re just a real positive in-
fluence on our program,” Schaefer
said. “They ain’t had a bad day.
That is really special as a coach to
have players like that. Not every
one of our players is like that, so
they are a benefit to those kids, too,
to show them, ‘Hey, look, it doesn’t
matter if the milk was sour on my
Wheaties this morning, I am still
going to have a bad day.
“I have had some really good
players over the course of my ca-
reer that I have been able to coach
and it didn’t matter if they flunked a
test, ate something bad, or whatev-
er. When it came time for practice,
no one was going to ruin the joy of
basketball in their life. These two
kids, I don’t think anyone is going
to ruin the joy of life in their life.
They are just great, great kids.
They just bring something to our
program that I really cherish, I
really appreciate, work ethic and
attitude, and it’s a given with these
two.”
Espinoza-Hunter made her de-
but Friday in a 72-44 victory against
Virginia. In 29 minutes, she had 13
points and was 3-for-8 from 3-point
range. Schaefer said she gives the
Bulldogs another shooter who has
a “scorer’s mentality.”
Howard, who left Texas A&M
after grabbing a program-best
1,002 rebounds, is averaging 8.5
points and eight rebounds in 19.5
minutes per game.
Schaefer said Espinoza-Hunt-
er and Howard should provide
valuable experience following the
graduation losses of the program’s
winningest group of seniors. A “dif-
ferent” MSU squad will need that
experience and will rely on a differ-
ent kind of leadership. Thanks to
Espinoza-Hunter and Howard, that
example will be set with a smile
and an infectious spirit that rubs off
on the rest of the Bulldogs.
Espinoza-Hunter said it is ob-
vious to see the energy Howard
brings to the court. She said her
new teammate, whose nickname
is “lashes,” is just as likely to offer
a pat on the back or a joke to lift her
spirits.
Schaefer said the spirit Espi-
noza-Hunter and Howard possess
is bringing the Bulldogs together,
which is a good sign as he contin-
ues to preach about defense and
getting it to the standard he de-
sires.
“I think these are two great
leaders,” Schaefer said. “I think
they lead by example. They have
a presence. It is hard to be a great
player if you have no presence
on the court. To me, they have a
presence, not only as basketball
players, but as people. Again, it
makes it fun to coach, and it is
fun to be a coach at Mississippi
State when you have players like
this when you walk into the gym

are different from their rich,
tender American cousins.
The dough for these rustic rolls is
lean and the crumb is open, with a
yeasty, savory flavor. But the best
part might be their crust — so
crisp it practically shatters when
you bite into it, yet chewy enough
to offer satisfying resistance.

found success when we upped
the hydration of our roll dough.
The water created steam during
baking, opening up the crumb
and making it airier.
For an ultracrisp crust, we
came up with a two-step process
that mimicked a steam-injected
oven: First, we misted the rolls
with water before starting them
in a cake pan at a high tempera-
ture to help set their shape (since
the dough was soft, individually
baked rolls turned out squat).
Next, we lowered the tempera-
ture, pulled the rolls apart, and
returned them to the oven on
a baking sheet until they were
golden on all sides. We do not
recommend mixing this dough by
hand.

scratch cakes, cookies, pies, can-
dies, breads, cheese straws, jellies
and more for their Thanksgiving ta-

and savories are made by many of

lips is one of them. She never has to

eighth-grade student there — that
stroyed the school that the home
was connected to, where it served as
the home economics building. The
house was severely damaged, but
immediate efforts by concerned cit-
izens saved the structure from dem-
olition. They were given permission
to restore the former home of CSA
Gen. Stephen D. Lee, first president
of the Agricultural and Mechanical
College of Mississippi — now Mis-
sissippi State University. Lee was
also instrumental in the congressio-
nal passage of the law creating the
Vicksburg National Park in 1899
and was its first superintendent. He
was also president of the Mississippi
Historical Society and trustee of the
Mississippi Department of Archives
and History. He was described by
some colleagues as “the father of in-

“He was quite a remarkable
man,” said Phillips, a Lee Home
docent. “He was honored by
three U.S. presidents and was
respected by thousands. In
reporting his death, one of the
midwestern newspapers said
that, in his writings and speech-
es, he had done much to heal
the wounds between the north
and the south, that he had
taken Rebels and Yankees and
made Americans of them.”
The Lee Home, which is
available to rent, now serves
as the site of weddings, recep-
tions, meetings and educational
events. It’s also open for tours
on Fridays from 10 a.m.-4 p.m.
Upstairs it houses the Florence
McLeod Hazard Museum.
Phillips said, “We are so
grateful to the people who
saved the home from being torn
down after the 1959 fire de-
stroyed Lee Junior High. Today
it holds a wealth of information
about life in Columbus in the
late 1800s and also a peek into
the early- to mid-1900s. It’s
such a treasure for Columbus.”
For the holiday table
Phillips enjoys making a
variety of treats for the annual
Country Store that has helped
with Lee Home projects such as
a new roof and wheelchair-ac-
cessible ramp.
“I’ve made something differ-
ent just about every year. I’ve
made cakes, cookies, toffee,
brownies ... and this year, I’m
making Mississippi tea cakes.
They are tiny tea cakes cut out
in the shape of the state.” The
recipe is one Phillips custom-
ized, from the cookbook “Come
on In!”
She’s been getting a bit
of help from her 14-year-
old granddaughter, Miriam
Madan. The Heritage Academy
eighth-grader is practicing her
tasting and wrapping skills.
Bake sale goodies are festively
presented, making them attrac-
tive as holiday hostess gifts.
“I’ve been learning a little
in the kitchen, but I also like
eating what she makes,” Madan
grinned, referring to her grand-
mother’s specialties.
Paulette Garton chairs the
2018 Country Store.
“We are so excited about all
the delicious things everyone is
bringing for the bake sale,” said
Garton, noting that the list of
contributing cooks is about 16
pages long.
Although the sale doesn’t
begin until 10 a.m. sharp, shop-
pers can stop by the Lee Home
at 316 Seventh St. N. beginning
at 8 a.m. Tuesday to pick up a
number to lineup shortly before
doors open — and to get a peek
at the treats available.
“We’re doing something just
a little different this year,” said
Garton, explaining that when
doors open, the first 10 num-
bers will be admitted for “a cou-
ple of minutes” before the next
10 numbers go in, and so on.
As in years past, $1 tickets
for a drawing to win a center-
piece by Mildred Austin will be
available at the front table.
Free tours of the museum
will be given Tuesday morning.
“There is no way to overstate
the importance of the Country
Store,” said Stephen D. Lee
Foundation President Eulalie
Davis. “These funds help us
with repairs, maintenance, and
building projects as well as pay
our insurance. The Lee Home
Board is grateful to these ladies
who work hard to make the
event a success and to the com-
munity members who come
shop. It is a delicious way to
contribute to historic preserva-
tion in Columbus.”

olate frosting calls for
just three ingredients,
but they are transformed
by the microwave and
refrigerator. Don’t use
salted butter in the recipe
that makes enough to
frost 12 cupcakes or one
sheet cake.
CHOCOLATE
SHEET CAKE
Servings: 15
Start to finish: 1 hour, 15 min-
utes (Inactive time: 1 hour,
plus cooling time)
Vegetable oil spray
1 1/2 cups sugar
1 1/4 cups all- purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups bittersweet or
semisweet chocolate chips
1 cup whole milk
3/4 cup Dutch-processed
cocoa powder
2/3 cup vegetable oil
4 large eggs
1 teaspoon vanilla extract
Milk chocolate frosting (recipe
follows)
n Adjust oven rack to middle
position and heat oven to 325
F. Spray bottom and sides of
13-by-9-inch metal baking pan
with vegetable oil spray.
n In medium bowl, whisk
together sugar, flour, baking
soda and salt.
n In large saucepan, combine
chocolate chips, milk and
cocoa. Place saucepan over
low heat and cook, whisking
often, until chocolate chips
are melted and mixture is
smooth, about 5 minutes.
n Turn off heat. Slide sauce-
pan to cool burner and let
mixture cool slightly, about 5
minutes.
n Add oil, eggs and vanilla to
saucepan with chocolate mix-
ture and whisk until smooth,
about 30 seconds.
n Add flour mixture and whisk
until smooth, making sure to
scrape corners of saucepan.
n Use rubber spatula to
scrape batter into greased
baking pan and smooth top
(ask an adult for help because
saucepan will be heavy).
n Place baking pan in oven.
Bake until toothpick inserted
in center comes out with few
crumbs attached, 30 to 35
minutes.
n Use oven mitts to remove
baking pan from oven (ask an
adult for help). Place baking
pan on cooling rack and let
cake cool completely in pan,
about 2 hours.
n Use icing spatula to spread
frosting evenly over cooled
cake (see photo, right). Cut
cake into pieces and serve.
MILK CHOCOLATE
FROSTING
Makes about 2 Cups
Prep Time: 5 Minutes
Cook time: 10 minutes, plus 1
hour chilling time
1 1/3 cups milk chocolate
chips
1/3 cup heavy cream
8 tablespoons unsalted
butter, cut into 8 pieces and
softened
n In large microwave-safe
bowl, combine chocolate and
cream. Heat microwave at 50
percent power for 1 minute.
Stop microwave and stir with
rubber spatula. Heat in mi-
crowave at 50 percent power
until melted, 1 to 2 minutes.
Remove bowl from microwave.
n Add softened butter to
chocolate mixture and use
whisk to stir and break up
large butter pieces. Let sit
until butter is fully melted,
about 5 minutes. Whisk until
completely smooth.
n Refrigerate frosting until
cooled and thickened, about
1 hour.
n Use electric mixer to beat
frosting on medium-high
speed until frosting is light
and fluffy, 30 seconds.

You can’t serve turkey
without gravy (and if you
ask us, the same goes
for mashed potatoes and
stuffing, too), but this key
part of any holiday feast
is often left to the last min-
ute, frantically cobbled
together once the bird
emerges from the oven.
Our make-ahead gravy
relieves some of the stress
of holiday hosting and
even boasts bigger turkey
flavor than your typical
gravy recipe. Good gravy
comes from good stock,
so we started by roasting
turkey parts with chopped
carrots, celery, onions and
garlic.
Once the meat was
deeply browned and the
vegetables caramelized,
we transferred everything
to a Dutch oven. Chicken
broth and white wine plus
some sprigs of thyme
promised flavorful, savory
complexity.
Following a lengthy
simmer, we strained out
the solids and proceeded
with our gravy making
(though the stock can be
refrigerated or frozen for
later use). We used the
stock’s fat to build a roux,
browning a cup of flour
in the heated fat before
whisking in the stock.
The finished gravy
boasted all the body of a
traditional preparation,
but it was ready with
time to spare and offered
incredible meaty depth.
If you wish to make this
gravy at the same time as
your turkey, you may add
the giblets and neck along
with the thighs or wings.
Discard the strong-tast-
ing liver before using the
giblets.
For more flavor, after
roasting the turkey, skim
the drippings from the
pan and slowly add them
to the gravy (tasting as
you go so the gravy does
not become overly salty).
ROAST TURKEY
FOR A CROWD
Servings: 20-24
Start to finish: 3 hours 30
minutes (plus 30 minutes for
resting)
3 onions, chopped coarse
3 carrots, chopped coarse
3 celery ribs, chopped coarse
1 lemon, quartered
2 sprigs fresh thyme
5 tablespoons unsalted butter,
melted
1 (18- to 22-pound) turkey,
neck and giblets removed and
reserved for gravy, if desired
1 cup water, plus more as
needed
1 teaspoon salt
1 teaspoon pepper
n Adjust oven rack to lowest
position. Heat oven to 425 F.
Line large V-rack with heavy-du-
ty foil and poke several holes
in foil. Set V-rack in large
roasting pan and spray foil with
vegetable oil spray.
n Toss half of onions, carrots,
celery, lemon and thyme with
1 tablespoon melted butter in
medium bowl and place inside
turkey. Tie legs together with
kitchen twine and tuck wings
behind back. Scatter remaining
vegetables into roasting pan.
n Pour 1 cup water over veg-
etable mixture. Brush turkey

1 1/2 teaspoons instant or
rapid-rise yeast
1 1/2 cups plus 1 tablespoon
water, room temperature
2 teaspoons honey
1 1/2 teaspoons salt
n Whisk bread flour, whole-
wheat flour, and yeast
together in bowl of stand
mixer. Whisk water and honey
together in 4-cup liquid mea-
suring cup until honey has
dissolved.
n Using dough hook on low
speed, slowly add water
mixture to flour mixture and
mix until cohesive dough
starts to form and no dry flour
remains, about 2 minutes,
scraping down bowl and hook
as needed. Cover bowl tightly
with plastic wrap and let
dough rest for 30 minutes.
n Add salt to dough and mix
on low speed for 5 minutes.
Increase speed to medium
and knead until dough is
smooth and slightly sticky,
about 1 minute. Transfer
dough to lightly greased
large bowl or container, cover
tightly with plastic, and let
rise until doubled in size, 1 to
1 1/2 hours.
n Using greased bowl scrap-
er (or your fingertips), fold
dough over itself by gently
lifting and folding edge of
dough toward middle. Turn
bowl 90 degrees and fold
dough again; repeat turning
bowl and folding dough 2
more times (total of 4 folds).
Cover tightly with plastic
and let rise for 30 minutes.
Repeat folding, then cover
bowl tightly with plastic and
let dough rise until doubled in
size, about 30 minutes.
n Grease two 9-inch round
cake pans. Press down on
dough to deflate. Transfer
dough to well-floured counter,
sprinkle lightly with flour, and
divide in half. Stretch each
half into even 16-inch log and
cut into 8 equal pieces (about
2 ounces each). Using your
well-floured hands, gently pick
up each piece and roll in your
palms to coat with flour, shak-
ing off excess. Arrange rolls
in prepared pans, placing one
in center and seven around
edges, with cut side facing up
and long side of each piece
running from center to edge
of pan. Cover loosely with
greased plastic.
n Let rolls rise until nearly
doubled in size and dough
springs back minimally when
poked gently with your knuck-
le, about 30 minutes.
Adjust oven rack to middle po-
sition and heat oven to 500 F.
Mist rolls with water and bake
until tops are brown, about
