Spirilla may occur in forms, namely spirillum,
vibrio, and spirochete. Spirillum is a thick, rigid and spiral. Vibrio is curved or comma-shaped. Spirochete is thin, flexible and spiral. Rennet/ Coagulant contains lactic acid bacterium added to fresh milk to produce Kesong Puti. Lactobacillus is also added to milk used to produce yoghurt. Lactobacillus also includes Lactobacillus Aciduphils, caseii & reutri. Bafidum bacteria, such as Bifidobacterium Animalis & lactis, are also used in making yogurt.
