b) Cc bin i ca tht sau khi lnh ng
Tht sau khi git m, pha lc c ua vo phng cp ng (t o= -30 -40oc) trong
8 10h ty loi v kch thc nguyn liu. y dng phng php ng lnh nhanh
sn phm c tinh th nh v u, kch thc b, khng ph hy cu trc t bo. V
vy c th gi c 95% phm cht ti nguyn ca tht.

2.3. BAO B
Gii thiu chung:
- Ngy nay bao b tr nn rt quan trng i vi hng ha ni chung v thc phm
ni ring. Bao b l vt liu dng bao gi sn phm gip bo v sn phm khng b
tc ng bi cc yu t bn ngoi gy h hng sn phm.
- Trong sn xut ch bin thc phm th ng s dng cc loi bao b tip xc trc
tip vi thc phm: bao b thy tinh thng dng cho cc sn phm nc gii kht, bia,
ru , bao b kim loi dng cho sn phm hp v bao b lm t cht do dng
bao gi rt nhiu loi sn phm. Bao b mang li rt nhiu li ch:
Bo v nguyn trng thc phm cha bn trong, lm gim n mc thp nht
h hng c th xy ra khi vn chuyn.
To thun li khi thc hin mt s cng on k thut sau khi sn phm c
a vo bn trong bao b.
Thun li cho qu trnh bo qun, vn chuyn sn phm.
Bo v sn phm khng b tp cht, vi sinh vt xm nhp v pht trin.
Bao b cn c chc nng d dng in n, trnh by hnh nh bt mt th hin
