does not have the
highest protein

Mercury
Mercury levels in tuna
are a consumer
concern. To our
knowledge, there is no
way to completely
eliminate the presence
of mercury from tuna.
However, Ocean Pure is
proactively working to
minimise mercury
levels and exposure.
This is done by:
Regular mercury tests. To
date all results have been
well below the US and
World Health Organisation
recommended level (less
than 1 ppm).
We stipulate to our
suppliers our albacore tuna
must be well handled, from
clean waters, and the tuna
must weigh (on average)
12 kg or less.
Studies on fish mercury
levels show that
younger fish (or
smaller fish) do not
have as much stored
mercury. It is also
understood that
unclean and polluted
oceans add to mercury
levels.

What's
Different?
Raw Material
Most of the canned
tuna available in the
world is from dark, oily
meat varieties,
Skipjack and Yellowfin.
Albacore is the only
tuna deemed a
premium 'white meat'
tuna. It is arguably the
best of all the types of
tuna, boasting a mild
flavour and soft
texture. Albacore tuna
is regarded as an
excellent base for a
premium product.

Natural
Ocean Pure's canned
albacore tuna is totally
natural, you will not
find artificial additives,
preservatives, added
flavours and bulking
agents. Many
competing products
have added soy,
vegetable broth,
pyrophosphate, and
hydrolyzed protein.
Ocean Pure mitigates
the requirements of
these additives
because in every can
the consumer can
expect 75-80%
albacore meat. The
philosophy to produce

find a round solid
wedge of tuna meat.
Although diced chunks
of albacore are put into
the can prior to
cooking, the meat
binds back together
during the cooking
process. This is a

cooking in the can (no
pre-cooking) and no,
additives, or

Preparation for
Canning
Our cannery sees
several innovative
features in both the
preparation of the meat
for canning and in the
cooking process.
Unique hydraulically
operated guillotines
have been developed
for filleting the frozen
albacore tuna. This
equipment avoids the
need for the tuna to be
thawed for preparation,
significantly decreasing
the opportunity for
contamination when
working with product at
above zero degrees
Celsius and reducing
the production time
required per fish.

Cooking Process
No precooking! Unlike
other large canning
operations, Ocean Pure
cooks the albacore
tuna only once, sealed
in the can.
The traditional canning
method pre-cooks the
tuna (taking up to 8
hours), strips the meat
from the tuna frames,
fills the cans, seals
them and re cooks
them. This process is
known to remove from
the fish of most of its
flavours, and
nutritional properties.
Our raw albacore tuna
is filleted while still
frozen, diced, canned
and sealed. The cans
are then placed on
trays and retorted. The
entire retort process is
managed and
monitored by
computer.

Why can?
We chose the can as a
packaging medium for
many reasons; it is the
oldest form of long-life
packaging, and we
wanted to ensure that
what we produce is
safe. The integrity of
the can will not be
undermined without it
being clearly apparent.
This is not true of all
packaging.
