REQUIREMENTS

GUEST CYCLE
The operation of the front office department is mainly determined by the
type and number of guest transactions which take place during the four
different phases of the guest cycle as shown in Figure 4 and listed below:

Pre-arrival

The stage where the guest makes


room reservation.

Arrival

The point when the guest arrives at


the hotel.

Occupancy

The period during which the guest


stays in the hotel.

Departure

The point when the guest checks out


and leaves the hotel.

Location-The locality
and environs including
approaches shall be
with proper ingress
and egress.

The facade and


architectural features
of the building shall be
appropriate designed.

Parking - There shall


be an adequate,
secured parking space
provided for free to
customers.

Lighting - Adequate lighting dining rooms, public rooms, comfort rooms, corridors
and other public areas.Light with total comfort.

Hotels need different types of lighting to create the right atmosphere for various
purposes: inviting reception areas, restaurants with an intimate atmosphere, warm
but functional bedrooms, professionally equipped conference rooms, sophisticated
bars, relaxing wellness areas and energising finess suites.

A modern lighting control system gives enormous fl exibility in professional


conference rooms so the lighting can be adjusted for specifi c tasks.

The two essential ingredients for


perfect restaurant lighting are
atmosphere and zoning.

nuanced light; zoning with light
creates cosy areas within the
restaurant.

Overall, the lighting should be


subtle and reserved but walkways,
service zones and other activity
areas should be more brightly lit.

Tables and other seating areas


call for a relaxing atmosphere.

The light should be bright enough


to enable menus to be read in
comfort and for peoples faces to
be easily seen, but subdued
enough to create a sense of
privacy in which to enjoy the
meal.

Another important element is a


characteristic style for the
restaurant, accentuated with inhousecolours and design.

This is made easier by a dimmable


lighting system.

Characteristic modern distinctive lighting is also important for bars,


pubs and cafs.

Lighting must be used to create an atmosphere that is in keeping with


the particular establishment but which also gives it its own style.

The lighting for an Irish pub needs to be relaxing, whereas a cocktail


bar calls for more sophisticated mood lighting.

As with restaurants there are some general rules for lighting bars and
other such places.

Zones and areas where people work behind the bar for example
need brighter, more efficient lighting.

The lighting for the guest area needs to be attractive, stylish and
effective.

Architectural highlights and special furnishings, for example, can be


given greater structure with LED lighting.

Factors that influence the design of a


kitchen:

Properly planned layouts, with adequate equipments, tools,


materials and work space, are essential if practical work is to be
carried out efficiently.

The movement, storage and handling of foods.

Working methods of staff employed.

Size of dining area if applicable.

Number of staff employed and their skill levels.

Type of operation, e.g. breakfast, luncheon and dinner.

Storage areas for chemicals and equipments, perishable and nonperishable foods.

Production kitchens produce foods for separate service areas in the hotel.
The amount of food produced can be as large as in the production for
airlines or functions centre dealing with several hundred people, or as in
the food production for a counter area where smaller numbers of
customers are catered for.

Features of a good production

Management must have easy access to the areas under their control
and have good visibility in the areas which have to be supervised.

Products raw materials to finished product must have an easy flow

Personnel how people work and move in the kitchen must have a
good work flow, therefore good time management.

possible, be separated into specific process areas to increase
efficiency, hygiene and work flow.

Storage areas should be kept clean and tidy, with temperatures


monitored where necessary, and be close to the production areas
for improved time management.

Kitchens are designed for easier management. The


market that the business is catering for and the style of
food operation, which includes the menu structure, are
all needed to be considered.

experienced, efficient and courteous stall shall be employed.
