I.

a) Place of visit:

There was an Industrial Visit arranged by our group to Central Dairy, Aarey Milk Colony, Mumbai-400065 on Saturday, 5th of September, 2009. From our class 28 students visited this trip and gained some knowledge about pasteurization of milk.

b) Purpose of visit:
To learn the management and functioning of a dairy. The students got to see the pasteurization

c) Itilary of visit (time and month):


On Saturday, 5th of September, 2009 the students left the college premises by 10am and took a train at 10.30am from Marine Lines station. They reached Goregaon station at 11.25am. From the station bus no. 341 was taken for the Dairy ,where they arrived at 11.50am. The visit began at 12pm sharp. The students were given a brief introduction about the Aarey Milk Dairy and then at 12:10pm they were shown the containers where pasteurization of milk takes place. At 12:20pm they were shown the machines where packaging of milk pouches was in process. At 12:30 the students were taken into the chilling unit and the visit ended at 12:45pm.

II. Allocation of work & responsibilities:


Every member of the group were given different tasks to complete. At the start of our project, each one of us reached out to different companies. We then came to a final consensus & settled on Aarey Milk Colony, Goregaon. The letter granting us permission to visit Aarey Milk Colony was drafted by Sharlene, Abhishek & Vanessa and collected from Mr. Bipin. Initial visits to the milk colony were made by all six members of the group, where we met with the Manager & discussed our project details with him personally & through telephonic conversations. Laura & Neha were instrumental in finding out details with regards to transportation via the train & bus routes. The final arrangements were made by Arfa, Abhishek & Vanessa, by personally visiting the place a day before the class visit.

III. Problems encountered while choosing a place for the

visit.
The first company we approached was Cadburys company, but due to some problem of security they cancelled our visit. The second company was Borosil, but the company was winding up and shifting to Gujarat, and hence they refused politely.

We finally decided to choose a place or industrial unit that openly encourages student visits in their company and hence, we went to Aarey milk colony. Then came in the swine flu problem in the way and the trip got delayed by a week. Also the company denied visits for a period of a week or so taking into consideration the hygiene of the milk production which could have got deteriorated due to swine flu spreading among the people. After that side by side we were trying for Voltas but the things did not work out because the company had a month end audit and the staff was busy with the same. The most common problems encountered when we approached big companies were:
1.

Waiting for long time to meet the person in charge.

2. When the person concerned came on line he/she wanted to be pampered. 3. The last but not the least they ignored our calls and were very rude while speaking.

IV. Problems faced by fine tuning the visit:


It was difficult to fix a particular date because the college lecture timings were clashing with the timings given by Aarey. There was some difficulty in arranging the transportation means as the frequency of the B.E.S.T. buses was quite low and the dairy was situated deep in the interiors. It was difficult to manage timings because we had to leave early as the other group also had their industrial visit on the same day. Bookings the tickets before hand was yet another difficulty, as we did not have the exact estimation of how many people were coming. Many projects given by other teachers were to be given on the same day due to which many students were not ready to come. As many decided to come by themselves later, one member from the group had to wait at the station for the others to arrive. Many students who came by themselves reached late and hence, delayed the session. At Aarey the guide arrived late due to which we again had to face time difficulty.The packaging machine took a lot of time to start, creating restlessness among the group.

Due to many delays we had to wind up the session early because the other group had their visit too.

V. Execution of the management trip:


After the arrangements were finalized with Aarey Milk Colony & our professor Ms. Perie, an announcement was made in class specifying the day, date & time of our visit. The finances with regards to travel were coordinated by Sharlene & Vanessa. They were responsible to book the train tickets from Marine Lines Station to Goregaon Station. Neha, Abhsihek, Laura & Arfa brought the class to Marine Lines station. We split ourselves into two groups to effectively handle the class in the train. Abhishek had to wait at Goregaon station to guide six of our classmates who caught a later train. The remaining five of us along with the class boarded a bus from the station to the milk colony. When we reached, we coordinated with the guides who facilitated our visit inside the various units.

VI. LEARNINGS: HISTORY :


Aarey Milk Colony was established in year 1949. On 4.3.1951 Central Dairy, Aarey was inaugurated by auspicious hands of then Prime Minister of India Shri. Pandit Jawaharlal Nehru. It is situated at a distance 30 Km north to Mumbai city and has occupied a total area of 3166 acres of land. Out of which area available for cultivation of quality fodder and grasses is about 400 acres .The Central Dairy, Aarey was constructed for processing and packing of milk which was collected from Aarey Milk Colony and to supply same to consumers of Mumbai city. This Dairy is the pioneer of it's kind in entire Asia. After 1970, i.e. after Operation Flood, milk produced in mofussil area was also received in this dairy. It distributes milk in western suburbs of Mumbai City.

PROCESSES :
Milk being a perishable product it has to be either chilled or procured at its earliest. For this purpose chilling centers and processing dairy plants are established. Generally, the milk is chilled up to 4 degree centigrade which can remain in good quality up to 20 hrs. For further storage the milk has to be processed (pasteurization/sterilization). The processed milk can be kept for 3 days. During pasteurization the milk is heated up to 78 degree centigrade and immediately chilled up to five degree centigrade.

Homogenization is a procedure for increasing the digestibility of milk. During the homogenization the fat globules of milk is reduced to about 1 micron from 3 to 4 microns. Pasteurization and homogenization are done simultaneously. Every hour testing of milk is carried out. There are specialized machines for packing of the milk pouches. In one minute, a machine packs 40 pouches and in one day 80 thousand pouches are packed. Each tank of milk carries 2 and a half litres of milk. Milk is sold in the pouches of 500 ml & 1000 ml. Some time back the milk was sold in glass bottles of 500 ml. The loss factor of glass bottles forced the government to look at polyfilm packaging & this proved to be the right decision. Also the adulteration factor was minimized in pouch filling.

Following action is taken for preventing adulteration of milk:


1. The quality of milk is checked at the time of reception & before sending the milk to packaging.
2. To check adulteration etc the government has modern laboratories with latest equipments like Cryoscope, Densitymeter, Chromatograph etc.
