Tutti Frutti Cake


Today is my son's Birthday,made this cake for him........

Ingredients
Maida-2 cups
Butter-1 & 1/4 cup
Sugar-1 & 1/4 cup
Milk-2/3 cup
Eggs-3
Baking powder-2tsp(heaped)
Vanilla essence-1 & 1/2 tsp
Salt-1/2tsp
Tutti frutti-1/2 cup
Method
Sieve maida,salt & baking powder.Mix in the tutti frutti & keep it aside.Cream sugar,butter &
essence till doubles.add the eggs one by one & beat it well.Add the milk & maida mixture
alternatively & fold it.Pour the batter in a greased baking dish.Bake it at 350 deg. for 45 minutes or
till done.Cool & cut.

Marble Cake
Ingredients
Maida-3 cups
Butter-1 cup
Sugar-2 cups
Eggs-5
Milk-1 cup + 1tbsp
Baking powder- 1tsp
Baking soda-1/2tsp
Unsweetened cocoa powder-1/4 cup
Vanilla essence-2tsp
Salt-1/2tsp
Method
Pre heat oven to 350 deg. C.In a bowl mix maida,baking powder,baking soda & salt,keep it
aside.Cream butter,essence & sugar well with a hand mixer.Add the eggs one by one & beat it
well.In low speed slowly start adding the dry mixture alternating with milk.Take our 4 to 5 spoons
of this cake batter into a bowl & add the cocoa powder to it.Add 1 tbsp of milk & mix it till
smooth.Spoon the plain cake batter into a pan which is greased with butter and coat it with little
maida and dust out the excess.Using the cocoa mixed cake batter make 3 strips on the cake as
shown in the picture above.Now take a knife & gently draw swirls through the batter to marbleize it
.Bake it for 50 minutes or till done.Cool completely before cutting.

Vanilla Pound Cake
Ingredients for the cake
Maida-2 cups
Baking powder-1tsp
Salt-1/4tsp
Grated nutmeg-1/8tsp
Butter-1 cup
Sugar-1 & 1/4tsp
Eggs-4
Vanilla essence-5tsp
Method
Pre heat the oven to 325 deg.C.Mix all the dry ingredients together & keep it aside.Cream
butter,sugar & essence till fluffy.Slowly add eggs one by one & beat it well.Add the dry ingredients
& fold it.Pour it in a greased baking tin & bake it for at least 45 minutes or till done.Cool it
completely & cut.

Fruit Cake(Version 2)
Ingredients
Maida-1 cup
Sugar-3/4 cup
Butter-1/2 cup
Egg-2
(separated)
Baking powder-1tsp
Baking soda-1/4tsp
Salt-1/2 tsp
Vanilla essence-1tsp
Grated lemon & orange zest together-1/2 tsp
All spice powder-1/2 tsp
Ingredients soaked in rum for 3 days
Rum-1/2 cup
Fruit cake mix or Tutti fruity-1 cup
Chopped cashew nuts-1/4 cup
Raisins-1/4 cup
Chopped almonds-1/4 cup
Chopped walnuts-1/4 cup
Caraway seeds-1tsp
Caramel liquid
Sugar-1/4 cup
Hot water-4tbsp
(In a pan add sugar & 1tsp of water & keep stirring till it changes its colour to golden brown.Now
slowly add remaining 3tsp of water,mix it well.Be care full at this stage it may splutter & burn
fast.Remove from fire,cool it before adding it to the cake batter)

Method
Sieve baking powder,baking soda,all spice powders & maida.Beat the egg whites till fluffy.Beat
essence & egg yolks.Cream butter & sugar till creamy,slowly add egg yolk mixture & maida
alternatively & beat it till mixed well.Now add the dry fruits mixture,lemon/orange zest,caramel
liquid & egg whites & fold it well.Grease a baking tray dusted with little maida.Pour this cake
mixture in it,bake it for 45 minutes at 350 deg.C till done.Cool it completely & cut.

Christmas Fruit Cake
Wish you all a Happy New Year............

Ingredients
Maida-1 cup
Butter-3/4 cup
Sugar-1 cup
Baking powder-1tsp
Vanilla essence-1tsp
Eggs-2
(separated)
Cream of tartar-less than 1/8tsp(optional)
Ingredients soaked in orange juice or rum for at least a day.
Fresh orange juice-1/3 cup
Fruit cake mix-1 cup
(its citrus peels & cherries cut into cubes soaked in dry sugar syrup)
or Tutti fruity
Raisins-1/4 cup
Cashew nut-1/4 cup
Chopped almonds-1/4 cup
Chopped walnuts-1/4 cup
(dust the above ingredients with 2 tsps of maida)
Spice powders
Cinnamon powder-1/4 tsp
Grated nutmeg-1/4tsp
Grated fresh ginger-1/4tsp
Clove powder-1/4tsp
Caramel
Sugar-1/3 cup
Water-5 tsp
(In a pan add sugar & 1tsp of water & keep stirring till it changes its colour to golden brown.Now
slowly add remaining 4 tsp of water,mix it well.Be care full at this stage it may splutter & burn
fast.Remove from fire,cool it before adding it to the cake batter)

Method

essence & egg yolks.Cream butter & sugar till creamy,slowly add egg yolk mixture & maida
alternatively & beat it till mixed well.Now add the dry fruits mixture,caramel liquid & egg whites &
fold it well.Grease a baking tray dusted with little maida.Pour this cake mixture in it,bake it for 40
minutes at 350 deg.C till done.Cool it completely & cut it the next day.

Zebra Cake
Ingredients
Egg-4
(room temperature)
Sugar-1 cup
Milk-1 cup
Oil-1 cup
Vanilla essence-1/2tsp
Maida-2 cups
Baking powder-1tbsp
Hershey's Coco powder-2tbsp

Method
In a bowl sieve maida & baking powder & keep it aside.In another bowl beat egg & sugar till
mixture is creamy and light in colour,now add milk & oil mix till every thing is blended.Slowly add
maida mixture to the wet ingredients and beat just until the batter is smooth and the dry ingredients
are thoroughly incorporated.Divide the mixture equally into 2 bowls.Add cocoa powder to one bowl
& mix it well.Grease a baking tray take a ladle of white batter pour it at the middle,next take cocoa
batter & pour it on top of white mixture.Do not spread it or tilt the pan to distribute the mixture
it will spread by it self.Repeat the process alternatively till your batter is over(see the picture).I
poured the left over batter in muffin pan & followed the same process. Bake it at 350 deg.C for 35
minutes or till done..

Black Forest Cake
Today is my 550th post.Celebrating it with a great joy!!!!!!!!!!!!!!!

Ingredients for the cake


Maida-1/2 cup
Baking powder-1tsp
Unsweetened cocoa powder-1/2 cup
Melted butter-3/4 cup
Eggs-6
Sugar-1 cup
Vanilla essence-1tsp
Salt a pinch
For filling
Cherry pie filling 15 oz-1/2 tin
Cool whip 8 oz-1pck
Vanilla essence-1/2tsp(I didn't use)
Garnish
Fresh or canned cherries,chocolate curls or grated
(I used maraschino cherries)
Syrup
Sugar-1/2 cup
Water-1 cup
Rum/Kirschwasser/Brandy/Whisky-1tbsp
(I used Rum)
(Boil sugar & water together for 2 minutes.Switch off the gas ,cool it & mix in the rum.Keep it
aside)
Method
Pre heat oven to 350 deg.Grease a round pan.Sieve maida,salt ,baking powder & cocoa powder &
keep it aside.Beat eggs,sugar & essence till fluffy for at least 5 minutes.Add the flour mixture
slowly & mix it well.Stir in the melted butter.Now pour it in the greased pan & bake it for 35
minutes or till done.Cool the cake completely before decorating.
Assembling the cake
Cut the cake carefully into half or into three.Prick the cake with a fork.Sprinkle the bottom part with
the sugar syrup,spread some pie filling on top.Apply a layer of cool whip on top.Place the second
layer on top.Again repeat the process & finish it with the remaining cool whip & decorate it with
grated chocolate.Keep it in fridge for at least 30 minutes,cut & serve it cold.

Real Chocolate Chip Cookie
Ingredients
Maida-2 &1/4 cup
Baking soda-1tsp
Salt-1/2tsp
Butter or Margarine-1 cup
(I used margarine)
Sugar-3/4 cup
Brown sugar-3/4 cup
Vanilla essence-1tsp
Eggs-2
Chocolate chips 12oz packet-1
Method
Mix maida,salt & baking soda in a bowl.Cream margarine,brown & white sugar,vanilla essence &
eggs.Add the maida mixture & mix it thoroughly.Stir in the chocolate chips & drop the dough in
spoon or shape it,arrange it on a baking tray.Bake at 300 deg.F for 8 to 10 minutes or till light
brown.Cool completely & store in air tight container.

Sweet Potato Buns
Ingredients
Maida-3 cups
Warm milk-1 cup
Brown sugar-1/2 cup
Salt-2tsp
Dry yeast-2tsp
Cinnamon powder-1/2tsp
Grated nutmeg-1/8tsp
Cooked mashed sweet potato-1 cup
Egg beaten for wash(optional)
(This is given just for a glaze on top)
Method
Mix yeast in warm milk.Mix all above ingredients together.Pour the yeast mixture into the maida
mixture & knead it to a soft dough (like a chapati dough).Cover it with a wet cloth & keep it aside
for 1 hour(dough will raise).Punch it & knead it again for 2 minutes.Make small balls & place it on
a baking tray.Cover it with wet cloth again for 1 hour.Brush egg on top of each bun before
baking.Bake at 375 deg.C for 20 minutes or till top is brown.

Bread Cones
Ingredients
Maida-3 & 1/2 cups
Yeast-2 & 1/4tsp
Egg-1
Sugar-1/4 cup
Oil-3tbsp
Water-1/2 cup
Milk-1/2 cup
Salt-1 tsp
Sesame & Poppy seeds to sprinkle on top
Egg wash on top.
Egg-1
Milk-1tbsp
(beat both together)

These buns are made with left over dough!!!!!

Method
Heat milk & water till its hot(before boiling stage).Let it become warm add oil,sugar &salt.Mix it
well.In another bowl mix egg,maida & yeast.Pour the milk mixture into this & knead it to a soft
dough.Place it on a greased bowl,cover & leave it to ferment for 1 hour.Punch it well to release
bubbles.Take small balls roll it like a long rope.Make paper cones & cover it with foil
completely(like mehendhi cones).Grease these cones,roll the cone with the dough made like
rope.Brush it with egg wash & sprinkle poppy seeds & sesame seeds on top.Bake it at 350 deg.C for
20 minutes or till top is brown.Serve it with any filling of your choice.
Note: As per the original recipe it says bread flour but I used maida.....

Doughnuts
Ingredients
Maida-2 cups
Baking soda-1/2tsp
Nutmeg-1/8tsp
Salt-1/4tsp
Sugar-1/2 cup
Egg-1
Shortening-2tbsp
Vanilla essence-1/2tsp
Vinegar-2tbsp + Milk to make 1/2 cup together
Topping
Sugar for dusting or Melt 1tsp butter,1tsp sugar +1/2 cup chocolate chips in microwave or double
boiler.
Method.
Cream shortening,sugar,egg & essence.Mix all the dry ingredients together.Slowly add it to the egg
mixture. Add vinegar and milk alternately till you form a soft dough.Rest it for 10 minutes.Roll it
into 1/3-inch thick,cut it into circles .Deep fry them in medium flame.While hot dust it with
sugar.For chocolate coating cool the doughnuts & then dip it on top.

Chocolate Chip Muffins
Took this recipe from Joy of baking ,but made slight changes.....

Ingredient
Butter melted-1/2 cupEgg-2
Milk-1 cup
Vanilla essence-1/4tsp
Cinnamon powder-1tsp
Chocolate chips(semi sweet)-3/4 cup
Maida-2 cups
Sugar-2/3 cups
Baking powder-1tbsp
Salt -1/2tsp
Method
In a bowl mix flour,baking powder,salt,cinnamon powder & chocolate chips with a spatula ,till
everything is evenly mixed.Beat milk,egg,essence & melted butter with a electric beater for 3
minutes.Mix the dry ingredients with the egg mixture with a ladle.Grease a muffin tin pour ladle
full & bake it for 10 minutes at 375deg. C

1960’s. Simple, natural recipes are more flavorful and with today’s gadgets and technologies - don’t
actually take that much more time. It’s the details that make these very basic recipes some of the
very best desserts. Make these cakes into cupcakes, bake in a 9x13 or split into rounds and decorate
for beautiful, special occasion desserts.
TIPS FOR SUCCESS:

• Pay close attention to the recipe. When baking, exact measurements ARE important.
• When a recipe says to alternate adding in flour and milk - do it. This gives lightness and
moistness to your cake. Otherwise, you will have a heavy, brick cake.
• Separate your eggs before adding into the batter. Add in the beaten whites as directed for the
eggs. Beat the yolks and add into the milk. Add the milk/yolks in by alternating with the
flour.
• Sift the flour before assembling your batter. This introduces oxygen and lightness into the
batter early on.
• Half the shortening can be substituted with either margarine, butter or applesauce. This
preserves moistness and richness but removes some of the weight and bad fats.
YELLOW CAKE
• 1 cup all-purpose flour
• 3/4 cup white sugar
• 1/4 cup shortening
• 1/2 cup milk
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 teaspoon vanilla extract
• 2 whole eggs
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan. Mix
together the flour, baking powder and salt; set aside.
2. In a large bowl, cream sugar and shortening until light and fluffy. Add eggs one at a time,
beating thoroughly after each addition. Add flour mixture alternately with milk, beating just
to combine. Finally, stir in vanilla. Pour batter into the prepared pan.
3. Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until a toothpick inserted
into the cake comes out clean.

• 2 eggs, beaten
• 1 tsp. vanilla
1. Preheat oven to 350 degrees.
2. In a large saucepan, melt 4 squares chocolate and 1/2 cup butter in the hot water and bring to
a boil. Remove from heat and add flour, sugar and salt. Mix well with a wire whisk or
eggbeater.
3. Then stir in buttermilk, baking soda, eggs and vanilla and beat until smooth. Pour into 13x9"
pan and bake at 350 degrees for 25-30 minutes, until the top springs back when touched with
a fingertip.
EASY CHOCOLATE FROSTING
• 2 (1 oz.) squares unsweetened chocolate
• 1/4 cup butter
• 1/2 cup milk
• 4 cups powdered sugar
• 2 tsp. vanilla
1. In a heavy saucepan, melt 2 squares chocolate and 1/4 cup butter together.
2. Add powdered sugar, milk, and 2 tsp. vanilla and beat well. Add more milk or powdered
sugar to reach the desired consistency: the frosting should be pourable.
3. When your cake comes out of the oven, let cool for 15 minutes, then pour the frosting over.
Spread if necessary, and let the cake cool completely.
Keep these recipes close and use them when an occasion springs up suddenly or take the time to
gather special decorations and make one of these cakes the highlight of the celebration.
